Quick and Easy Leftover Ham Soup image

I can't stand having a bunch of leftovers in my fridge, so I do whatever I can to clean it out. This recipe includes all things that I always have leftover after the holidays, and it is delicious! It's so easy and quick and really can be tweaked any way you like. Enjoy!

1 (14.5 ounce) can chicken broth
1 ½ cups diced leftover cooked ham
1 (15 ounce) can corn, drained
1 (15 ounce) can navy beans, undrained
¼ cup chopped onion
½ teaspoon dried parsley
1 pinch ground thyme
salt to taste
1 pinch crushed red pepper flakes, or to taste
2 dashes hot pepper sauce (such as Tabasco®)
1 sprig fresh parsley, chopped

Steps:

  • Heat broth in a saucepan over high heat. Add ham, corn, navy beans, and onion. Add dried parsley, thyme, salt, red pepper flakes, and hot sauce. Cook over high heat for 5 minutes. Reduce heat to low and cook about 5 minutes more. Finish with fresh parsley before serving.

  • Break up the duck carcass into 3 pieces and add it to a large pot with any remaining bones. Fill with water until the carcass is covered, then add the onions with their skin, the parsley stalks, porcini mushrooms, garlic, thyme, bay leaves and peppercorns.
  • Heat the pan to a very gentle simmer, cover and leave to cook for two hours, occasionally skimming the scum from the top.
  • Strain the stock carefully through a colander and then through a sieve before adding the stock back into the pan with carrots and celery. Bring up to a mild simmer again and season generously with salt. Cook for 10 minutes until the vegetables are tender, then add the beans, pearl barley and chard. Cook for a further 5 minutes.
  • Add the sherry with any reserved duck meat and cook for 2 more minutes. Divide between serving bowls and serve with sourdough bread, grated Parmesan and olive oil.

  • Cook the duck. Make thin slices of the leftover duck and cook in a little oil in a non-stick frying pan at medium-high heat for 5 minutes until just starting to brown.
  • Noodles. If using leftover noodles set aside a couple of handfuls. If using dried noodles make according to instructions and set aside.
  • Cook the beansprouts. Fill the kettle and bring to a boil. Put the sprouts into a heatproof bowl and cover with boiling water, stir for half a minute and then drain.
  • Finish the duck. When the duck is browned, add the hoisin sauce and a little of the soup liquid. Keep the heat up and stir until the sauce has reduced to a sticky coating on the duck.
  • Cook the cabbage. In a large pan add 250ml of water with the consomme or stock and ginger, bring to the boil. Wash and slice the cabbage and add to the pan.
  • Finish the soup. Wash and trim the spring onion and slice and chop into shreds. Add the soy, duck. noodles and beansprouts to the soup and stir, add the chilli and spring onion, add a squeeze of lime and a drizzle sesame oil.
