4 each tilapia fillets
3 tablespoons fresh lemon juice
1 tablespoon butter, melted
1 clove garlic, finely chopped
1 teaspoon dried parsley flakes
1 dash pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a baking dish with non-stick cooking spray.
  • Rinse tilapia fillets under cool water, and pat dry with paper towels.
  • Place fillets in baking dish. Pour lemon juice over fillets, then drizzle butter on top. Sprinkle with garlic, parsley, and pepper.
  • Bake in preheated oven until the fish is white and flakes when pulled apart with a fork, about 30 minutes.

2 lb salmon fillet
Kosher salt
Extra virgin olive oil (I used Early Harvest Greek extra virgin olive oil)
1/2 lemon, sliced into rounds
Parsley for garnish
Zest of 1 large lemon
Juice of 2 lemons
3 tbsp extra virgin olive oil (I used Early Harvest Greek extra virgin olive oil)
5 garlic cloves, chopped
2 tsp dry oregano
1 tsp sweet paprika
1/2 tsp black pepper

Steps:

  • Heat oven to 375 degrees F.
  • Make the lemon-garlic sauce. In a small bowl or measuring cup, mix together the lemon juice, lemon zest, extra virgin olive oil, garlic, oregano, paprika and black pepper. Give the sauce a good whisk.
  • Prepare a sheet pan lined with a large piece of foil (should be large enough to fold over salmon). Brush top of the foil with extra virgin olive oil.
  • Now, pat salmon dry and season well on both sides with kosher salt. Place it on the foiled sheetpan. Top with lemon garlic sauce (make sure to spread the sauce evenly.)
  • Fold foil over the salmon (seam-side up). Bake for 15 to 20 minutes until salmon is almost completely cooked through at the thickest part (cooking time will vary based on the thickness of your fish. If your salmon is thinner, check several minutes early to ensure your salmon does not overcook. If your piece is very thick, 1 1/2 or more inches, it may take a bit longer.)
  • Carefully remove from oven and open foil to uncover the top of the salmon. Place under the broiler briefly, about 3 minutes or so. Watch closely as it broils to make sure it doesn't overcook and the garlic does not burn.)

2 boneless skinless chicken breast halves (4 ounces each)
1/8 teaspoon salt
1/8 teaspoon pepper
10 garlic cloves, peeled
1-1/2 teaspoons canola oil
5 tablespoons chicken broth, divided
1/4 cup dry white wine or additional chicken broth
1 teaspoon lemon juice
1/2 teaspoon dried basil
1/4 teaspoon dried oregano
1-1/2 teaspoons cornstarch

Steps:

  • Season chicken with salt and pepper. In a skillet, cook chicken and garlic in oil for 4-6 minutes. Add 4 tablespoons broth, wine, lemon juice, basil and oregano. Reduce heat; cover and simmer for 6-8 minutes or until chicken juices run clear., Transfer chicken to a serving platter and keep warm. In a small bowl, combine cornstarch and remaining broth until smooth. Stir into skillet. Bring to a boil; cook and stir for 1 minute or until thickened. Spoon sauce over chicken.

Steps:

  • Melt butter in a skillet over medium-high heat.
  • Season chicken with salt and pepper; place in the melted butter. Cook chicken, flipping frequently, until browned, about 5 minutes. Sprinkle 1 tablespoon garlic powder over chicken; flip and sprinkle 1 tablespoon garlic powder on second side. Cook each side for 2 minutes.

10 Minute Lemon Garlic Sauteed Bok Choy image

Boy choy is a nutritious vegetable and an excellent source of vitamin C and vitamin A. It tastes mild and when cooked correctly has a light crunch at the bottom with wilted greens on top. When making the recipe below, it's important not to burn the garlic. I love this when the garlic is well toasted, but if the garlic turns very dark brown, it will taste bitter. Another thing to note is that even when you have removed the bok choy from the pan, it continues to wilt and soften. So if you notice the garlic browning too much, it's okay to transfer everything out of the pan a minute early.

1 pound baby bok choy
1 1/2 tablespoons extra-virgin olive oil
3 garlic cloves, minced
Pinch crushed red pepper flakes
Sea salt
Half of a lemon, cut into wedges

Steps:

  • Remove any discolored outer stalks of the bok choy and discard them (or save for stock later). Place the bok choy into a colander and rinse with cool water, rubbing any grit or dirt from between the leaves. Trim the ends then slice each bok choy in half lengthwise. Or if they are large, cut into quarters. Pat dry.
  • Add the oil, garlic and red pepper flakes to a wide room-temperature skillet. Place over medium heat and cook, stirring occasionally, until the oil begins to bubble around the garlic, but before the garlic starts to turn light brown.
  • Toss in the boy choy and spread into one layer. Sprinkle with about 1/4 teaspoon of salt then cook, without stirring, until the bottom is starting to turn brown, about 2 minutes.
  • Flip then cook another 2 minutes or until the green leaves have wilted and the white bottoms are beginning to soften, but still have some crunch.
  • Transfer to a platter then squeeze 2 lemon wedges on top. A teaspoon or so of olive oil is nice, too. Serve with more lemon wedges on the side.

1/2 cup chicken broth (use veg broth for vegetarian version.)
1/2 cup whole milk (full-fat milk)
3 teaspoons minced garlic
1/4 cup finely chopped onions
16 tablespoons cold unsalted butter (225 g, divided)
1 tablespoon all-purpose flour
6 tablespoons lemon juice (add less if you do not like the sauce to be too tangy)
salt (to taste)
pepper (to taste)
1 tablespoon finely chopped parsley

Steps:

  • Stir together chicken broth, milk, garlic, and onions into a small saucepan.
  • Cook on medium heat until the mixture is reduced to half. It should take 10-12 minutes.
  • Cut cold butter into 1-inch cubes. Add 1 cube of butter to a medium-size saucepan and heat on medium heat until it melts.
  • Add all-purpose flour and mix it well with the butter. Cook until the mixture turns slightly brown (1-2 minutes). Stir continuously while cooking.
  • Now slowly pour the reduced chicken broth mixture over the flour and butter mixture and whisk continuously using a wire whisk.
  • Cook for a minute until the sauce slightly thickens.
  • Add the remaining butter to the pan and cook until the butter slightly melts and combines with the sauce. Stir frequently.
  • Note - Make sure the butter is chilled. It will bring down the temperature of the sauce and the sauce will not curdle when lemon juice is added to it.
  • Add lemon juice before the butter completely melts and cook the sauce for 1-2 minutes.
  • Note - Add the lemon juice when the sauce is not very hot. If you add lemon juice to the hot sauce, it might curdle it.
  • Season with salt and pepper to taste, and add parsley and mix well.
  • Tip - Be very careful about adding any extra salt. The chicken broth also has salt in it.
  • The sauce is ready. Use it as desired.

1 large bunch kale (7 to 8 cups chopped leaves)
1/2 cup stock, white wine or water, plus more as needed
1/4 teaspoon fine sea salt or more to taste
Half of a lemon

Steps:

  • Rinse the kale, and then pull the leaves from the stems. Discard the stems or save to add to homemade stock another day. Coarsely chop kale leaves into randomly shaped pieces, about 2 inches large.
  • Heat the olive oil in a wide skillet over medium-high heat. When the oil shimmers, add the garlic and red pepper flakes. Cook, stirring often, until the garlic is soft, but before it browns.
  • Add the chopped kale leaves, stock, and 1/4 teaspoon of salt. Cook, tossing the kale around the pan occasionally, until the kale turns bright green, is soft and is wilted, about 7 to 8 minutes. If before the kale is tender, the liquid evaporates, add a little bit more to the pan.
  • Taste and adjust with additional salt, and then finish by stirring in the juice from half a lemon.

Steps:

  • Gather the ingredients.
  • Peel and mince the garlic (you can use a garlic press if you like; presses tend to bring out the bitterness in garlic, but some people don't seem to notice it).
  • If you're making a salad in the next few hours, put the garlic in a large salad bowl. (If you're making the dressing ahead of time, put the garlic in a sealable jar.)
  • Add the lemon juice, lemon zest, salt, pepper, and mustard. Whisk to combine everything (or seal and shake the jar).
  • Whisk in the olive oil (or, again, seal the jar and shake it vigorously).
  • Taste and adjust salt and pepper to taste. If the dressing is too zingy for you, feel free to add more olive oil to soften the flavor. A bit more salt will help temper​ the acid kick, too.
