Greek-Style Lemon Roasted Potatoes image

A great complement with souvlaki. I often cook this on the BBQ with the souvlaki. All you need is a great Greek salad for a full meal!

3 pounds potatoes, peeled and cut into thick wedges
⅓ cup olive oil
2 lemons, juiced
2 teaspoons salt
1 teaspoon oregano
½ teaspoon ground black pepper
3 cups chicken broth

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Put potato wedges into a large bowl. Drizzle olive oil and lemon juice over the wedges and toss to coat. Season potatoes with salt, oregano, and black pepper; toss again to coat.
  • Spread potato wedges in a single layer in a 2 inch-deep pan. Pour chicken broth over the potatoes.
  • Roast potatoes in preheated oven until tender and golden brown, about 1 hour.

4 chicken breasts, cut into strips
2 teaspoons oregano
1 teaspoon garlic powder
1 teaspoon seasoning salt
1/2-1 teaspoon pepper
1 lemon, juice of
vegetable oil, same amount to match the lemon juice

Steps:

  • Place the chicken in a bowl and add oregano, garlic powder, seasoning salt and pepper.
  • Toss to coat.
  • Marinate in fridge for at least 30 minutes -the longer the better.
  • In the meantime, if you are going to use wooden skewers, soak them for 30 minutes. This prevents them from burning on the BBQ.
  • Squeeze the lemon and then add an equal amount of vegetable oil.
  • Skewer chicken onto wooden or metal skewers.
  • BBQ chicken skewers until done.
  • Mix the oil and lemon mixture until "creamy" and drizzle over the hot chicken - do this as soon as they come off the grill.
  • Serve and enjoy!
  • **on a side note - if you own a George Foreman, grill this recipe works very well on it!

¼ cup olive oil
2 tablespoons lemon juice
2 cloves garlic, minced
1 teaspoon dried oregano
½ teaspoon salt
1 ½ pounds skinless, boneless chicken breast halves - cut into bite-sized pieces
1 (6 ounce) container plain Greek-style yogurt
½ cucumber - peeled, seeded, and grated
1 tablespoon olive oil
2 teaspoons white vinegar
1 clove garlic, minced
1 pinch salt
6 wooden skewers, or as needed

Steps:

  • Combine 1/4 cup olive oil, lemon juice, 2 cloves minced garlic, oregano, and 1/2 teaspoon salt in a large resealable bag. Add chicken, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 2 hours.
  • Mix yogurt, cucumber, 1 tablespoon olive oil, vinegar, 1 clove minced garlic, and 1 pinch salt together in a bowl. Refrigerate tzatziki sauce for flavors to blend, 1 to 2 hours.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Soak wooden skewers in a bowl of water for about 15 minutes.
  • Remove chicken from marinade and thread onto the soaked skewers. Discard unused marinade.
  • Cook the skewers on the preheated grill, turning frequently until nicely browned on all sides and chicken is no longer pink in the center, about 8 minutes per side. Serve with tzatziki sauce.

I had this in Greece and begged for the recipe to no avail. This is my version. I tend to allow the chicken to marinade overnight so that it is more tender and full of flavour. I serve them with green salad, tzatziki and bread. Great for a BBQ.

4 boneless skinless chicken breasts, cut into 1-inch cubes
1 lemon, juice and zest of
1 teaspoon olive oil
2 teaspoons oregano
1 teaspoon paprika

Steps:

  • Mix together the chicken, lemon rind, lemon juice, olive oil and oregano.
  • Marinate in the fridge for at least 1/2 an hour.
  • Skewer the chicken onto 6 metal or wooden skewers.
  • Grill for about 20 minutes turning frequently, adding the remaining marinade each time you turn them.
  • Sprinkle with the paprika and serve.

  • Trim chicken and cut into large chunks- mine were about 1.5" big and I got 4-6 chunks from each chicken breast.
  • If you'd like to grill some vegetables along side your chicken, I highly recommend it! We did a skewer of mushrooms, plus we also sliced some white onion to thread along with the chicken. The mushrooms were amazing!! To marinate vegetables, if you just have a few, set aside 3-5 TBSP of the marinade prior to mixing with the chicken. Then just put vegetables & marinade in a separate ziplock bag in the fridge, turning the bag occasionally to mix it. If you're doing a good amount of vegetables, I'd double the marinade instead!
  • Heat a saucepan over medium heat. {Make sure pan has a lid!} Add in oil. After about a minute, add in rice and saute for 2-3 minutes, stirring often so it doesn't brown too much. Add salt and lemon juice to rice and saute 1 minute more.

  • In a large bowl combine the marinade ingredients: lemon juice (6 tablespoons), oregano (1 tablespoon fresh or 1 ½ teaspoon dried), olive oil (2 tablespoons), garlic (5 teaspoons) and salt (1 teaspoon). Add the chicken and toss well, to coat. Leave chicken to marinate in the fridge for 30 minutes or up to 2 hours.
  • To make the Tzatziki, toss the cucumber with 1/4 teaspoon of salt in a mesh colander and let it drain over the sink for 5 minutes or so. Press the cucumber against the colander to squeeze out some of the liquid, and transfer it to a medium bowl. Add yogurt (1 cup), oil (2 tablespoons), garlic (2 cloves crushed), lemon juice (4 tablespoons), and salt (3/4 teaspoon). Mix thoroughly and refrigerate in a closed container until ready to use. Sprinkle with fresh mint right before serving. Can be made a day ahead.
  • Remove chicken from the marinade and discard marinade. Thread chicken, onions and zucchini alternately onto each skewer. Brush zucchini and onions lightly with olive oil.
  • Heat your grill to medium-high. Add skewers. Cook 4 minutes per side or until chicken is cooked through.
