●2 cups all-purpose flour
●1 1/3 cups quick or old-fashioned oats
●1 teaspoon baking soda
●1 teaspoon ground cinnamon
●1/2 teaspoon salt
●1 cup (2 sticks) butter or margarine, softened
●1 cup packed brown sugar
●1 cup granulated sugar
● 1 cup LIBBY'S® 100% Pure Pumpkin
●1 large egg
●1 teaspoon vanilla extract
●3/4 cup chopped walnuts
●3/4 cup raisins
●Decorating icings, NESTLÉ TOLL HOUSE Semi-Sweet Chocolate Morsels, candies, raisins and/or nuts (optional)

Steps:

  • Preheat oven to 350° F. Grease baking sheets.
  • Combine flour, oats, baking soda, cinnamon and salt in medium bowl. Beat butter, brown sugar and granulated sugar in large mixer bowl until light and fluffy. Add pumpkin, egg, and vanilla extract; mix well. Add flour mixture; mix well. Stir in nuts and raisins. Drop ¼ cup dough onto prepared baking sheet; spread into 3-inch circle or oval. Repeat with remaining dough.
  • Bake for 14 to 16 minutes or until cookies are firm and lightly browned. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Decorate with icings, morsels, candies, raisins and/or nuts.

Steps:

  • Preheat oven to 350℉ (180℃). Combine flour, oats, soda, cinnamon and salt; set aside. Cream butter, add sugars, beat until light and fluffy. Add egg and vanilla; mix well. Alternate additions of dry ingredients andamp; pumpkin, mixing well after each. Stir in morsels. For each cookie, drop ¼ cup dough onto lightly greased cookie sheet; spread into pumpkin shape using a thin spatula. Add a bit more dough to form stem. Bake at 350℉ (180℃) for 20 to 25 minutes. Cool and decorate as desired.

1 can (16-ounce) Libby's Solid Pack Pumpkin
1 (12-ounces) bag semi-sweet chocolate chips

Steps:

  • 1) Preheat oven to 350 degrees. Combine flour, oats, soda, cinnamon and salt; set aside. Cream margarine, gradually add sugars, beating until light and fluffy. Add egg and vanilla; mix well. Alternate additions of dry ingredients and pumpkin, mixing well after each addition. Stir in morsels. 2) Drop by teaspoon full on a lightly greased cookie sheet and bake for approximately 15 minutes, or until cookies are firm and lightly browned. Remove from pan and cool.

Steps:

  • Mix flour, oats, baking soda, cinnamon and salt in medium bowl. Beat butter, sugar and brown sugar in large bowl until light and fluffy. Add pumpkin, eggs and extract: mix well. Gradually add flour mixture: mix well. Stir in nuts and raisins. Drop 1/4 cup dough onto greased baking sheet; spread into 3-inch circle. Repeat with remaining dough. Bake in preheated 350 degree oven for 14 to 16 minutes or until firm and lightly browned. Cool on baking sheets for 2 minutes: remove to wire racks to cool completely. Decorate with icing as desired. Makes 40 large cookies.
