HEALTHY GRANOLA

Healthy Granola image

This delicious healthy granola recipe is naturally sweetened with maple syrup (or honey). It's made with oats, coconut oil and your favorite nuts and fruit. Make it your own! Recipe yields about 8 cups granola, enough for about 16 half-cup servings.

Provided by Cookie and Kate

Categories     Breakfast

Time 26m

Number Of Ingredients 9

4 cups old-fashioned rolled oats (use certified gluten-free oats for gluten-free granola)
1 1/2 cup raw nuts and/or seeds (I used 1 cup pecans and 1/2 cup pepitas)
1 teaspoon fine-grain sea salt (if you're using standard table salt, scale back to 3/4 teaspoon)
1/2 teaspoon ground cinnamon
1/2 cup melted coconut oil or olive oil
1/2 cup maple syrup or honey
1 teaspoon vanilla extract
2/3 cup dried fruit, chopped if large (I used dried cranberries)
Totally optional additional mix-ins: 1/2 cup chocolate chips or coconut flakes*

Steps:

  • Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
  • In a large mixing bowl, combine the oats, nuts and/or seeds, salt and cinnamon. Stir to blend.
  • Pour in the oil, maple syrup and/or honey and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.
  • Bake until lightly golden, about 21 to 24 minutes, stirring halfway (for extra-clumpy granola, press the stirred granola down with your spatula to create a more even layer). The granola will further crisp up as it cools.
  • Let the granola cool completely, undisturbed (at least 45 minutes). Top with the dried fruit (and optional chocolate chips, if using). Break the granola into pieces with your hands if you want to retain big chunks, or stir it around with a spoon if you don't want extra-clumpy granola.
  • Store the granola in an airtight container at room temperature for 1 to 2 weeks, or in a sealed freezer bag in the freezer for up to 3 months. The dried fruit can freeze solid, so let it warm to room temperature for 5 to 10 minutes before serving.

LIGHT GRANOLA

Light Granola image

I love, love, love this granola recipe! It's very healthful but, even better, it's really good. I like to eat it for a snack. I also like to eat it just like breakfast cereal. It's one of my go-to recipes and I fix it all of the time.

Time 33m

Yield 4 serving(s)

Number Of Ingredients 8

2 cups old fashioned oats
1 cup oat flour
1/2 teaspoon table salt
1 1/2 teaspoons cinnamon
1/3 cup brown sugar, splenda (or 2/3 cup Brown Sugar)
2 tablespoons sugar-free pancake syrup (or real maple syrup)
4 tablespoons butter, melted
2 cups mixed dried fruit, nuts, and seeds (apricots, cherries, raisins, blueberries, cranberries, gojis, walnuts, cashews, pistachios, sunflowe)

Steps:

  • TIP: I never buy oat flour. I just dump some oats into my food processor, whiz for about a minute, and then I have oat flour! It's so much cheaper this way and is so easy-to-do.
  • Preheat oven to 275°F In a large bowl, combine the oats, oat flour, salt, cinnamon, and Brown Sugar Splenda. Stir to combine. Add the syrup and stir well until the syrup is evenly distributed. Add the melted butter and again stir until all of the oats are evenly coated.
  • I like little, crunchy nuggets of granola when I eat it. To make the nuggets, grab a small handful of the granola mixture and firmly squeeze it in your fist to make glob. The mixture should hold together fairly well. Over a rimmed sheet pan, gently break the blob into smaller nuggets. Repeat with the remaining mixture. When finished, you should have a single layer of larger nuggets, smaller nuggets, and loose pieces of oatmeal. Don't move the granola once it is in the sheet pan or the nuggets will fall apart. Some people do not like larger nuggets of granola. If you prefer granola with loose pieces of oats, just dump the granola directly onto a sheet pan after you have mixed everything together. Just give the sheet pan a quick shake to evenly spread everything out.
  • Bake the granola for 20 minutes. Take the sheet pan out of the oven and very, very gently stir the granola. You, after all, do not want to break apart the nuggets you made earlier. Put the sheet pan back in the oven for another 8 minutes or so for a lightly toasted granola. If you like your granola really toasted, you can leave it in for several more minutes. Remove it from the oven and leave it in the sheet pan until it has cooled completely. The granola will get crispier as it cools. Toss with your desired mixed dried fruits, nuts, and seeds. Store in a sealed container.
  • After you make this the first time, make a note to yourself and decide if you would prefer the next batch to be sweeter or less sweet. I actually prefer my granola less sweet so I often add less Splenda than this recipe calls for. Others have preferred more sugar in theirs. You decide!

LIGHTER GRANOLA

Lighter Granola image

Apple juice from frozen concentrate is thicker than bottled apple juice, so it makes a better coating for the granola, helping it get crisp in the oven without requiring much oil.

Provided by Martha Stewart

Categories     Breakfast & Brunch Recipes

Time 1h35m

Yield Makes 5 cups

Number Of Ingredients 8

Nonstick cooking spray
3 cups rolled oats
3/4 cup toasted wheat germ
3/4 cup walnuts, coarsely chopped
1/2 cup frozen apple juice concentrate, thawed
1/4 cup packed light-brown sugar
2 tablespoon vegetable oil
1/2 cup dried cherries, raisins, or other dried fruit, halved or chopped if large (optional)

Steps:

  • Preheat oven to 300 degrees. Lightly coat a 9-by- 13-inch baking pan with cooking spray. Add oats, wheat germ, and walnuts, stirring to combine. Bake until oats are lightly toasted, about 25 minutes, stirring halfway through. Raise oven temperature to 350 degrees.
  • In a liquid measuring cup or small bowl, stir together apple juice, sugar, and oil. Pour over oat mixture; stir to combine. Return to oven, and bake until oats are crisp, about 30 minutes, stirring halfway through.
  • Cool in pan, about 25 minutes (toss with cherries, if desired). Transfer to a container with a tight-fitting lid.

  • Preheat oven to 325°F. Line a large baking sheet with parchment paper or greased foil. Set aside for later.
  • Add all ingredients to a large bowl. Using a rubber spatula, fold until clusters form and mixture is well mixed.
  • Pour onto the prepared baking sheet. Using the rubber spatula, gently nudge granola into an even layer, making sure to keep clusters intact. Create empty pockets at regular intervals to let air through to crisp up the granola.
  • Bake for 15-20 minutes—until granola clusters are just solid enough to flip. Using a heatproof spatula, gently flip granola, making sure to keep clusters intact. Bake for an additional 5-10 minutes, until edges are a deep golden brown and granola is just slightly soft. Mine took a total of 25 minutes. Granola will crisp up while cooling.
