LEMON RICOTTA PASTA
Steps:
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup pasta cooking water, then drain the pasta.
- In the same pot, heat the olive oil at medium heat. Then add the garlic paste and cook until fragrant. Whisk in the ricotta, parmesan cheese, lemon juice and zest, salt and pepper until well combined.
- Add 1/2 cup pasta water to the sauce and whisk until smooth. Add the pasta and the kale and continue to stir until the noodles are well coated and the kale softens. Add more pasta water as needed for a smooth sauce.
- Garnish with lemon slices and basil, if desired.

ONE-POT PASTA WITH RICOTTA AND LEMON
This elegant, bright pasta dish comes together in about the same amount of time it takes to boil noodles and heat up a jar of store-bought marinara. The no-cook sauce is a 50-50 mix of ricotta and Parmesan, with the zest and juice of one lemon thrown in. That's it. To make it more filling, add peas, asparagus or spinach in the last few minutes of the pasta boiling, or stir in fresh arugula or watercress with the sauce in Step 3. It's a weeknight and for-company keeper any way you stir it.

- Divide the pasta among bowls and top with some of the sauce that's pooled at the bottom of the pot. Garnish with grated Parmesan, black pepper, red-pepper flakes and basil, if using.
ONE-POT LEMON RICOTTA SPAGHETTONI
Move over spaghetti: Your wider cousin, spaghettoni, is moving up the trending charts. Though only slightly thicker than regular spaghetti, the extra width helps it soak up the flavors of the sauce--in this case tangy lemon juice and fragrant scallions and garlic. This dish is cooked in just one pot (no need to bring water to a boil beforehand!), so it's a super quick and easy choice for weeknights. We top it off with creamy ricotta, salty Parmesan and bitter lemon zest for a bold but balanced finish.

- Heat the olive oil in a large heavy-bottomed pot (an oval Dutch oven or round braiser works well here, but any large pot will do) over medium-high heat. Add the scallion whites, 1 teaspoon salt and a few grinds of black pepper and cook, stirring occasionally, until softened and starting to caramelize, 3 to 4 minutes. Add the oregano, crushed red pepper flakes and garlic and cook, stirring, until the garlic is softened and fragrant, about 1 minute.
- Add the lemon juice, 5 1/2 cups water, 1 teaspoon salt and a few grinds of black pepper to the pot, scraping up any brown bits that may have formed on the bottom. Put the spaghettoni in the pot and spread it out as much as you can. Bring the water to a boil and cook, stirring frequently to make sure the pasta doesn't stick to the bottom of the pot, until the pasta is al dente, the mixture looks creamy and starchy and almost all of the water is evaporated, 10 to 12 minutes.
- Turn off the heat and stir in the Parmesan, ricotta and lemon zest until the cheeses have melted and the sauce is very creamy, about 1 minute. Divide the pasta into 4 bowls and garnish each with scallion greens and a few more cracks of black pepper.
LEMONY RICOTTA SPAGHETTI
This creamy pasta pairs the bright flavor of lemon with the peppery notes of arugula.

- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package directions. Reserve 1 cup of pasta cooking water and drain.
- Combine the ricotta, lemon zest, lemon juice and 1/2 teaspoon each salt and pepper in a large bowl. Whisk in 1/2 cup of the reserved pasta cooking water and the baby arugula. Toss with the pasta, adjust the seasoning with salt and pepper and the consistency with more of the reserved water if needed. Serve hot.

- Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
- Meanwhile, melt butter in a large skillet over medium heat. Add mushrooms, onion, bell pepper, and garlic; saute until softened, 5 to 10 minutes. Season with salt, pepper, 1 teaspoon Italian seasoning, and crushed red chili pepper. Add spinach and tomato towards the end of the saute process and cook until spinach has wilted.
- Season ricotta cheese with more Italian seasoning, garlic powder, and onion powder. Stir seasoned ricotta cheese into the vegetable mixture with Parmesan cheese, lemon zest, and lemon juice. Heat over medium-high heat until heated all the way through, 3 to 5 minutes.
- Plate and top with mozzarella.

- Lemony Ricotta Pasta with Basil SERVES 6 PREP TIME: 5 minutes COOKING TIME: 10 minutes INGREDIENTS 1 pound dried short pasta, such as gemelli, fusilli, penne, or rotini 1 1/2 cups ricotta cheese, preferably freshly made 1 cup finely grated Pecorino Romano or Parmesan cheese Finely grated zest of 1 large lemon Juice of 1 large lemon 1/2 teaspoon kosher salt 1/2 teaspoon freshly ground black pepper 1/2 cup loosely packed fresh basil leaves, thinly sliced Pinch red pepper flakes (optional) Good-quality olive oil, for serving INSTRUCTIONS Bring a large pot of heavily salted water to a boil over medium-high heat. Add the pasta and cook according to package directions until al dente. Meanwhile, prepare the sauce. Place the ricotta, Pecorino or Parmesan, lemon zest, lemon juice, salt, and black pepper in a large heatproof bowl and stir to combine. When there are about 2 minutes remaining in the pasta's cooking time, place the bowl over the pot and slowly stir the ricotta mixture. You should see it loosening as it warms. When the pasta is al dente, drain it well. Add it to the bowl of ricotta and mix well to evenly coat the pasta in the sauce. Add the basil and red pepper flakes, if using, toss, and serve immediately. Drizzle olive oil over each serving. RECIPE NOTES Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
LEMON, SALMON AND RICOTTA PASTA

- Cook the pasta in a large pan of salted boiling water for 10-12 minutes, or until al dente; drain thoroughly and return the pasta to the pan.
- Combine the lemon zest, lemon juice, oil and parmesan in a small bowl; pour the lemon mixture over the pasta and toss to combine; add the ricotta, basil, parsley and smoked salmon and toss gently until combined.
- Spoon the pasta into 6 serving bowls and serve with a side salad and warm crusty rolls.

- Bring a large pot of water to a boil. Add a heaping amount of salt. Drop the fettuccine into the water and stir well. Cook for 1 minute less than the package’s instructions.
- When the pasta has about 3 minutes left of cooking, heat a 12” stainless steel skillet over medium heat. Add the butter and let melt. Continue to cook the butter until browned and fragrant. Stir in the lemon zest. Cook for another few seconds.
- Retrieve 1 cup of pasta water from the pot and add it to the skillet (reserve about ½ cup more on the side). Drain the pasta and add it to the sauce. Stir well to coat.
- Gradually add the parmesan cheese, stirring continuously for about 1 minute to fully incorporate the cheese and allow the sauce to cling to the pasta. (*At this point, if the sauce is looking a little thick, you can add more pasta water as needed to loosen it and keep it silky-smooth.)
