LAZY GIRL PEACH PIE

Steps:
- Preheat oven to 350 degrees (F).
- Melt butter in 8-inch glass or pyrex pan.
- Combine flour, sugar, and milk and pour this mixture over the butter.
- Reserving juice, spread peaches over the batter.
- Now pour reserved peach juice over mixture.
- Combine cinnamon, nutmeg, and brown sugar and sprinkle half of mixture evenly over the top.**
- Bake for 30 to 40 minutes or until brown. Half way through baking, sprinkle the remaining cinnamon mixture over the top.
LAZY MAN'S PEACH PIE

- Spread butter evenly over bottom of a 9" X 9" X 2" pan. Drain the peaches and reserve juice. Mix flour, sugar, and milk and pour over margarine. Drop peach slices over batter and pour peach juice over peaches. Sprinkle with nutmeg or cinnamon if desired. Bake in 350 degrees F oven for 35-45 minutes, or until brown and batter tests done.
LAZY PEACH PIE
This is quick and easy. Great w/ some ice cream. I haven't made this for quite sometime, and my recipe is torn at the bottom, so I approximated the exact cooking time. If you make this before I do again, please let me know if cook time is accurate.

- Place butter in a 8" glass square pan and microwave until butter is melted; evenly distrubute melted butter on bottom of pan.
- In a small bowl, mix together SR flour, sugar, and milk and evenly pour over melted butter.
- Place peach slices evenly over batter and pour reserved peach juice over peaches.
- Combine cinnamon, nutmeg and brown sugar in a small bowl, and evenly sprinkle on top.
- Bake in 350 degree oven about 30-45 minute or until brown.

DEEP DISH PEACH PIE
This pie slices beautifully and has a delicious peach filling, but the real star is the crust -- crisp, crunchy and perfectly sweet.

- For the crust: Put the flour, granulated sugar and salt in the bowl of a food processor and pulse to combine. Add the shortening and pulse until it looks like cornmeal. Add the butter and pulse until the butter is about the size of a pea. Add 4 tablespoon ice water and pulse until the dough starts to come together but is still crumbly (add the remaining tablespoon water if necessary). Divide the dough into 2 pieces, one made from a third of the dough and the other from the remaining two-thirds of the dough. Form each into a disc and wrap in plastic. Refrigerate for 30 minutes or up to overnight.
- For the peach filling: Combine the peach wedges, light brown sugar, quick-cooking tapioca, cinnamon, vanilla extract, nutmeg, salt and lemon juice in a large bowl and toss to coat. Set aside.
- Lightly butter an 8-inch springform pan. On a lightly floured surface, roll the larger piece of dough into a 14-inch circle, about 1/4-inch thick.
- Roll the dough onto a rolling pin, then unroll it into the pan, patting it in gently, leaving a 1-inch overhang. Pour in the filling.
- Roll out the other piece of dough into a 10-inch circle about 1/8-inch thick and place it over the filling; press the crust edges together and trim any excess, leaving a 1-inch overhang. Roll up or pinch the overhang to seal.
- Place a foil-lined baking sheet on a rack in the lower third of the oven and preheat to 450 degrees F. Wrap an oiled, wide band of foil around the edge of the pan like a collar to protect the crust. Make slashes in the top of the crust and chill the pie 30 minutes.
- Place the pie on the foil-lined baking sheet and immediately reduce the oven to 400 degrees F. Bake the pie for 1 hour. Remove the foil band, brush the crust with heavy cream and sprinkle with some granulated sugar. Continue to bake until golden brown, about 45 minutes more. Let cool 1 hour, then carefully remove the edge of the pan. Let cool completely, about 1 more hour, before slicing.

- Preheat oven to 350 degrees F (175 degrees C). Once oven reaches desired temperature, melt margarine in a glass 9x13 baking pan.
- In a large bowl, combine flour, sugar and baking powder. Pour reserved peach juice into dry ingredients and stir until smooth. Remove glass pan from oven and pour batter in starting in the center; batter will then spread itself over entire pan. Add peaches by placing them in center of pan; allow them to spread on their own.
- Bake cobbler in preheated oven for 20 to 25 minutes, or until brown on top. Do not overcook.

- In a saucepan, combine sugar, cornstarch, salt and nutmeg. Stir in water, lemon juice and pureed peaches. Cook over medium heat, stirring constantly, about 5 minutes or until mixture is thickened. - Place cookie sheet on oven rack. Heat oven to 400°F.
- In large bowl, mix sugar, flour and cinnamon. Stir in peaches and lemon juice. Spoon into frozen crust. While second crust is still in pan and frozen, remove crimp with sharp knife. Remove crust from pan and center frozen crust upside down on top of filled pie. Let thaw 10 minutes; crimp edges together. Cut 2 or 3 slits in top crust. Cover edge of crust with pie shield or foil strips.
- Bake on cookie sheet about 45 minutes or until crust is golden brown and juice is thick and bubbly. Cover entire top of pie loosely with foil if crust is getting too brown. Cool on cooling rack at least 2 hours.
