This is a yummy Lentil Stew made with mostly what is in your pantry. It is only four servings so you won't have tons left over. Simple but delicious!

1 cup dry lentils
3 1/2 cups chicken broth (I use College Inn)
1 (14 1/2 ounce) can of peeled Italian tomatoes (cut up)
1 cup peeled chopped potato
1/2 cup chopped carrot
1/2 cup chopped onion
1/2 cup chopped celery (optional)
1 tablespoon dried parsley
1 tablespoon dried basil (crushed)
1 garlic clove (minced)
1 dash pepper

Steps:

  • Rinse and drain the dry lentils.
  • In a saucepan combine the lentils, chicken broth, tomatoes, potatoes, carrots, celery, parsley, basil, garlic, and pepper.
  • Simmer for 45-50 minutes untils lentils and vegetables are tender, stirring occasionally.

1/2 pound smoked kielbasa or Polish sausage, chopped
3 tablespoons olive oil
3 tablespoons butter
1 cup cubed peeled potatoes
3/4 cup sliced fresh carrots
1 celery rib, sliced
1 small onion, finely chopped
5 cups beef broth
1 cup dried lentils, rinsed
1 cup canned diced tomatoes
1 bay leaf
1 teaspoon coarsely ground pepper
1/4 teaspoon salt
1 cup uncooked ditalini or other small pasta
Shredded Romano cheese

Steps:

  • Brown kielbasa in oil and butter in a large skillet. Add the potatoes, carrots, celery and onion. Cook and stir for 3 minutes over medium heat. Transfer to a 4- or 5-qt. slow cooker. Stir in the broth, lentils, tomatoes, bay leaf, pepper and salt., Cover and cook on low for 8-10 hours or until lentils are tender. Cook pasta according to package directions; drain. Stir pasta into slow cooker. Discard bay leaf. Sprinkle servings with cheese.

1 medium yellow onion, chopped
2 carrots, peeled and cut into a 1/4-inch dice
2 celery stalks, peeled and cut into a 1/4-inch dice
1 tablespoon minced garlic (from 3 cloves)
1 tablespoon minced fresh ginger (from a 1-inch piece)
3 thyme sprigs
1 tablespoon curry powder, such as Madras
1/2 teaspoon ground cinnamon
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground pepper
1 can (14.5 ounces) diced fire-roasted tomatoes
1/2 cup dried red, pink, or yellow lentils
1 quart low-sodium vegetable broth or water
1 cup coconut milk
1 tablespoon fresh lemon juice, plus more to taste
Chopped cilantro and/or scallions, for serving
Poached or fried eggs, for serving (optional)
Plain yogurt, chopped roasted pistachios, and/or extra-virgin olive oil, for serving (optional)

Steps:

  • Melt butter in a small pot or large saucepan over medium heat. When foam subsides, add onion, carrots, and celery and cook, stirring occasionally, until vegetables are beginning to soften but not developing any color, 8 to 10 minutes. Stir in garlic, ginger, thyme, spices, 2 teaspoons salt, and 1/4 teaspoon pepper; cook until fragrant, about 1 minute.
  • Add tomatoes, lentils, and broth. Bring to a boil, then reduce heat to low, cover, and simmer until lentils are tender and creamy, 15 to 18 minutes. Remove and discard thyme. Transfer about one-third of soup to a blender; purée until smooth. (Be careful blending the hot liquid: Remove feed cap from blender lid and cover with a kitchen towel to let steam escape; or pulse several times with an immersion blender directly in pot to partially purée.) Stir purée back into pot, with coconut milk and lemon juice. Serve with any combination of serving suggestions.

1 large Spanish onion, chopped
½ green bell pepper, chopped
½ red bell pepper, chopped

3 cloves garlic, minced
2 cups water
2 cups beef broth
2 cups stewed tomatoes
1 ½ cups dry lentils, rinsed and sorted
1 cup chopped fresh mushrooms
1 (6 ounce) can tomato paste
1 tablespoon white vinegar
½ teaspoon red pepper flakes
¼ teaspoon dried basil
¼ teaspoon dried oregano
¼ teaspoon ground black pepper
½ cup boiling water, or as needed

Steps:

  • Heat a large pot over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Add onion and bell peppers to the pot and saute until slightly caramelized, 7 to 10 minutes. Add garlic and saute until fragrant, 1 to 2 minutes.
  • Stir 2 cups water, beef broth, tomatoes, lentils, mushrooms, tomato paste, vinegar, red pepper flakes, basil, oregano, and black pepper into the pot. Bring to a boil. Reduce heat and let simmer, uncovered, stirring frequently, until lentils are tender, about 1 hour. Add boiling water as needed to keep lentils from sticking.

1 cup green lentil, picked over and washed
2 1/2 cups water
1/2 teaspoon turmeric
1/4 teaspoon ground ginger
1 pinch nutmeg
1 tablespoon olive oil
1 medium white onion, diced and chopped
1 large carrot, cut lengthwise and sliced 1/4 inch thick
1 large celery rib, sliced 1/4 inch thick
1/2 large fennel bulb, split lengthwise and sliced 1/4 inch thick
2 garlic cloves, minced
2 large potatoes, peeled and diced into 1 inch cubes
1 lb plum tomato, seeded and diced
1/4 teaspoon cinnamon
1/4 teaspoon turmeric
2 -3 teaspoons cumin
1 cup vegetable stock
2 tablespoons reduced sodium soy sauce
1 teaspoon harissa (If you don't have harissa, a sprinkle of crushed)
red pepper flakes, would work well here
1 tablespoon fennel leaves, chopped
salt and pepper

Steps:

  • Place lentils, water, tumeric, ginger and nutmeg in a medium saucepan and bring to a boil; reduce to a simmer and cook uncovered for 20 minutes. At the end of 20 minutes your lentils will be still firm and
  • you will have very little water left in the pot, the lentils finish cooking with the stew.
  • At the point your lentils have been cooking 15 minutes, place olive oil in a large saucepan over medium heat. Add onions, carrots, celery and fennel. Cook for 5 minutes until vegetables begin to soften. Add garlic and cook another 30 seconds.
  • Mix the lentils into the vegetables in the larger pot and stir well.
  • Add the remaining ingredients, stir again and simmer for 20-30 minutes.
  • If the stew seems dry, add additional vegetable stock or water.
  • When ready to serve, season with salt and pepper to taste. Sprinkle chopped fennel fronds on top.
  • Serve hot on couscous or rice.
