LIBBIE'S EGGS WITH ONION TOPS



Libbie's Eggs With Onion Tops image

My Mother-in-law's recipe. These ingredients are just guessing since Libby doesn't measure. She just cooks it and I'm trying to write her recipes down for her family. These are made with the tops of her spring onions.

1/2 cup green onion top (not the white part of the scallion)
3 tablespoons butter
6 eggs
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Sauté the green onion tops in butter until wilted.
  • Add the whole eggs to the pan over medium heat and stir them until scrambled.
  • Season with salt and pepper.
  • She doesn't scramble them before she puts them in pan; this makes a denser scrambled egg and seems to make a big difference to my husband.

Libbies Skillet Corn Bread image

Very old way to make cornbread. I made this. It had a nice crispy bottom because the oil was hot when I put it in pan. I used margarine instead of lard; it was okay. It is lighter than Southern cornbread; the batter is a lot looser than Southern corn bread but don't worry; it comes together great; it is a little moister and sweeter but tastes very good.

1/4 cup flour
3/4 cup cornmeal, yellow
1/4 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup milk, sour
1/4 cup milk, sweet
1 egg
1 tablespoon lard

Steps:

  • Mix flour, cornmeal, sugar, baking soda and salt together.
  • Add sour milk, sweet milk, and egg; stir until just combined.
  • Put a tablespoon lard in a pan like cast iron skillet and let it get hot.
  • Pour the mixture in the skillet.
  • Cook for a minute on stove top.
  • Bake at 425 degrees Fahrenheit for 15 mnutes.

2 onions, cut in 1/4 inch thick
1 cup all-purpose flour, sifted
2 tablespoons flour
1/2 teaspoon salt
1 egg
1 cup milk
2 tablespoons salad oil

Steps:

  • Cut onions 1/4 thick; separate into rings.
  • Combine flour, salt, egg, milk, and oil.
  • Beat together just until dry ingredients are well moistened.
  • Coat onions rings with batter.
  • Fry a few onion rings at time in 375 degree Fahrenheit deep fat, stirring once to separate rings.
  • When onions are golden brown, drain on paper, and salt to taste.
