This easy lazy cabbage roll casserole recipe without rice is quick to make using common ingredients. Using cauliflower rice makes it healthy, low carb, and delicious. It's the best cabbage roll casserole ever!

1 tbsp Avocado oil ((or oil of choice))
4 cloves Garlic ((minced))
1 1/2 lb Ground beef
1 1/2 tsp Sea salt
1/2 tsp Black pepper
1 medium head Cauliflower ((riced; about 4 cups))
2 tbsp Italian seasoning
3/4 medium head Cabbage ((chopped/shredded; about 6 cups))
3 cup Marinara sauce
3 cup Mozzarella cheese ((shredded; optional - omit for paleo, dairy-free or whole 30))

Steps:

  • Heat the oil in a large saute pan over medium heat. Add the minced garlic and cook for up to a minute, until fragrant.
  • Increase heat to medium-high. Add the ground beef. Season with sea salt and black pepper. Cook, breaking apart with a spatula, until browned, about 10 minutes. Drain if needed.
  • Meanwhile, preheat the oven to 350 degrees F (177 degrees C).
  • In a 9x13 in (23x33 cm) glass baking dish, stir together the rice cauliflower, chopped cabbage, and Italian seasoning.
  • When the ground beef is cooked through, stir that in. Stir in marinara sauce.
  • Bake for about 30 minutes, until the cabbage is crisp-tender.
  • Top with shredded mozzarella, if using. (If not, just continue baking without it.) Continue baking for about 15 minutes, until the cheese is golden brown and the cabbage is completely cooked through.

1 lb lean ground beef (i just use regular)
1 cup cooked rice
1 cup water
1/4 teaspoon chili powder
1 cup shredded cheddar cheese
1 onion, chopped
1 (10 ounce) can tomato soup
1/8 teaspoon pepper
2 cups shredded cabbage

Steps:

  • Put 1/2 of the shredded cabbage in greased casserole dish.
  • brown hamburger and onion, pour off grease.
  • Add rice,soup,water, and seasonings to hamburger mixture.
  • Put 1/2 mixture on top of cabbage in casserole dish.
  • Repeat with remaining cabbage and beef mixture.
  • Bake for 30 minutes at 350 degrees, top with cheese and bake for another 25-30 minutes.

1 cup diced onion
½ tsp salt
¼ tsp pepper
1 tsp garlic powder
6 cups cabbage (cut into ½" by 3" slices)
1 cup uncooked long grain white rice
1 ½ cups beef broth
1 (14.5 oz) can petite diced tomatoes
1 (8 oz) can tomato sauce
4 oz grated medium or sharp cheddar cheese
Salt and pepper

Steps:

  • Turn your Instant Pot to the saute setting. When the display says HOT add in the ground beef and break it up. Add in the onion, salt, pepper and garlic powder. Brown the beef for about 5 minutes. Drain off any excess grease. Turn off the saute setting. Scrape off the bottom of the Instant Pot with a wooden spoon. Add in half the broth.
  • Layer the cabbage on top of the beef. Then sprinkle the rice on top of the cabbage. Pour the rest of the broth over the top of the rice. Then dump the tomatoes and tomato sauce evenly over the top of the rice.
  • Cover the Instant Pot and secure the lid. Make sure the valve is set to sealing. Set the manual/pressure cook button to 8 minutes. When the time is up let the pot sit for 10 minutes and then move the valve to venting. Remove the lid.
  • Stir in the cheddar and salt and pepper to taste.
  • Scoop onto plates and enjoy!

2 (15-ounce) cans tomatoes, diced
1 (8-ounce) can tomato sauce
1 cup water
1 small cabbage head, chopped
1 teaspoon pepper
1 teaspoon salt
1/2 cup uncooked rice, optional

Steps:

  • In a deep dish skillet with a small amount of oil, brown ground beef, and onion. Drain. Add the minced garlic to the ground beef with onions and give it a quick saute. Add in water, diced tomatoes and tomato sauce. Season with salt and pepper. Toss in the uncooked rice at this point if using. Place chopped cabbage in pan, and toss to combine all ingredients. Cover the pan with lid and simmer for 30 minutes or until cabbage has cooked.

1 (29 ounce) can tomato sauce
3 ½ pounds chopped cabbage
1 cup uncooked white rice
1 teaspoon salt
2 (14 ounce) cans beef broth

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet, brown beef in oil over medium high heat until redness is gone. Drain off fat.
  • In a large mixing bowl combine the onion, tomato sauce, cabbage, rice and salt. Add meat and mix all together. Pour mixture into a 9x13 inch baking dish. Pour broth over meat mixture and bake in the preheated oven, covered, for 1 hour. Stir, replace cover and bake for another 30 minutes.

1/2 cup long grain rice
1 tablespoon vegetable oil
1 lb ground beef
1 onion, finely chopped
1 head cabbage, chopped medium
1 (14 1/2 ounce) can tomatoes, chopped
3 cups tomato sauce (can substitute half of this amount with salsa for a robust tasting sauce)
2 cups water
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 375.
  • Place rice in small saucepan; cover with water and bring to boil.
  • Simmer 5 minutes; drain.
  • Heat oil in large skillet over medium-high heat; add beef and onion and cook until beef is no longer pink and onions are softened.
  • Drain off excess fat.
  • Stir in rice, cabbage, chopped tomatoes, tomato sauce, salsa if using, water, salt and pepper.
  • Pour into a roasting pan; cover and bake about 1 hour.
  • Stir and add 1/2 c.
