Number Of Ingredients 4

1 cup all-purpose flour
½ cup cornstarch
½ cup confectioners' sugar
¾ cup butter

Steps:

  • Combine dry ingredients. Cream butter until fluffy. Add to flour mixture and beat thoroughly.
  • Refrigerate 1 hour.
  • Preheat oven to 300 degrees F (150 degrees C).
  • Shape dough into 1 inch balls. Place about 1 1/2 inches apart on ungreased cookie sheets. Flatten with lightly floured fork. Bake for about 20 minutes or until edges are just lightly browned. Don't overbake.

1 cup butter, softened
¾ cup cornstarch
⅓ cup confectioners' sugar
1 cup all-purpose flour
3 ounces cream cheese
1 cup confectioners' sugar
1 teaspoon vanilla extract
3 drops red food coloring

Steps:

  • Cream butter, slowly add cornstarch and 1/3 cup confectioners' sugar; beat til fluffy. Stir in flour with wooden spoon (very soft dough). Cover and chill 1 hour.
  • Preheat oven to 350 degrees F (180 degrees C).
  • Roll dough into 24, 1 inch balls. Place 1 and 1/2 inches apart on ungreased sheet. Press slight indentation on top of each cookie. Bake for 10-12 minutes until firm, not brown. Cool, top with icing.
  • To Make Icing: Blend cream cheese and 1 cup powdered sugar til smooth. Mix in vanilla or 1/4 t. of another extract and a few drops of food coloring. Mix well.

Lemon Melting Moments Cookies - A wonderful gentle lemon flavor with a melting sensation!

3/4 cup or170 g butter
1/2 cup or 60 g confectioners sugar
2 Tablespoon water
1 teaspoon lemon extract
1 1/2 teaspoon vanilla extract
1 1/2 cups or 190 g sifted All Purpose / plain flour

Steps:

  • Place sieved flour and sieved confectioners' sugar in a large mixing bowl.
  • Add butter in 1 cm pieces (distribute evenly over the flour)
  • Add water, lemon extract and vanilla extract
  • Mix together very well using hands until the ingredients form a dough. You should be able to have a 'clean' mixing bowl with no crumbs.
  • Cover with parchment & place in the freezer for 10 minutes to firm up.
  • Fill the cookie press half full and use a template of your choice, or roll out to 1 cm thick and use a cookie cutter. Place cookies on the UN GREASED baking tray about a hand width apart.
  • Bake in preheated oven at 350F, 180C, Gas 4 for 10 minutes or until the edges just begin to slightly brown. (see photo)
  • Remove from the oven, cool for 5 minutes on the baking tray then transfer to cooling rack

FILLING:
7/8 cup unsalted butter, room temperature, 14 tablespoons
1/4 teaspoon salt
1/2 cup confectioner's sugar
1 1/2 cups all-purpose flour
1/2 cup cornstarch
1 teaspoon vanilla extract
Zest of one lemon
1 cup confectioner's sugar
1/4 cup unsalted butter, room temperature
Juice of one lemon

Steps:

  • Preheat oven to 300°F. In a large bowl cream the butter, salt and sugar until light and fluffy on a medium setting, roughly 3 minutes. Reduce the speed to low and incorporate the vanilla and lemon zest, scraping down the sides as you go. Sift the flower and cornstarch into the mixture and beat on a low setting until just combined. Take small portions of the mixture and roll into balls until you have 25 to 30 pieces. (I made mine quite large, I ended up with roughly 23.) If you want them to be as even as possible, roll out the mixture until it forms a log then use a clean knife to section into 30 pieces. Place the pieces on a baking tray lined with wax paper, gently press on each piece with a fork until it has left an imprint. You can also press on them gently with your fingers, if you do not wish to leave an imprint. Bake for 20 minutes. Let them cool completely. For the filling beat the sugar, butter and lemon juice on a medium setting until incorporated. Use the back of a spoon, or a knife to ice one side of the cookie then sandwich them together. Try to find two which are similar sizes. The cookies can be kept for up to 5 days in an air tight container. NOTE: Comments have been left stating an extra 1/2 cup of confectioners sugar was required for a thicker icing sugar. Please keep this in mind if a thicker consistency is preferred.

My delightfully soft and buttery melting moments are a scrumptious twist on a shortbread cookie that's perfect for your Christmas baking! These sweet treats are so soft and tender that they will literally melt in your mouth!

1 cup all-purpose flour
1/2 cup cornstarch
1/2 cup confectioners' sugar ((+ more for dusting before serving if desired))
3/4 cup butter ((salted - softened, at room temperature))

Steps:

  • In a medium mixing bowl, whisk together the all-purpose flour, cornstarch, and confectioners' sugar.
  • In a large mixing bowl or the bowl of your stand mixer cream the butter until smooth and lighter in color. Add the dry ingredients and mix until all of the dry ingredients are incorporated. Cover and chill for 1 hour.
  • Preheat your oven to 300°F (150°C) and shape the dough into 1-inch balls. Place them onto a parchment paper or silicone mat lined baking sheet with about 2 inches of spacing between the cookies.
  • Press down firmly to flatten the cookies using a dampened fork. Bake in the middle of your oven's center rack for 18-20 minutes or until the cookie bottoms just begin to turn a light golden color.
  • Remove from the oven and allow to cool on the baking sheet for a few minutes before transferring to a wire cooling rack to cool completely. Dust with confectioners' sugar once cooled (or the sugar will melt) if desired.

Melting Moments Cookies With Dr. Oetker Corn Starch

1 cup unsalted butter partly melted
2 tsp vanilla extract
0.75 cup powdered sugar
1.5 cup Dr. Oetker Corn Starch
1 cup all-purpose flour
0.25 tsp salt

Steps:

  • Preparation 1 Preheat the oven to 170C/325F/Gas 3. Line a baking tray with parchment paper or a silicone mat, and set aside. 2 In a large mixing bowl, whisk together the butter, vanilla, and sugar until creamy and combined. 3 Add the cornflour, flour, and salt, and mix to form a smooth, soft dough. 4 Roll the dough into small 0.7oz balls, and place them onto the prepared baking tray. Press them down with the tines of a fork. Freeze until solid - about 10 - 20 minutes. 5 Bake for 15 - 20 minutes or until firm and just starting to colour around the edges (they'll still be very pale). Allow to cool for 5 - 10 minutes before transferring them to a wire rack to cool completely.

Melting moments cookies are simple and easy shortbread cookies that have a crumbly melt in your mouth texture. A simple and easy butter cookie that is perfect to add to your holiday baking during the festive season.

1 cup Unsalted Butter (room temperature)
6 tbsp Powdered sugar (confectioners' sugar)
1½ cup All-purpose flour
⅓ cup Cornstarch
¼ tsp Salt
1 tsp Pure vanilla extract
½ tsp Lemon zest

Steps:

  • Combine the flour, salt, and cornstarch.
  • In the bowl of a stand mixer with the paddle attachment, on medium-high speed, cream butter and powdered sugar until light and fluffy. You can also use a large bowl with a whisk.
  • Scrape the sides of the bowl. Add the lemon zest and vanilla extract. Followed by the flour mixture. Pro tip - We do not want to activate the gluten in our dough. So do not overmix when you add the flour mixture.
  • Transfer the dough to the refrigerator to chill for 15 to 20 minutes. Pro tip - Chilling will prevent the dough from spreading too much.
  • Preheat oven at 350°F / 177°C / Gas Mark 4. Line two baking sheets with parchment paper or a silicone mat.
  • Roll the cookie dough into about 1-inch balls. Pro tip - Dusting your hands with cornstarch will make it easier to roll the dough balls.
  • Place the cookies on the prepared baking sheet leaving enough space for them to spread.
  • Bake the cookies for 8 to 10 minutes or until lightly golden around the edges. Pro tip - Larger cookies will take about 10 minutes and vise versa. I prefer to bake only one cookie sheet at a time to prevent the cookies from spreading too much.
  • Cool on a cookie tray for 5 minutes. Then, transfer to a wire rack to cool completely before you transfer to an airtight container or cookie jar.Pro tip - A cooling rack will prevent the steam below the cookies from making them soggy.
