Lighter Fettuccine Alfredo with Bacon image

1 9-ounce package refrigerated fresh fettuccine
4 slices bacon
2 garlic cloves
1 Tablespoon all-purpose flour
1 cup fat-free milk, or any milk
2/3 cup grated Parmesan
1/2 teaspoon kosher salt
2 Tablespoons chopped fresh parsley
Freshly ground black pepper

Steps:

  • Set a medium pot of water to boil. Add pasta and cook according to package directions. Drain pasta, reserving 1/4 cup cooking liquid.
  • Set a large nonstick skillet to medium-high heat. Add bacon and cook 'til crisp, about 5 minutes. Remove bacon to a paper towel lined plate, reserving drippings. Add garlic to drippings and sauté 1 minute. Whisk in flour; cook 30 seconds, stirring constantly. Gradually whisk in milk, stirring constantly until bubbly and thickened, 3-4 minutes. Reduce heat to low. Add grated Parmesan, stirring until melted. Whisk in salt and reserved 1/4 cup cooking liquid.
  • Add hot pasta to skillet and toss to combine. Serve and sprinkle with bacon, parsley and black pepper.

1 package (12 ounces) fettuccine
8 bacon strips, cut into 1-inch pieces
1 pound boneless skinless chicken breasts, cubed
2 cups sliced fresh mushrooms
6 green onions, thinly sliced
1 garlic clove, minced
1-1/2 cups half-and-half cream
1/2 cup shredded Parmesan cheese
1 teaspoon paprika
1/2 teaspoon coarsely ground pepper
Additional shredded Parmesan cheese

Steps:

  • Cook fettuccine according to package directions. Meanwhile, in a large skillet, cook bacon until crisp. Remove to paper towels to drain, reserving 1-2 tablespoons drippings. , Saute chicken in drippings until no longer pink. Add mushrooms and green onions; cook until mushrooms are tender. Add garlic; cook 1 minute longer. Stir in the cream, cheese, paprika and pepper. Reduce heat; simmer, uncovered, for 5-10 minutes. Stir in reserved bacon. , Drain fettuccine; place in a serving bowl. Add chicken mixture; toss to coat. Garnish with additional cheese.

12 ounces dry fettuccine pasta
1 cup nonfat milk
½ cup reduced fat margarine
8 ounces Neufchatel cheese, cubed
¼ teaspoon garlic powder
½ teaspoon minced garlic
¼ teaspoon onion salt
1 cup grated Parmesan cheese

Steps:

  • In a large pot of boiling salted water cook fettuccini until al dente. Drain.
  • Combine milk, cubed Neufchatel cheese, butter or margarine, garlic powder, onion powder, minced garlic, and salt. Stir until smooth. Stir in grated Parmesan cheese and cook 2 to 3 minutes, or until blended.
  • Toss pasta with Alfredo sauce and serve warm.
