This is a fast dinner. I usually have all of the ingredients on hand for a last minute supper. You can get creative and doctor this up a bit by adding green pepper or other vegetables.

Steps:
- Brown hamburger and onion over medium heat in a large skillet (one with a lid). Drain off excess fat.
- Add the rice, tomato, water, salt and pepper. Mix well and cover pan with lid. Simmer on low for 10 minutes.
- Check halfway to see if you feel it needs a few tablespoons of water added. Stir and then sprinkle the cheese over top. Don't mix in, allow to melt over top while it finishes simmering.
HAMBURGER CASSEROLE WITH RICE

- Preheat oven to 350 degrees F. Spray a 9 x 13-inch baking dish with cooking spray and set aside.
- Cook beef and onion in a large skillet over medium-high heat until meat is no longer pink (about 5-7 minutes). Drain.
- In a separate bowl, stir together condensed soups, milk, salt, chives, pepper and garlic powder.
- Add cooked rice, soup mixture and vegetables to the cooked beef. Stir to combine. Transfer to prepared baking dish. Sprinkle cheese over top.
- In a small bowl, toss together Corn Flakes crumbs and melted butter. Sprinkle over top of the casserole.
- Bake, uncovered, at 350 degrees F for 30 minutes, or until hot and bubbly. Allow to rest for 5 minutes before serving.

I found this in Better Homes and Gardens Low-Cost Cooking cookbook. I've had the cookbook for about 25 years and only recently discovered this recipe. It's one of those recipes that I make just about anytime because I always have the ingredients on hand and my family (especially my youngest son) loves it!

- In a skillet coated with spray oil, brown ground beef, onion, green pepper, and garlic until meat is browned. Drain off fat.
- Add rice; cook stirring constantly, for 2 minutes.

- Cover and simmer for 25 to 30 minutes or until rice is tender, stirring occasionally.
