Here's a great scalloped potato recipe that's so easy and absolutely delicious. The leftovers are just as good, maybe even better, the next day. This is one of my favorite and most prepared recipes, from my 1971 Florence Junior Welfare League cookbook.

4 cups thinly sliced potatoes
3 tablespoons butter
3 tablespoons flour
1 1/2 cups milk
1 teaspoon salt
1 dash cayenne pepper
1 cup grated sharp cheddar cheese
1/2 cup grated cheese, to sprinkle on top
paprika

Steps:

  • In a small sauce pan, melt butter and blend in flour.
  • Let sit for a minute.
  • Add all of cold milk, stirring with a whisk.
  • Season with salt and cayenne.
  • Cook sauce on low until smooth and boiling, stirring occasionally with a whisk.
  • Reduce heat and stir in cheese.
  • Place a half of the sliced potatoes in a lightly greased one quart casserole dish.
  • Pour half of cheese sauce over potatoes.
  • Repeat with second layer of potatoes and cheese sauce.
  • Sprinkle the remaining cheese on top.
  • Top with some paprika for color.
  • Bake uncovered for about 1 hour at 350°F.

The perfect side dish to an elegant or celebratory main course, or the welcome addition to any potluck supper, scalloped potatoes are one of those dishes that seem complicated, but are deceptively simple. You'll need to put in a bit of "peeler time" to get the spuds ready for the oven, but after that it's just a long bake and a short standing period to let the sauce thicken. Then, voila! you're ready to serve.

4 tablespoons butter
1 small onion, finely chopped (1/3 cup)
3 tablespoons Gold Medal™ all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
2 1/2 cups milk
6 medium peeled or unpeeled potatoes, thinly sliced (6 cups)

Steps:

  • Heat oven to 350°F. Grease 2-quart casserole with shortening or cooking spray.
  • In 2-quart saucepan, melt 3 tablespoons of the butter over medium heat. Cook onion in butter about 2 minutes, stirring occasionally, until tender. Stir in flour, salt and pepper. Cook, stirring constantly, until smooth and bubbly; remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute.
  • Spread potatoes in casserole. Pour sauce over potatoes. Cut remaining 1 tablespoon butter into small pieces; sprinkle over potatoes.
  • Cover; bake 30 minutes. Uncover; bake 1 hour to 1 hour 10 minutes longer or until potatoes are tender. Let stand 5 to 10 minutes before serving (sauce thickens as it stands).

Unsalted butter, softened, for the baking dish
2 pounds russet potatoes, peeled and sliced 1/8-inch thick
3 cups heavy cream
1 tablespoon all-purpose flour
1 bay leaf
1/4 teaspoon freshly grated nutmeg
Kosher salt and freshly ground white pepper

Steps:

  • Preheat the oven to 350 degrees F. Brush a shallow 2 1/2-quart baking dish with butter. Put the potatoes in a large pot. Whisk the cream, flour, bay leaf, nutmeg, 1 teaspoon salt and 1/4 teaspoon white pepper in a bowl, then pour over the potatoes. Cook over medium heat, carefully stirring occasionally, until the cream just comes to a simmer, about 12 minutes. Continue to simmer, adjusting the heat if necessary and stirring to prevent the bottom from scorching, until the potatoes just begin to soften, about 5 more minutes.
  • Transfer the potato mixture to the prepared baking dish; discard the bay leaf. Set the baking dish in a roasting pan and add enough water to come about halfway up the sides of the baking dish. Bake until the potatoes are tender and golden brown, about 1 hour. Remove the baking dish from the water bath and let stand 10 minutes before serving.

1 bag (24-ounce) frozen cut russet potatoes, Ore-Ida Steam n' Mash
1 can (10-ounce) condensed cheddar cheese soup, Campbell's
1 can (5-ounce) evaporated milk, Carnation
1 jar (2-ounce) diced pimientos, Dromedary
1 medium onion, finely chopped
1 1/4 cups shredded cheddar cheese, Sargento

Steps:

  • Preheat oven to 350 degrees F. Lightly spray medium casserole with cooking spray; set aside.
  • Microwave potatoes according to package directions for 5 minutes. In a medium bowl, stir together cheddar cheese soup with evaporated milk until smooth. Place half of the potatoes in the bottom of prepared casserole. Layer with half each of pimientos, onion, cheese soup mixture, and shredded cheese. Repeat layers. Bake in preheated oven for 45 to 55 minutes or until bubbling.

SCHOOL'S OUT SCALLOPED POTATOES

4 tablespoons (1/2 stick) butter
1 large white onion, diced
1/2 cup all-purpose flour (or rice flour to make the dish gluten-free)
1 1/2 cups milk
White pepper
Dash salt (be careful because there is salt in the cheese)
3/4 cup shredded white Cheddar
4 to 5 potatoes, peeled and thinly sliced
1/8 cup finely sliced white parts scallions, for garnish
1/8 cup bread crumbs for topping (omit for a gluten-free dish)

Steps:

  • Preheat oven to 350 degrees F. Lightly grease an oven-to-table baking dish with some of the butter.
  • Melt the rest of the butter in a saucepan or small skillet and saute the onion until it becomes translucent. Gradually add the flour to make blond roux, then slowly add the milk and allow the mixture to thicken. Season with white pepper and just a dash of salt and remove from heat. (Be careful to avoid overdoing the salt, because there is salt in the cheese.)
  • Layer 1/3 of the potatoes in the baking dish, followed by 1/3 of the milk sauce, and 1/4 cup of the shredded white Cheddar. Repeat the sequence twice for a total of 3 layers. You can top with the breadcrumbs before baking, but omit if making the dish gluten-free. Bake covered for about 45 minutes to 1 hour, removing the cover for the last 10 minutes. (You can speed up the cooking time by pre-microwaving for 10 to 15 minutes before baking, or even par-boiling the potatoes.) The scalloped potatoes are done when the potatoes are tender. Let rest a few minutes before serving. Garnish with sliced scallions and bread crumbs.
  • All kids seem to love this dish (adults too). I keep this dish visually simple using only light colored ingredients, because kids seem to prefer it without green things (like the green parts of scallions), or black stuff (like ground pepper). However, you can jazz up the color if you like. In the episode, we topped this with bread crumbs - which you can do - but I keep the basic recipe gluten free.

1 (10.75 ounce) can condensed cream of mushroom soup
1 ¼ cups milk
1 onion, diced

5 tablespoons butter
5 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon pepper
4 cups milk
2 lbs Velveeta cheese
6 large potatoes
1 large onion

Steps:

  • Melt butter in pan, add flour, salt & pepper and stir till blended for about 1 minute.
  • Add milk and stir till smooth. Cut up velveeta into thumb sized chunks and put in milk mixture. Stir till cheese has melted. Be sure to scrape bottom, it can stick easy towards the end.
  • Meanwhile - peel and slice potatoes (using a mandolin is great). Also peel and slice the onions.
  • Layer a 13.x9x2 pan potatoes, onions, (I usually add a sprinkle of salt & pepper), then another layer of potatoes & onions, then end with a final layer of potatoes. Pour sauce over and put in oven.
  • Bake in 325 degree oven for 90 minutes (or till potatoes are soft when poked with a fork). Enjoy!

1 tablespoon butter
1 1/3 cups grated Fontina cheese (about 4 oz.)
2 tablespoons fresh parsley, chopped
2 tablespoons fresh chives, chopped
1 lb leek, light green and white parts only chopped
1/2 teaspoon pepper
1/2 teaspoon salt
1/4 cup flour
2 cups half-and-half
3 lbs potatoes, peeled and thinly sliced (about 6 cups)

Steps:

  • Preheat oven to 350°F; grease well a 2-1/2 quart casserole or baking dish (I use cooking spray).
  • Set aside 1/2 cup of the fontina and 1/2 tablespoon each of the parsley and chives.
  • In a large pot over medium heat, melt butter. Add leeks, salt and pepper. Saute until soft, about 4-5 minutes.
  • Sprinkle in flour and cook, stirring, for about 30 seconds.
  • Whisk in half-and-half and bring to a boil. Cook for a minute or two until mixture thickens. Remove form heat and stir in the remaining parsley, chives, and cheese until the cheese is melted.
  • Add potatoes to the sauce and stir until well coated. Transfer to casserole dish and cover with foil. Bake for 1 hour. Remove foil and sprinkle with the remaining cheese. Bake uncovered until cheese is browned and melted and potatoes test for doneness, about 10 minutes. If the potatoes are not tender enough but the cheese is melted, cover with foil again and bake until potatoes are done.
  • Sprinkle with reserved parsley and chives.

  • Preheat oven to 375 degrees F. Line a rimmed baking sheet with Reynolds Wrap® Aluminum Foil. Set aside. The sheet will catch any spills in the oven later on.
  • Place the potato slices in a large pot and cover with cold water. Season with salt and bring to boil for 5 minutes. Drain in a colander and allow the potatoes to steam for 1 minute.
  • Rub a 10-inch baking dish with the garlic clove and generously butter the dish. Finely chop the garlic. Set aside.
  • With the heat off, transfer the potatoes back to the pot and add heavy cream, thyme, half of the Parmesan cheese, chopped garlic, melted butter, salt and pepper. Stir all of the ingredients together until the potatoes are well coated.
  • Layer the potatoes on top of each other in the buttered baking dish. Pour any remaining liquid on top of the potatoes. Place the baking dish on the prepared baking sheet. Cover the baking dish with foil and bake for 40 minutes. Remove the foil from the baking dish, add the remaining cheese and bake for 15-20 minutes, or until golden brown.

Scalloped Potatoes With Leeks and Cream image

This recipe has gotten rave reviews each time I have made it over the years. Only use the white and pale green parts of the leeks.

1/4 cup butter
2 lbs sliced leeks
1 tablespoon butter
2 cups whipping cream
3 garlic cloves
4 lbs yukon gold potatoes
2 cups grated white cheddar cheese
1/2 cup parmesan cheese

Steps:

  • preheat oven to 375 degrees.
  • Melt 1/4 cup butter in heavy large skillet over medium heat. Add sliced leaks and stir to coat. Reduce heat to medium low.
  • Cover and cook until leeks are tender, stirring occasionally, about 8 minutes. Uncover and cook until almost all liquid is absorbed, about 3 minutes.
  • rub 9x13 inch baking dish with 1 Tablespoon butter.
  • Mix cream and garlic in small bowl.
  • Arrange half of potatoes in prepared dish. Season generously with salt and pepper. Cover with leeks. Sprinkle with half of cheese. Ladle half of cream mixture over potatoes and leeks. Repeat layering with remaining potatoes, cheese (you may use either white cheddar or Gruyere cheese). and cream mixture. Sprinkle with Parmesan.
  • This can be prepared 6 hours ahead. Cover and refrigerate.
  • Let stand 1 hour at room temperature before baking. Bake until potatoes are tender and top is deep golden brown, about 1 hours and 15 minutes. Let stand 15 minutes at room temperature before serving.
