- Cool completely before removing.

AUNT GAIL'S OATMEAL LACE COOKIES

- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- In a medium bowl, cream together the butter and sugar until light and fluffy. Stir in the vanilla and almond extracts. Sift together the flour, baking soda, and salt; stir into the butter mixture. Finally, mix in the rolled oats.
- Roll dough into balls about 1 inch in diameter. Place the dough balls about 3 inches apart onto the prepared cookie sheet. Dip the bottom of a glass in water and then in sugar, use this to flatten down the cookies. Sugar the glass as needed. Bake for 8 to 10 minutes, cookies should be slightly browned. Store in an airtight container.

- Preheat oven to 325 degrees F (165 degrees C). Cover baking sheets with foil, then coat the foil with a non-stick cooking spray.
- In a medium bowl, combine oats, flour, salt, and baking powder. In a large bowl, cream sugar and butter until fluffy. Beat in egg and vanilla. Mix in the flour and oat mixture until just combined. Drop dough by teaspoonfuls onto the prepared baking sheets, 2 1/2 inches apart.
- Bake at 325 degrees F (165 degrees C) for 10 to 12 minutes, or until edges turn golden. Cool, then peel cookies off with your fingers. Be sure to re-spray baking sheets with non-stick cooking spray between batches.

- Sift together flour, baking powder and sugar. Add oatmeal, light corn syrup, melted butter, cream and vanilla. Blend well.
- Drop on ungreased cookie sheet 4 inches apart, using 1/4 teaspoon as a measure. Bake in 375 degree F (190 degrees C) oven for 5-7 minutes. Let stand a few seconds before removing from pan.

GG'S LACE COOKIES
My grandmother had two cookies she was famous for...this is one of them. they are crunchy, rich, fancy and almost a bit like brittle candy. These are sandwich cookies and great for parties and having with tea.

- Place butter, shortening, syrup and sugar in the top of a double boiler and bring to a boil over direct heat. Remove from heat and blend in flour and nuts.
- Drop by teaspoonfuls on a greased, foiled line cookie sheet.
- Bake at 325 degrees for 8-10 minutes. Cool slightly before removing from sheet.
- Place chocolate in new pan and melt over double boiler. When almost melted, remove from heat and stir until melted.
- Brush one cookie with chocolate and cover with another.
- Refrigerate til set.

- Preheat the oven to 350 degrees.
- Lightly grease two baking trays or line with Teflon sheets.
- Combine the flour, salt and nuts in a bowl.
- Place the brown sugar, corn syrup and butter in a heavy-based saucepan, and bring to a boil.
- Remove from heat and stir in the flour mixture, along with the lemon zest and juice.
- Drop 1/2 teaspoonfuls of the batter, about 2 inches apart, onto the baking trays.
- Bake 1 tray at a time for about 8 to 10 minutes, just until they are lightly browned at the edges.
- Allow to cool slightly before transferring to a rack.
- Store in an airtight container.
LOVELY LIME COOKIES
I found this recipe in a newspaper. It makes very soft, lime flavored cookies. You might want to taste the lime juice you're using - I think the strength can vary, because, once when I made it, I couldn't taste the lime at all! The other times it has come through just fine. You can also substitute lemon juice. Note: I just made these cookies again and ended up with wonderfully soft, fluffy sugar cookies (read: no lime flavor at all). I'm hereby considering this recipe under construction, and may edit it to reflect some tinkering (with extracts or concentrates).

- Preheat oven to 350°F and generously grease 2 large baking sheets.
- Cook brown sugar, butter, and corn syrup in a 1-quart saucepan over moderate heat, stirring occasionally, until smooth. Remove from heat, then stir in flour and almonds.
- Spoon scant tablespoons of batter 6 inches apart on baking sheets (4 cookies per sheet) and bake 1 sheet at a time in middle of oven until golden brown and bubbling, 6 to 8 minutes. (Cookies will spread to 5 to 6 inches.) Cool cookies on sheet 1 to 2 minutes. Quickly but carefully remove cookies from sheet with a metal spatula and transfer to a rack to cool completely. (If they become too brittle to transfer, return baking sheet to oven for about 1 minute to allow cookies to soften.)

- Blend together oats and butter.
- Stir the remaining ingredients together and add.
- You might need to add a little more flour or a tsp of water.
- Drop cookies on sheet and bake at 180°C (350°F) for 10 to 15 minutes.
- Note: You can also use only 50 grams butter and use cold brewed coffee to give the cookies a different taste. I also have made a chocolate version by folding in 1/2 chocolate chips.

- In a heavy bottom medium saucepan add the butter, granulated sugar, brown sugar, corn syrup and salt. Heat on medium low until the butter is melted and the mixture is smooth, stirring occasionally. Remove from the heat and stir in the flour and almonds. The dough will be sticky.
- Scoop level teaspoons and drop on a parchment lined baking sheet. Make sure the cookie dough is about 5 inches apart, as they spread a lot. I recommend starting with 2 or 3 cookies per sheet to see how much they spread and how long it takes to bake them.
- Bake for 5-8 minutes or until they are browned around the edges and just starting to brown in the middle of the cookie. Cool on the baking sheet for 5 minutes or until set. Move the cookies to a wire rack and cool completely.
