LEMON GARLIC SHRIMP RECIPE

Steps:
- Heat large pan over medium-low heat.
- Add 2 tablespoons of olive oil.
- Add the chopped garlic and saute, stirring occasionally, for approximately 2-3 minutes. Do not let the garlic brown.
- Increase the heat to medium-high, add the shrimp and saute for about 1 minute.
- Turn the shrimp over. Add the lemon slices.
- Add the white wine and continue to saute, stirring occasionally, for another minute or so.
- Season with ⅛ teaspoon of cajun and salt and pepper to taste.
- Add the butter, lemon juice and half of the chopped parsley and quickly saute for another 30 seconds or so.
- Transfer to a serving dish, garnish with chopped parsley and if desired lemon wedges.
- Serve immediately.

- In a large bowl, combine the first six ingredients. Pour 1/2 cup marinade into a large resealable plastic bag; add shrimp. Seal bag and turn to coat; refrigerate for 2-3 hours, turning occasionally. Cover and refrigerate remaining marinade., Cook rice according to package directions. Cover and refrigerate 1 cup cooked rice for another use. Drain and discard marinade from shrimp. , In a large skillet, saute shrimp in reserved marinade for 3-4 minutes or until shrimp turn pink. - Cut the ham into 1/2-inch-thick strips, about 6 inches long.
- Wrap each strip snugly around the center of each shrimp.
- Heat the olive oil in a large non-stick skillet over high heat until very hot.
- Add the shrimp and cook until pink and opaque on the outside, about 2 minutes.
- Turn the shrimp, stir in the garlic and red pepper flakes and cook for about 30 seconds, then stir in the wine and lemon juice.
- Cook until the liquid is nearly evaporated and the shrimp are opaque throughout, about 1 minute longer.
- Take the pan from the heat and stir in the lemon zest, parsley and paprika.
- Put the shrimp in a bowl and refrigerate, uncovered, until chilled, about 30 minutes.
- If storing for longer than 30 minutes, cover tightly once chilled.
- For the salad dressing, stir together the shallot, lemon zest and lemon juice.
- Slowly drizzle in the olive oil, whisking constantly, until emulsified (slightly thickened).
- Season to taste with salt and pepper.
- Put the lettuces in a large bowl, drizzle the dressing over, and toss.
- Arrange the salad on individual plates and top with the shrimp arranged in a circular fan.
- Make thin shavings of the manchego cheese using a vegetable peeler and sprinkle the cheese over the shrimp.
- Garnish with parsley sprigs and cracked pepper.
- Note: The shrimp should not be too crowded in the skillet or they won't cook as quickly and evenly as they should.
- Cook in batches, if necessary.

Reduce the heat to medium low and cook, stirring occasionally, until thickened, about 5 minutes. Stir in the parmesan and 1 tablespoon butter. Remove from the heat and season with salt and pepper. Cover to keep warm.

LEMON-GARLIC GREENS SAUTE
This recipe is so simple I almost decided not to post it, but it's definitely my go-to side dish when I want fast, delicious greens. I like to use collard greens and kale in this, but you could also use just one or the other or mustard greens & chard as well (I wouldn't recommend spinach for this because it will cook down too much). I also like this with red wine vinegar and liquid smoke in place of the lemon juice. Be careful not to add freshly washed (still wet) greens to hot oil -- you'll get fireworks.

- Roughly chop the greens and wash them thoroughly.
- To a large saucepan or Dutch oven add the olive oil, garlic and as much of the greens as will fit (you may need to let the first batch cook down a little to fit the rest of the greens in the pan).

- In a large Ziplock freezer bag, mix everything except the butter and swish it around good to coat all of the shrimp. Or, mix everything in a large bowl and cover TIGHTLY with Saran wrap.
- Refrigerate for 1 hour.
- Preheat large heavy bottom pan with the butter in it on medium. Toss shrimp around for about 10 minutes until pink and lightly browned.
- TIPS: Do not substitute with garlic powder OR dried parsley! Sea salt is stronger than table salt so use less than normal. Table salt can be substituted.
