  • Whisk the mayo, truffle oil, lemon juice and garlic in a small bowl until smooth and creamy.
  • Optional: If using a fresh truffle, grate it finely or mince it on a cutting board. Then sprinkle on top of the aioli.
  • Use immediately or cover and refrigerate.

2 egg yolks, free range preferably
1/2 teaspoon Dijon mustard
3 -4 tablespoons lemon juice, freshly squeezed (taste according to preference)
3/4 teaspoon sea salt
1 teaspoon lemon rind, finely minced
1 -2 garlic, finely minced (taste according to preference)
1/2 teaspoon truffle oil
1 cup vegetable oil

Steps:

  • Combine the yolks, mustard, lemon juice, salt, garlic, rind and truffle oil in the bowl of a food processor. Pour the vegetable oil in a slow, fine stream with the processor running until the mixture beginns to thicken and bind. Be careful not to add the oil to quickly or the mayo could separate.
  • Can be made one day ahead of time. Use within 5 days.

4 large cloves fresh garlic, peeled and sliced
½ teaspoon kosher salt, or other course-grain salt
1 teaspoon lemon juice, or more to taste
½ cup light, extra-virgin olive oil
1 teaspoon water to adjust texture, or more as needed

Steps:

  • Place garlic slices in a mortar with kosher salt. Mash with the pestle into a fine paste, 4 or 5 minutes. Mix in lemon juice. Add a teaspoon of olive oil; stir and mash until oil is incorporated. Add another teaspoon and mix in thoroughly. Continue incorporating olive oil, teaspoon by teaspoon, mashing and stirring until aioli thickens up. If the aioli gets thicker than you like, add a few drops of water.

3 garlic cloves
1/2 teaspoon kosher salt
1/2 lemon, juice of
2 egg yolks
3/4-1 cup olive oil
3 tablespoons white truffle oil

Steps:

  • In a food processor combine garlic, 1/2 teaspoon kosher salt, lemon juice and egg yolks. Turn processor on and process until garlic is minced. Turn off processor, scrape down the sides. Return lid to the top. Turn on processor and slowly pour in 3/4 cup of olive oil and then truffle oil until mixture emulsifies. Aioli should be smooth but somewhat thick. If too thin turn food processor back on and pour in remaining olive oil.
  • Transfer to bowl. Adjust seasoning with more salt if necessary.
  • Serve immediately.
