NICOISE SALAD



Nicoise Salad image

The traditional Nicoise salad uses broad beans which are difficult to find when out of season. So, take it with a grain of salt, this my my version of Nicoise salad you can have all year round.

1/2 head roman lettuce
6 oz cherry tomatoes
1/2 cucumber
2 oz green beans (boiled for 5 minutes)
1/2 red onion (thin cut rings)
5 oz tuna canned in olive oil, drained (best if stored in glass can)
2 boiled eggs
6 filets anchovies stored in salt
10 nicoise olives
1/2 tsp original English mustard
3 tbsp olive oil (extra virgin)
salt
lemon juice (from 1/2 lemon)

Steps:

  • Wash the lettuce and cut the leaves for the salad
  • Cook the eggs to hard boiled, then cut them in small slices. You can use the Colour Changing Egg Timer & the Egg Cutter from my Amazon shop section: Other items
  • Boil the green beans in salted water for 5 minutes only so they remain crunchy
  • Drain the tuna from its oil and wash the anchovy filets if they are preserved in salt
  • Cut the onion in thin rings
  • Put all the ingredients together
  • To prepare the vinaigrette mix the olive oil, the juice of half lemon, salt and 1/2 of tsp of English mustard. If you have an empty jar of English mustard use that to mix the dressing with the mustard left in the can
  • Season and serve

1 pound red fingerling or other small potatoes
Coarse salt
Garlic Vinaigrette
Freshly ground pepper
4 large eggs
1/2 pound green beans, halved crosswise
1 head Boston lettuce
1 red or green bell pepper, cut into 1/4-inch-thick rings
1/2 pound cherry tomatoes, halved
1/2 English cucumber, peeled and sliced
1/2 fennel bulb, trimmed, halved lengthwise, and very thinly sliced
2 cans (6 ounces each) tuna, preferably Italian oil-packed, flaked
3/4 cup Nicoise or oil-cured black olives
1 scallion, chopped
2 tablespoons coarsely chopped fresh flat-leaf parsley
1 tablespoon drained capers (optional)

Steps:

  • Bring the potatoes to a boil in a largesaucepan of water. Add salt; reduce heat,and simmer until tender, 10 to 15 minutes. Drain; let cool slightly.
  • Cut the potatoes into bite-size pieces;peelany loose skins. Dress with enoughvinaigrette to coat lightly (reserve remainder). Season with salt and pepper.Set potatoes aside.
  • Prepare an ice-water bath; set aside.Cover eggs with water in a small saucepan; bring to a full boil. After 1 minute,cover and turn off heat. Let stand 6 minutes. Rinse; transfer to ice-water bath.
  • Prepare another ice-water bath; setaside. Bring a medium saucepan of waterto a boil; add salt. Blanch green beansuntil crisp-tender, 1 to 2 minutes. Drain;rinse with cold water. Let stand in ice-water bath until cool. Drain; pat dry.
  • Peel the eggs, and halve lengthwise.Arrange lettuce, then potatoes, greenbeans, bell pepper, tomatoes, cucumber,fennel, tuna, eggs, and olives on a platter.
  • Sprinkle with scallion and parsley,and with capers if desired. Drizzle withvinaigrette, and serve with remainder.

This salad is healthy and light, but has plenty of soul and has become my new favorite salad. The Niçoise Salad has truly become a regular in this household!

1/4 cup white wine vinegar
1 small shallot (minced (about 2 tablespoons))
2 teaspoons dijon mustard
1 tablespoon chopped fresh thyme
1/4 teaspoon pepper
3/4 cup extra-virgin olive oil
1 pound red-skinned potatoes (sliced 1/3 inch thick)
8 cherry tomatoes (halved or quartered)
4 large eggs (boiled and quartered)
6-7 radishes (trimmed and quartered)
10-12 ounces haricots verts or thin green beans (trimmed)
1 head Boston lettuce (leaves separated (romaine leaves would work, I used smallish gems))
2 5 ounce cans tuna, drained
1/2 cup niçoise olives (halved (Kalamata olives will also work well))

Steps:

  • Put potatoes in a medium saucepan; cover with cold water and season with salt. Bring to a simmer over medium-high heat and cook until fork-tender, about 5 minutes. Drain and transfer to a medium bowl; drizzle with 1/4 cup vinaigrette and let cool.
  • While potatoes are cooking, make the vinaigrette by whisking all vinaigrette ingredients together in a small jar or bowl. I find it easiest to mix up dressings in a small jar and then shake the jar to combine all ingredients. Also, cut tomatoes and toss in a small bowl with salt and pepper. Chop eggs and radishes. Set all aside.
  • Bring a separate saucepan of salted water to a boil. Fill a bowl with salted ice water. Add the green beans to the boiling water; cook until crisp-tender and bright green, 3 minutes. Drain and immediately plunge into the ice water to cool; drain and pat dry.
  • Divide lettuce among 4 plates. Arrange the potatoes, tomatoes, eggs, radishes, green beans and tuna on top. Drizzle with dressing and top with the olives.

For the Salad:
1/2 pound white potatoes (scrubbed)
1/4 pound fresh green beans (trimmed)
4 cups salad greens (either baby greens or larger greens torn into bite-sized pieces)
1 large (12-oz.) can tuna (drained)
4 hard boiled eggs (peeled and quartered)
2/3 cup brine-cured pitted black olives (e.g. Kalamata)
10 to 12 cherry tomatoes, cut in half
For the Dressing:
1/2 cup extra virgin olive oil
1/4 cup aged red wine vinegar
1 tablespoon Dijon mustard
2 cloves fresh garlic (peeled)
3-4 anchovy fillets
Kosher salt to taste
Freshly ground pepper to taste

Steps:

  • Gather the ingredients.
  • Bring a pot of salted water to boil. Boil the potatoes for about 4 minutes.
  • Remove with a slotted spoon, drain, then slice them in half. (Leave the water in the pot, though; you'll use it for blanching the green beans in a few moments.)
  • Heat a skillet over medium-high heat, with a bit of olive oil until it's quite hot, then place the sliced potatoes in the pan, cut-side down.
  • Sear for a minute or two until the potatoes are lightly browned, then remove them from the pan and transfer to a bowl. Toss with kosher salt and set aside.
  • Bring the water back to a boil, and add the green beans. Blanch for 2 minutes.
  • Remove with tongs to a bowl of ice water to shock them and keep them from cooking further. Drain and dry them with paper towels and set aside.
  • Combine the oil, vinegar, mustard, garlic, and anchovies in a blender or food processor. Process until smooth. Season to taste with kosher salt and freshly ground black pepper. (The anchovies are salty, so you might not need much additional salt.)
  • Place the salad greens in a bowl. Drizzle 2 tablespoons of the dressing and toss to coat. Arrange the greens on 4 serving plates or 1 large platter. Distribute the potato halves equally, with the browned sides facing up.
  • Toss the green beans, olives, and tomatoes with enough additional dressing to lightly coat them, and arrange them on the salad.
  • Divide the tuna and place it in the center of plates. Arrange the hard-boiled egg quarters, then garnish with the fresh parsley and serve. Note: Instead of the vinaigrette, you could serve a Niçoise salad with garlic aioli .

3 pouches (2-1/2 ounces each) light tuna in water

Steps:

  • Place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 8-10 minutes, adding green beans during the last 3 minutes of cooking. Drain potatoes and beans; immediately drop into ice water. Drain and pat dry., In a small bowl, combine salad dressing, lemon zest and pepper. Divide romaine among 4 plates; arrange potatoes, green beans, eggs, tuna and tomatoes over romaine. Serve with dressing mixture.

½ pound new potatoes, quartered
¼ cup chopped fresh parsley
¼ cup pitted nicoise olives
½ onion, thinly sliced
1 (5 ounce) can tuna
⅓ pound fresh green beans - rinsed, trimmed and blanched
½ pound mixed salad greens
1 cup lemon vinaigrette
3 hard-cooked eggs, quartered
3 roma (plum) tomatoes, thinly sliced
1 tablespoon capers
4 anchovy filets

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes, and cook until tender but still firm, about 15 minutes. Drain and cool.
  • In a large bowl, combine the potatoes, parsley, olives, onion, tuna and green beans. Refrigerate for 2 to 4 hours.
  • In large bowl, toss greens with vinaigrette and top with chilled potato mixture. Garnish with eggs, tomatoes, capers and anchovies.

3 tablespoons balsamic vinegar
1/8 cup apple juice
2 teaspoons Dijon mustard
1/4 teaspoon salt
Dash pepper
6 tablespoons extra-virgin olive oil
4 red potatoes, scrubbed well, cut into 1-inch wedges, boiled until tender and allowed to cool
1 pound haricots verts, trimmed, steamed until just tender but still bright green and allowed to cool
1/4 cup minced fresh parsley leaves (about 1-ounce)
2 (6-ounce) cans tuna, drained
Salt and freshly ground black pepper
6 hard boiled eggs (peeled while warm) and allowed to cool, cut into 4 wedges lengthwise

Steps:

  • Prepare the salad dressing just before use. Add vinegar, apple juice, Dijon mustard, salt, and pepper 1 at a time through the feed opening of a running blender. Then, leaving the blender running, add the olive oil in a slow steady stream.
  • Cut the potatoes into 1/4-inch thick slices and add to a mixing bowl. Slice the green beans into 3/4 to 1-inch lengths and add to the potatoes. Fold in parsley and tuna. Toss gently with enough dressing to coat and top with wedges of hard boiled egg.

3 large eggs
kosher salt, to taste
12 oz new potato
6 oz green beans
½ head boston lettuce, leaves separated
⅓ english cucumber, thinly sliced
½ cup kalamata olive, pitted
1 can olive oil-packed tuna, flaked
½ cup radish, trimmed and halved
2 cloves garlic, minced
2 teaspoons dijon mustard
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
2 teaspoons champagne vinegar
3 tablespoons olive oil

Steps:

  • Make the salad: Prepare an ice bath by filling a large bowl with ice and cold water. Set aside.
  • Fill a small pot with water and bring to a boil over high heat. Reduce the heat to low and carefully submerge the eggs in the water. Cook for 7 minutes, then transfer to the ice bath. Let the eggs cool for 5 minutes, then peel. Slice the eggs in half lengthwise.
  • Add the potatoes to a medium pot and cover with cold water. Add a large pinch of salt. Bring the water to a boil and cook until the potatoes are fork-tender, about 15 minutes. Drain the potatoes in a colander. Cut the potatoes in half.
  • Fill a medium pot with water and a large pinch of salt. Once the water begins to boil, add the green beans and cook until bright green and just fork-tender, about 3 minutes. Drain the beans in a colander and rinse with cold water.
  • Make the vinaigrette: In a small bowl or glass measuring cup, whisk together the garlic, mustard, salt, pepper, and vinegar. Add the olive oil and whisk until smooth.
  • Lay the Boston lettuce leaves on a serving platter. Arrange the potatoes, cucumber, eggs, olives, tuna, green beans, and radishes on top.
  • Drizzle the vinaigrette over the salad and serve immediately.

There are a lot of steps in this salad, but it is worth every one, in my book! This is not a side, it's a main dish for 2. Salmon is subbed for traditional tuna here. Green beans, potatoes, and some normal salad items are all combined with the salmon to make a beautiful, satisfying plate. Bonus, there is no added sugar in the light and lovely vinaigrette.

1 tablespoon sherry vinegar
½ clove garlic, minced
½ teaspoon Dijon mustard
1 tablespoon freshly squeezed lemon juice
3 tablespoons extra-virgin olive oil
salt and freshly ground black pepper to taste
½ pound small red potatoes, cubed
½ (10 ounce) bag haricot verts or tender young green beans
½ medium green bell pepper, cut into thin strips
7 leaves Bibb lettuce
8 pitted Kalamata olives, halved lengthwise
1 cup cherry tomatoes, halved lengthwise
1 tablespoon extra-virgin olive oil
salt to taste
5 ounces cooked salmon, flaked
1 large hard-boiled egg

Steps:

  • Combine sherry vinegar, minced garlic, Dijon mustard, and lemon juice in a small bowl; stir briskly until vinaigrette is well combined.
  • Add olive oil, 1 tablespoon at a time, whisking briskly after each addition. Season with salt and pepper and whisk until well combined; set aside.
  • Bring a pan of lightly salted water to a boil over medium-high heat. Add potatoes to boiling water and cook for 10 minutes, making sure the water level is above the potatoes. Add green beans and boil until beans are bright-green and tender crisp, 5 to 8 minutes.
  • Sieve out green beans and place in an ice bath to stop the cooking process. Drain and place in a large bowl.
  • Test potatoes for doneness by slightly piercing a potato with a sharp knife. If done, the knife should slip in with only a slight resistance. Drain potatoes, cool slightly, slice in half, and add to the bowl. Add bell pepper and drizzle vinaigrette over salad. Toss until well combined.
  • Line a serving plate with lettuce leaves and arrange potatoes, green beans, and pepper strips on top. Evenly place olive halves around the salad.
  • Lightly toss the sliced cherry tomatoes with olive oil and salt, and place around the plate.
  • Place salmon flakes on top of salad. Slice egg in half, and place one half of the egg on each side of the plate. Serve.

The idea behind this beautiful and delicious lunch or dinner salad is to use up all the remnants left in your refrigerator from the weekend's meals. Hard-boiled eggs, along with anchovies and olives, bring the salad closer to its origin in the south of France.

2 tablespoons minced shallot
1 tablespoon red-wine vinegar
5 tablespoons plus 2 teaspoons extra-virgin olive oil, divided
8 ounces green beans, steamed until tender, cooled under cold water, and patted dry
Coarse salt and freshly ground pepper
1 pound tiny new potatoes, boiled until tender
2 tablespoons fresh chopped dill
1 1/2 cups fresh or cooked corn kernels (from 2 ears)
1 1/2 ounces Parmesan cheese, shaved (about 1/2 cup)
1/2 cup firmly packed fresh basil leaves, plus more for serving
1 pound tomatoes (about 2 1/2 medium), cut into 1-inch wedges
1 large endive (about 6 ounces), cut into thin strips lengthwise
Leftover Cedar-Planked Salmon, cold or room temperature, flaked into large pieces
Leftover Grilled Herbed Shrimp, cold or room temperature
4 links fresh chorizo or other sausage, halved lengthwise and grilled
Tender lettuce leaves
4 large eggs, hard-boiled, halved, and salted
Anchovy fillets packed in olive oil, for serving

Steps:

  • Combine shallot, vinegar, and 2 teaspoons oil in a bowl. Add green beans and toss well. Season with salt and pepper; set aside. Combine potatoes, 1 tablespoon oil, and dill and toss well. Season with salt and pepper; set aside. Combine corn, 1 tablespoon oil, and cheese and toss well. Season with salt and pepper; set aside.
  • Bring a small pot of water to a boil. Add basil and cook 30 seconds. Transfer with a slotted spoon to a bowl of ice water to stop the cooking. Squeeze basil dry, then transfer to a small food processor or mortar and pestle. Add remaining 3 tablespoons oil and 1/2 teaspoon salt. Puree until smooth. Toss basil oil with tomatoes and season with salt and pepper; set aside.
  • Arrange endive, salmon, shrimp, sausage, lettuce, eggs, and basil leaves on a platter. Add dressed green beans, potatoes, corn, and tomatoes. Serve with anchovies and olives.

Make salade niçoise your go-to salad for summer. With crunchy lettuce, ripe tomatoes, potatoes, tuna and soft-boiled eggs, it's full of flavour and texture

8 new potatoes
50g green beans (or a small handful), trimmed and halved
3 eggs
2 Little Gem lettuces , quartered
50g pitted black olives
2 medium tomatoes (plum are good), quartered
145g can tuna in olive oil, drained, oil reserved (see below)
½ garlic clove
1 anchovy fillet (optional)
1 tbsp Dijion mustard
2 tbsp red wine vinegar
4 tbsp reserved olive oil from the tuna can (topped up, if needed)

Steps:

  • To make the dressing, mash the garlic and anchovy, if using, with a small pinch of salt on a board using the blade of a large knife, or in a pestle and mortar. Combine the paste with the mustard and vinegar, then slowly stir in the tuna oil. Set aside.
  • Tip the new potatoes into a large pan of cold salted water, ensuring they're well covered. Bring to the boil, then reduce the heat to a simmer. Add the beans and cook for 5 mins, then remove with a slotted spoon and immediately plunge into a bowl of iced water to cool. Cook the potatoes for another 5 mins until tender, then drain and leave to cool. When cool enough to handle, halve or quarter them, and toss in a large bowl with 1 tbsp of the dressing. Leave to cool completely.
  • Meanwhile, cook the eggs in a second pan of simmering water for 7½ mins, then transfer to a bowl of iced water to cool. Drain the beans and eggs, then peel and halve the eggs.
  • Tip the lettuce quarters, cooked beans and olives into the bowl with the potatoes. Add most of the remaining dressing and gently toss. Divide the salad between two bowls, and top with the tomatoes and eggs. Flake over the tuna, then drizzle with the rest of the dressing and season.

1 pound small red potatoes
1 tablespoon Dijon mustard
2 tablespoons fresh lemon juice
2 small shallots, peeled and minced
9 tablespoons extra-virgin olive oil
1 1/4 teaspoons kosher salt, plus more to taste
Freshly ground pepper to taste
3/4 pound fresh green beans, trimmed and halved
2 scallions, thinly sliced
2 teaspoons chopped fresh thyme
2 small cans solid white water-packed tuna, drained
4 teaspoons chopped Italian parsley
4 medium-size ripe tomatoes, cored and cut into wedges
1 head Boston lettuce, cored, leaves torn into bite-size pieces
4 hard-cooked eggs, peeled and quartered
8 anchovy fillets
32 nicoise olives

Steps:

  • Steam the potatoes until tender, about 30 minutes. Cool. In a bowl, whisk together the mustard, lemon juice and shallots. Whisking constantly, add the olive oil in a slow, steady stream. Season with the 3/4 teaspoon of salt and the pepper. Set aside.
  • Blanch the green beans in salted boiling water until crisp-tender, about 8 minutes. Drain and run under cold water. Drain. Place in a bowl and toss with 2 tablespoons of the dressing and salt and pepper to taste.
  • Thinly slice the potatoes and put in a bowl. Add the scallions and thyme. Toss with 2 tablespoons of dressing, 1/2 teaspoon of salt and pepper. Place the tuna in a bowl and toss with 2 tablespoons of dressing, parsley and salt and pepper to taste.
  • Toss the tomatoes with 4 teaspoons of dressing and salt and pepper. Toss lettuce with 1 tablespoon dressing and salt and pepper.
  • Divide the lettuce among 4 large plates, mounding it in the center. Surround with mounds of the potato salad, tomatoes, tuna salad, green beans and egg. Coil 2 anchovies over the eggs on each plate. Scatter the olives over the tomatoes and the eggs. Serve immediately.
