I'm in heaven when I have this. It's so rich & creamy. The success to this recipe relies on the sun-dried tomatoes. I find Unico's julienned cut sun-dried tomatoes packed in oil are the best. Make sure to pick a jar that the sun-dried tomatoes are still bright red, not brown.

1 tablespoon butter
1 garlic clove, finely chopped
1/2 cup sun-dried tomato packed in oil, julienned
1 1/2 cups whipping cream
1/2 cup brandy
salt & freshly ground black pepper
3 tablespoons butter, chilled and chopped into large pieces
basil, julienned
1 lb bow tie pasta, cooked & drained

Steps:

  • In a non-stick pan, melt 1 tbsp of butter over medium heat.
  • Saute the garlic.
  • Stir in sun-dried tomatoes, whipping cream & brandy.
  • Simmer over medium heat until reduced by half.
  • Season with salt and pepper.
  • Just prior to serving, whisk in butter.
  • Stir in the cooked bow tie pasta.
  • Toss with fresh basil.
  • Serve.

1 cup heavy cream
3 tablespoons butter
½ cup shredded mozzarella cheese
2 tablespoons grated Parmesan cheese
¼ cup chopped sun-dried tomatoes
salt and pepper to taste
1 tablespoon pine nuts

Steps:

  • Heat the cream and butter in a saucepan over medium heat until almost boiling, but do not boil. Add mozzarella and Parmesan cheeses, and stir until melted. Stir in the sun-dried tomatoes, and season with salt and pepper. Remove from heat and serve over pasta with a sprinkling of pine nuts.

1 pound bulk Italian sausage
1/2 pound ground beef
1 medium red onion, chopped
1 medium green pepper, chopped
2 celery ribs, chopped
3 garlic cloves, minced
3 cans (14-1/2 ounces each) diced tomatoes
1 can (6 ounces) Italian tomato paste
1 jar (7-1/2 ounces) marinated quartered artichoke hearts, drained and chopped
1 cup sun-dried tomatoes (not packed in oil), chopped
3 tablespoons minced fresh parsley
1-1/2 teaspoons minced fresh rosemary or 1/2 teaspoon dried rosemary, crushed
1 bay leaf
1 teaspoon pepper
1/2 teaspoon salt

Steps:

  • In a large skillet, cook the sausage, beef, onion, green pepper, celery and garlic over medium heat until meat is no longer pink; drain. Transfer to a 4-qt. slow cooker., Stir in the remaining ingredients. Cover and cook on low for 8-10 hours. Discard bay leaf.

3 tablespoons olive oil
3 pounds plum tomatoes, peeled, seeded and chopped, or 1 (28 ounce) can tomatoes
3 ounces sun-dried tomatoes (not packed in oil)
3 cloves garlic, minced
Cheesecloth bag containing 1/2 teaspoon dried thyme, 6 parsley sprigs, and 1 bay leaf
Salt and freshly ground pepper

Steps:

  • In a saucepan cook the onion, celery and carrots in the oil over moderate heat until softened.Add the fresh and dried tomatoes, garlic, and cheesecloth bag and bring to boil. Simmer, covered, stirring occasionally, for 30 minutes. Discard the cheesecloth bag. In a food processor or blender puree the mixture in batches. Season with salt and pepper.

1 tablespoon olive oil
4 skinless boneless chicken breast halves, cut crosswise into 1/2-inch strips
All purpose flour
2 shallots, minced (about 1/4 cup)
2/3 cup whipping cream
1/2 cup dry white wine
1/3 cup (generous) chopped drained oil-packed sun-dried tomatoes
3 tablespoons chopped fresh basil or 2 teaspoons dried

Steps:

  • Melt butter with olive oil in heavy large skillet over medium-high heat. Season chicken with salt and pepper. Dust chicken with flour; shake off excess. Add chicken to skillet and sauté until light brown and just cooked through, about 3 minutes. Using slotted spoon, transfer chicken to plate.
  • Add minced shallots to skillet; sauté 1 minute. Add whipping cream, white wine, chopped sun-dried tomatoes and basil. Bring to boil; cook until sauce thickens, stirring occasionally, about 4 minutes. Return chicken to pan; cook until just heated through, about 2 minutes. Season to taste with salt and pepper and serve.

1 cup sun-dried tomatoes, with their oil
1 small clove garlic or 1/2 large clove, or to taste
Salt to taste
4 chopped basil leaves, optional
1 tablespoon lemon juice, optional
3 tablespoons pine nuts
Additional extra virgin olive oil if necessary

Steps:

  • Place the tomatoes and a tablespoon or so of their oil in a small food processor along with the garlic and a good pinch of salt. Process until fairly smooth, stopping the machine and stirring down the mixture with a rubber spatula as necessary.
  • Add the basil and lemon juice if you like; pulse the machine a few times to blend. Remove the paste from the machine, and stir in the nuts and just enough additional oil to make the mixture silky rather than oily. Taste and adjust seasoning.

Number Of Ingredients 8

1/2 cup drained oil-packed sun-dried tomatoes
1 cup dry white wine
1/4 cup white wine vinegar
10 black peppercorns
1 bay leaf
1 cup whipping cream
1/2 cup chicken stock or canned low-salt chicken broth
1 tablespoon minced fresh thyme or 1 teaspoon dried

Steps:

  • Place sun-dried tomatoes in food processor. Boil white wine, white wine vinegar, black peppercorns and bay leaf in heavy small saucepan until liquid is reduced to 3 tablespoons, about 8 minutes. Strain liquid into tomatoes in processor and puree until smooth. Return tomato mixture to same saucepan. Add whipping cream, chicken stock and thyme. Simmer until flavors blend, about 3 minutes. Season to taste with salt.
