1 large onion, finely chopped
1/2 cup finely chopped carrots
6 cloves garlic, minced
1 1/2 cups lentils, rinsed
1/2 teaspoon dried thyme
1 can (28 ounces) whole tomatoes in puree
Coarse salt and ground pepper
2/3 cup low-fat plain yogurt
1 1/2 pounds spaghetti or linguine
Grated Parmesan cheese, (optional)

Steps:

  • In a large pot, heat oil over medium heat. Add onion, carrots, and garlic; cook, stirring occasionally, until softened, about 5 minutes. Add lentils and thyme; cook, stirring, until lentils are coated, about 2 minutes.
  • Break up tomatoes using your hands or a spoon and then add along with puree. Add 4 cups water and bring to a boil. Reduce heat, cover tightly, and simmer, stirring occasionally, until lentils are tender and starting to break down, about 45 minutes. Season generously with salt and pepper. Remove from heat. If eating right away, stir in yogurt.
  • Meanwhile, in a large pot of boiling salted water, cook pasta until al dente according to package instructions; drain. Toss with sauce and top with grated Parmesan if desired.

1 medium green bell pepper, chopped

Steps:

  • In a pot, bring the water to a boil, and stir in the lentils. Reduce heat, and simmer 20 minutes; drain.
  • Heat the olive oil in a large skillet over medium heat, and saute the green bell pepper and onion until tender. Mix in the tomatoes, and season with salt and pepper. Stir in the lentils, reduce heat, and simmer 25 to 30 minutes, until the lentils are tender.

1 large potato, peeled and cut into bite-size cubes

420 g canned tomatoes, chopped
1 cup coconut milk
1 cup vegetable stock or 1 cup chicken stock
1 teaspoon garam masala
1 teaspoon salt
1 teaspoon brown sugar
1 cup basmati rice
1 cup green peas
2 tablespoons fresh cilantro, fresh (coriander)
1 tablespoon lemon juice

Steps:

  • Heat the oil in a large saucepan over a medium heat and cook the onions for 10 minutes, stirring occasionally.
  • Add the garlic, ginger, ground coriander, cumin, turmeric and chili and cook, stirring, for 1 minute.
  • Add the potato and lentils and stir to coat with the spice mixture.
  • Add the tomatoes, coconut milk, stock, garam masala, salt and sugar, bring to the boil and cover with a lid. Reduce the heat to medium and simmer, covered, for 20 minutes, stirring occasionally.
  • Add the peas to the curry and simmer, uncovered, for 5 minutes.
  • While the curry simmers, cook the rice.
  • Remove from the heat and stir in the cilantro and lemon juice.
  • Serve on a bed of rice.

1/2 cup red lentils
8 ounces whole onion or 7 ounces chopped, ready-cut onion (1 2/3 cups)
2 teaspoons olive oil
1 clove garlic

Steps:

  • Chop whole onion, and saute in hot oil in a nonstick skillet.
  • Mince garlic, and add to onion; stir in cumin, coriander and hot-pepper flakes, cooking until onion is soft.

  • When lentils and potatoes are cooked, drain well and stir into tomato mixture. Then, add peas, vinegar and raisins. Continue cooking about 3 minutes.

1 tbs olive oil
1 medium onion (chopped)
2 cloves garlic
1 can (400g) tomatoes
100 g red lentils
2 tbs sun dried tomato halves
Dash balsamic vinegar

Steps:

  • Add the oil to a medium frying pan, saute the onions and garlic until soft and starting to turn golden. Add the tomatoes, lentils and half a cup of water. Turn down the heat, cover and leave to simmer for 25 minutes or until the lentils are soft.
  • Check every 5 minutes or so, adding more water so the mixture remains runny.
  • Transfer to a blender - I use my Vitamix, add the sun dried tomatoes and some of the oil from the jar, and blitz to a silky smooth paste, add a drizzle of water if needed to thin - you want a spreadable, but not runny consistency.
  • Season to taste with the balsamic vinegar and salt and pepper.

The ingredient amounts listed are the ones I use, but as long as there's an appropriate amount of liquid, everything's flexible, go crazy. The listed recipe makes roughly 4 cups of finished stew, which in my house is two dinner portions and one or two smaller lunch portions. Leave out the beef and substitute vegetable stock for a vegetarian dish.

1 large baking potatoes (approx 330g) or 2 medium potatoes (approx 330g)
1 large carrot (approx 100g)

1/2 cup diced canned tomato (or equiv fresh chopped tomatoes)
2 cups beef stock (or water + bouillon)

Steps:

  • Chop onions and carrots.
  • Brown beef, then add onions and garlic; saute for a few minutes.
  • Add carrots, tomato sauce, diced tomatoes, stock, dry lentils, paprika, curry powder, pepper, bay leaves.
  • Bring to a boil, then simmer on medium for 30 minutes.
  • Meanwhile, peel and dice potato into 1/2 inch chunks.
  • Add potatoes. Add water if necessary to prevent burning, but not so much it won't boil off. Aim for stew, not soup!
  • Simmer 45 minutes more or until liquid is absorbed and vegetables are tender.

1 yellow or white onion, chopped
3 cloves garlic, pressed or minced
1 tablespoon minced fresh ginger
1 jalapeño pepper, minced

2 Yukon gold potatoes, peeled and chopped
1 carrot, chopped
Salt and black pepper
1 cup black beluga lentils or regular green/brown lentils, picked over for debris and rinsed
3 cups vegetable broth
1 cup light coconut milk, plus more for garnish
1 large can (28 ounces) diced tomatoes
1 small cauliflower, cored and roughly chopped
1/4 cup chopped fresh cilantro, for garnish
Cooked brown jasmine or long-grain rice, for serving (optional)

Steps:

  • Warm the oil in a large pot or Dutch oven over medium-high heat. When it's hot, add the onion, garlic, ginger, and jalapeño. Cook until softened, about 3 to 5 minutes, stirring occasionally. Stir in the curry powder, cumin, and sugar. Cook and stir until fragrant, about 1 minute.

Basic Indian Curry Sauce, also known as Bhuna Masala, made with onions, tomatoes, ginger, garlic and spices. This is the base for many Indian dishes such as lentils and curries. This onion tomato masala is very versatile and freezes well. Perfect to have for those busy days when you want to make a curry in a hurry!

1/2 cup Oil
5 Onions (yellow medium diced, about 2 lbs )
10 cloves Garlic (minced)
2 inch Ginger (grated)
4 Green Chili Pepper (I used Thai chili, optional)
6 Tomatoes (medium chopped, I used Roma tomatoes, about 2 lbs)
2 teaspoon Kashmiri red chili powder (adjust to taste)
5 teaspoon Coriander powder (Dhaniya powder)
1 teaspoon Ground Turmeric (Haldi powder)
2 teaspoon Salt

Steps:

  • Start the instant pot in Saute(more) setting and let it heat until it displays HOT.
  • Add oil, then diced onions and stir them.
  • Saute the onions for about 15 minutes. You dont need to stir for the first 8-10 minutes, as the onions release water and do not stick to the pot. After 10 minutes, stir at regular intervals.
  • Add ginger, garlic and green chili pepper and mix well. Saute for 5 mins, while stirring frequently.
  • Add the spices. Then add tomatoes and stir well.
  • Saute for about 3 minutes. We don't want to cook down the tomatoes completely, as we need the tomato liquid for pressure cooking. Scrape the bottom to make sure nothing is stuck. If needed, add 1-2 tablespoons of water and deglaze the pot.
  • Press Cancel and close lid with vent in sealing position. Set the instant pot to manual or pressure cook mode for 5 minutes at high pressure.
  • When the instant pot beeps, let the pressure release naturally. Open the pot and give it a good stir.
  • You can leave the masala as is or blend using an immersion blender or in a standalone blender. Keep it chunky or smooth depending on your taste.
  • This recipe makes about 6 cups of curry sauce.
  • Use a heavy bottom deep saucepan. Add the oil and onions, and saute for about 15 minutes. Stir at regular intervals from the start on stovetop.
  • Add the tomatoes and spices, and stir well. Cover and let it cook for 5 minutes, so the tomatoes soften. Then cook the masala uncovered so all the liquid dries and the masala thickens.Keep stirring at regular intervals.
  • The Bhuna Masala is ready when it starts to leave oil on the sides of the pan. You can keep it as it or blend in a blender, depending on your preference.

1 large onion, chopped
2 cloves garlic, minced or crushed
1-inch piece fresh ginger, minced or grated
2 teaspoons cumin seeds
2 teaspoons ground coriander
1 teaspoon turmeric
1/2 teaspoon cayenne
1 tomato, chopped
3 cups water
1 1/4 cups green or brown lentils, rinsed
juice from 1 small lemon (2 tablespoons)
1 teaspoon sea salt, or to taste

Steps:

  • Heat the butter or oil in a large saucepan over medium heat. Add the onions, garlic and ginger, and stir for 5 to 8 minutes or until the onion browns. Toss in the cumin seeds, ground coriander, turmeric and cayenne, and continue to stir for 1 minute. Add the tomato, simmer for 1 to 2 minutes, then add the water and lentils. Bring to a boil, reduce the heat to a simmer, and cook, covered, for 1 hour or until most of the water is absorbed and the lentils are tender. Stir occasionally, adding more water if necessary.
  • Stir in the lemon juice and salt, heat for another minute or two, then serve hot or warm.

4 cups water

Steps:

  • To make Dal Fry:
  • In another large skillet or saucepan, heat the oil over high heat. Toss in the garlic and onion and cook for 2 minutes. Add the chopped tomatoes and cook for one minute longer, stirring the entire time. Now pour in the cooked mung dal and stir (watch out for spattering as the dal first hits the oil). Cook the dal for 2 to 3 minutes, or if the dal was cold or at room temperature, cook until hot. Serve immediately in individual bowls or in one large bowl.
