How to Make a Homemade Licorice Recipe image

Learning how to make licorice is simple and fun. Here is our basic homemade licorice recipe complete with vegan and gluten-free options.

½ cup flour
1 pinch Himalayan pink salt
½ cup butter ((or coconut oil))
¼ cup honey
1 cup cane sugar
½ cup sweetened condensed milk ((learn to make your own))
1 teaspoon licorice extract ((make your own using the instructions below))
1 teaspoon beetroot juice ((optional, for color))

Steps:

  • Combine the dry licorice recipe ingredients in a mixing bowl. Set aside.
  • In a saucepan, combine the sugar, syrup, milk, and coconut oil (or butter). Bring to a boil, stirring occasionally. Continue to heat and stir until the temperature reaches 240°F. This is the softball stage. You can check the temperature with a candy thermometer or by dropping a small spoonful into a glass of cold water. Reach into the water and try to form a ball from the syrup with your fingers. It if stays together for a few seconds, it's ready.
  • Remove from the heat right away and pour over the flour mixture. Mix well.
  • Add the beetroot juice for color and the licorice extract for flavor. Mix these in well too.
  • Pour the mixture in a greased pan and set in the refrigerator for about an hour, or until set and well chilled.
  • When chilled, turn out onto a sheet of parchment paper or wax paper and cut into strips with a pizza cutter, keeping the strips about ⅓ to ½-inch wide. Twist them if you like.
  • Dust with arrowroot powder to keep from sticking and store in an airtight container.

If you like the flavor of licorice, you'll love these crispy cookies. When our six children were young, I often made them for lunches or after-school snacks. Flattening the dough logs with a fork gives them a pretty look. Once they're baked, it's a breeze to cut them into strips.

1 cup butter, softened
1 cup sugar
1 cup packed brown sugar
1 egg
2-1/2 cups all-purpose flour
2 teaspoons aniseed
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup chopped nuts

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in egg. Combine dry ingredients; gradually add to creamed mixture and mix well. Stir in nuts. , Divide dough into 10 portions; shape each into a 12-in. log. Place 3 in. apart on ungreased baking sheets. Flatten with a fork to 1/4-in. thickness., Bake at 350° for 8-10 minutes or until golden brown. Cool for 5 minutes; cut diagonally into 1-in. slices. Remove to wire racks to cool completely.

12 sticks black licorice, broken into 1-inch pieces, plus more for garnishing drinks
1 cup sugar
Three 1-inch slices fresh ginger
2 liters unsweetened orange-flavored soda water
Gin, optional

Steps:

  • Special equipment: skull and bones ice cube trays
  • For the licorice ice: Place the licorice pieces and 4 cups water in a medium saucepan over medium high heat and bring to a simmer. Cook until the licorice is completely melted, remove from the heat and let cool completely.
  • Fill the skull and bones cube trays with the licorice water and freeze.
  • For the drink: Combine the sugar, ginger and 1 cup water in a small saucepan and bring to a boil over medium heat. Cook until the sugar dissolves completely, 3 to 5 minutes. Remove and discard the ginger and set the simple syrup aside to cool completely.
  • Fill a pitcher with the orange soda water. Add the simple syrup. Pour into glasses filled with licorice ice, garnish with black licorice sticks and add a jigger of gin if desired.
