PLANTATION ICED TEA
Steps:
- Cold-brew the tea by putting 4 heaping teaspoons of black tea leaves (or 4 tea bags) in a jar and adding 1 quart cold water. Cover the jar and leave the fridge to cold-brew for 8-12 hours.
- Once the tea is done brewing, strain out and discard the tea leaves (or remove the tea bags). You now have 1 quart of cold-brew black tea.
- In a pitcher, mix together 6 ounces pineapple juice and 2 ounces simple syrup.
- Add the 1 quart of cold-brew black tea to the pitcher and stir till combined.
- Fill glasses ice with, pour in the Plantation Iced Tea and serve!
ICED LEMONGRASS TEA
Steps:
- Trim off bottom 6 inches of lemongrass stalks. Cut enough lemongrass tops crosswise into 1/2-inch pieces (discard any discolored parts) to measure 1 cup. Bring lemongrass pieces, sugar, and 2 cups water to a boil in a 2-quart heavy saucepan, stirring until sugar is dissolved, then remove from heat and let steep, partially covered, 20 minutes.
- Put remaining 6 cups water in a pitcher. Blend lemongrass mixture in a blender until lemongrass is finely chopped (use caution when blending hot liquids), then pour through a fine-mesh sieve into water in pitcher, discarding solids. Serve over ice.
HAWAIIAN ICED TEA
I first tasted this tea in a popular Italian restaurant in my college hometown of Kailua. I have been craving it ever since, and have experimented with a few proportions. Add more tea leaves for a stronger tea, but do not steep longer or the tea will end up tasting bitter. (If it does, add a pinch of baking soda.) Always make something to your liking! This is also great to serve at showers.

PLANTATION ICED TEA
When I was a kid in Ohio, my mother kept mint growing under a dripping hose bib. On those icky, sticky, hot and humid summer days, I fondly remember cold glasses of this refreshing iced tea with its hint of mint, orange and lemon juices.

Steps:
- In a small saucepan, combine the sugar, 1/2 cup water, lemongrass and ginger. Bring to a boil over medium-high heat, stirring to the dissolve sugar. Reduce heat to low and simmer for 2 minutes. Remove from the heat and allow the lemongrass and ginger to steep in the sugar syrup for at least half an hour. For more pronounced flavor, place in the refrigerator and allow to steep several hours or overnight.
- Bring 4 cups of water to a boil. Add the teabags, turn off the heat, and allow the tea to steep for 5 minutes. Squeeze out the teabags and discard. Pour the brewed tea into a heat-proof pitcher.
- Strain the lemongrass ginger syrup through a small sieve, pressing on the solids to extract as much flavor as possible. Discard the solids, and add the syrup to the pitcher of tea. Add three cups of cold water to the tea, and stir well. Chill the tea, and serve over ice. Enjoy!
