Steps:
- Place ingredients in the order given in bread machine bucket.
- Process on basic/white cycle, medium color crust setting.
- I use warm (tepid) water and the rapid (3 hr) setting.
- You can use 1 1/2 teaspoons yeast, but I've found that 2 teaspoons produces a fluffier loaf.

Steps:
- Add all ingredients to bread machine according to your manufacturer's directions.
- Set for dough cycle.
- When cycle is complete, remove dough and shape as desired.
- Place on lightly greased baking sheet and cover with plastic wrap.
- Let rise until doubled (this step is important - don't rush it).
- Bake at 375° for 12 to 15 minutes or until golden brown.
- To keep them soft, brush with melted butter immediately after removing from oven.
EASY BREAD MACHINE DINNER ROLLS

Steps:
- Place water, butter, egg, 3 cups flour blend, sugar, salt and yeast in bread machine pan in order recommended by the manufacturer. Select Dough/Manual cycle. During initial mixing cycle, open lid and scrape down sides of bread pan as necessary. As dough mixes, add just enough additional flour blend to create a soft dough. When Dough/Manual cycle is complete, remove dough from bread machine pan. Place on lightly floured surface.
- Coat 13 x 9-inch baking pan with cooking spray. Pat dough into rectangle. Cut with pizza cutter or serrated knife into 15 equal pieces. Shape each into a ball. Place evenly in prepared pan. Cover and let rise in warm place until doubled, about 35 to 45 minutes.
- Heat oven to 375 degrees F. Uncover rolls. Bake 15 minutes or until golden brown. Serve warm or cool completely on wire rack.

SOFT LIGHT WHOLE WHEAT DINNER ROLLS

Steps:
- Place all dough ingredients in the bread machine pan in order indicated with your owner's manual.
- Use the DOUGH setting.
- After the cycle is complete, punch down dough and remove from pan.
- On a floured cutting board, shape into rolls and place on two parchment-lined baking pans.
- Let rise in a warm place for 30 minutes or until double in size.
- Preheat oven to 400 degrees.
- Topping: Whisk the remaining egg (and a little bit of water about 1 tablespoon) in a small bowl, and brush the tops of the rolls with it; sprinkle with wheat germ.
- Bake the rolls until light brown on top, approximately 20 minutes.
- Prep time does not include preparing the dough in the ABM.

LIGHT AND EASY DINNER ROLLS
This bread dough requires no kneading and can be made up to 4 days ahead. For a soft tender crust, brush with butter after they come from the oven. They're delicious!

Steps:
- Combine the warm water and yeast in a large bowl and let it stand for about 10 minutes.
- Stir in oil, sugar, eggs and salt.
- Beat in flour, 1 cup at a time, until dough is too stiff to mix ( some flour may not be needed).
- Cover and refrigerate 2 hours or up to 4 days.
- Grease a 13X9-inch baking pan. Turn the chilled dough out onto a lightly floured surface. Divide dough into 24 equal-size pieces. Roll each piece into a ball; place balls in the prepared pan.
- Cover and let dough balls rise for 1 - 1 1/2 hours.
- Preheat oven to 350º F.
- Bake until rolls are golden brown, 20 to 25 minutes.
- Break rolls apart to serve.

LIGHT WHEAT BREAD (BREAD MACHINE)
This bread was tested in Taste of Home's test kitchen so you know it's good! It has a slightly sweet taste. It is not a dense bread but very light and moist. I added 1 tsp. of vital gluten and cut the yeast down to 2 tsps. It's a high riser! I also did this on my dough cycle and then baked it in my regular oven. I found that I had to add a little more flour as it started mixing.

ITALIAN DINNER ROLLS (ABM)
This is one of my BEST EVER recipes. These rolls are much anticipated at potlucks and birthday dinners. Cook time includes bread machine and rising time.

Steps:
- Heat milk, water, and 2 Tbs. butter to 120 degrees(F).
- Place in bread machine with the egg. (This order works for my machine. Yours may be different.).
- Add the flour, 1/2 cup Parmesan, sugar, garlic salt, Italian seasoning, and yeast.
- Place on dough setting for a 2 pound loaf.
- Preheat oven to 325°F and use a lower rack setting.
- Cut dough into 24 pieces and roll into misshapen balls. (This is for more character and variety of texture!) :).
- Melt your butter but make sure it is not too hot.
- Dip rolls into butter and then into Parmesan.
- Place in a 13x9" pan 6 rows of 4 rolls each. Let rise.
- Bake on a low rack for 25-35 minutes or until as brown as you like them.
