Libbie made these. she said they will keep 6 months very old recipe made with pork rinds when they butchered pigs , Rudy has fond memories of this cookie she has 2 recipes for them

Steps:
- mix above ingredients
- use enough flour to make stiff dough
- let stand overnight in frig
- roll out cookie dough and cut
- no baking instructions given im guessing 10 minutes at 375 or until golden makes about 4/12 gallons of cookies these cookies will keep as long as 6 months.

LIBBIE'S RAISIN FILLED COOKIES
This is from Libbie's Little Black Book. I haven't tried these yet but her other cookies are great. The bottom 1/2 of the ingredients list is the filling recipe starting with the sugar. Thanks Heather for helping with these.

Steps:
- Cook filling: Place the 1/2 cup sugar and 1 cup ground raisins in food processor.
- Add cornstarch, 1/2 cup water and salt.
- When cooked and thick, add nuts.
- To make dough, combine rest of ingredients to a soft dough.
- Roll out thin.
- Cut with cookie cutter.
- Put teaspoon of filling on one cookie and then top with another cookie. Pinch edges together.
- Bake in moderate oven at 350 degrees Fahrenheit for about 10 minutes or until browned.

Steps:
- In a bowl, beat sugar, oil, chocolate and vanilla until blended. Beat in egg. In another bowl, whisk flour, baking powder and salt; gradually beat into sugar mixture. Refrigerate, covered, 2 hours or until firm enough to handle., Preheat oven to 350°. With sugared hands, shape dough into 1-in. balls; roll in confectioners' sugar. Place 2 in. apart on greased baking sheets. Bake 10-12 minutes or until set. Remove from pans to wire racks to cool.

LIBBIE'S CANNED SWEET TOMATOES
My boyfriend's family eats these. I've never had them. I just made a whole bunch and every time you mention them they smile. I guess they eat these like fruit. I serve them cold. I have also cooked with them as they are not overly sweet. When canning, amounts are estimates, sorry.

Steps:
- Blanch tomatoes to take skin off.
- Pack peeled tomatoes in hot sterilized jars.
- Fill 1/2 way add 1/2 cup of sugar to each jar.
- Fill jar rest of way with tomatoes.
- Seal and hot water bath for 45 minutes.
- You start timing when water is at a rolling boil around the jars.

LIBBIE'S OATMEAL COOKIES FINE OATS
These cookies do not have white flour in them, just oatmeal that has been run though a food processor. Has raisins. This is a very soft cookie that really expands. I am putting in the option of almond flour with this. Rudy likes them both ways. This is a very old cookie recipe; they must have made these cookies when they ran out of white flour.

Steps:
- Cream sugar butter together.
- Add egg yolks; add vanilla.
- Add baking powder.
- Add fine oatmeal and almond flour if you want.
- Add raisins; fold in beaten egg whites.
- Dough will wet; it takes some stirring to get whites into dough.
- Using a teaspoon, because these cookies get big and really expand without the almond flour, place onto buttered cookie sheet because they want to stick.
- Bake in 425 degree Fahrenheit oven for 7 minutes to 10 minutes. Don't let the almond flour cookies get too brown; they are better a little softer.

LIBBIE'S FILLED ICE BOX COOKIES
Old cookie recipe with raisin or dates that you could roll up in a towel and cut as needed; she says nut meats.

Steps:
- Cook the water, sugar, and raisins or dates together, stirring constantly as it burns.
- Cook until thick; cool.
- Cream shortening and brown sugar together; add eggs, one at a time.
- Add vanilla.
- Sift flour, salt, baking soda, cinnamon together; add walnuts.
- Add to creamed mixture.
- Pat or roll out on wax paper or towel to 1/2 inch thick.
- Spread date mixture over it, roll up and store in refrigerator.
- Slice and bake as needed.
- No time or temperature was given for baking; I am guessing 325 degrees Fahrenheit for 20 minutes.
