MASHED POTATO STUFFED MEATLOAF
A meat-and-potato lovers' delight-tasty meatloaf stuffed with cheesy mashed potatoes!

Steps:
- Heat oven to 350°F. Grease 9x5-inch loaf pan with shortening. Make potatoes as directed on box except omit butter and use 1 cup water, 1/2 cup milk and Cheese Sauce pouch. Set aside.
- In large bowl, mix Meatloaf ingredients until well blended. Firmly press half of beef mixture into pan. Spoon potatoes over beef mixture to within 1/4 inch of edges of pan. Spoon remaining beef mixture over potatoes; press gently.
- Bake 60 to 65 minutes or until meat thermometer inserted in center of loaf reads 160°F. Let loaf stand 10 minutes; remove from pan.

- In a large saucepan, bring water, milk, butter and 1/2 teaspoon salt to a boil. Remove from the heat; stir in potato flakes. Let stand for 30 seconds. Fluff with a fork; set aside., In a large bowl, combine the egg, oats, green pepper, onion, pepper and remaining salt. Crumble beef over mixture and mix well., On a piece of waxed paper, pat beef mixture into a 12x8-in. rectangle. Spoon mashed potatoes lengthwise down the center third to within 1 in. of edges. Bring long sides over potatoes to meet in center; seal seam and edges., Place seam side up in a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 30 minutes; drain. Pour V8 juice over loaf. Top with ketchup. , Bake 18-22 minutes longer or until meat is no longer pink and a thermometer reads 160°. Let stand for 5 minutes before slicing.

- Preheat oven to 450 degrees. In a food processor, chop carrots, celery, onion, and panko with egg white until smooth, about 1 minute. Transfer to a large bowl; mix in beef, 1 teaspoon salt, and 1/8 teaspoon pepper.
- On a foil-lined baking sheet, form meat mixture into a 6-inch-long loaf; brush with half the barbecue sauce. Bake until an instant-read thermometer inserted in loaf registers 160 degrees, 25 to 30 minutes, brushing halfway through with remaining sauce.
- Meanwhile, in a medium saucepan, cover potatoes with cold salted water by 1 inch. Bring to a boil; reduce to a simmer, and cook until potatoes are easily pierced with a knife, 15 to 20 minutes. Drain; return to pan. Stir over medium until a starchy film forms on bottom of pan, about 1 minute. Remove from heat; mash with buttermilk until smooth. Season with salt and pepper.
- While potatoes cook, set a steamer basket in a saucepan filled with one inch water; bring to a gentle boil. Add green beans; cover, and cook until crisp-tender, 4 to 6 minutes. Transfer to a bowl; add oil, season with salt and pepper, and toss. Serve meatloaf with mashed potatoes and green beans.

- Coat a bread pan 5 by 9 inches with cooking spray and set it aside.
- In a food processor, briefly pulse 6 cups of cocoa-flavored crisp rice cereal.
- Tear or cut 2 rolls each of red and green fruit leather into small pieces.
- Chop 1/2 cup of dried pineapple into small chunks.
- Melt 2 tablespoons of butter in a large saucepan over low heat.
- Add 1 1/2 tablespoons of unsweetened cocoa powder and stir until mixed.
- Add a 10-ounce package of regular-size marshmallows and stir until they're completely melted.
- Add the cereal, fruit leather, and pineapple pieces to the marshmallow mixture.
- Stir quickly with a rubber spatula coated with cooking spray until well mixed.
- If the mixture gets too sticky to stir, place it in a large bowl, coat your hands with butter, and mix it with your hands.
- Press the mixture evenly into the prepared pan.
- Let the loaf cool (about 30 minutes), then remove it from the pan, slice with a serrated knife, and set a serving of 2 slices on each plate.
- Next to that scoop about a 1/2 cup of ice cream in a mound to look like mashed potatoes.
- Top it all with a drizzle of caramel sauce for gravy.
- Serve immediately.

- Preheat the oven to 350 degrees F (175 degrees C). Crumble 4 slices of bread.
- Mash up baked beans in a large bowl. Add ground beef, crumbled bread, 1 cup barbecue sauce, 1/4 cup mustard, 1/4 cup ketchup, and eggs; mix until well combined, adding more liquid or bread as needed to reach desired consistency.
- Reserve about 1 1/2 cups meat mixture. Press remaining mixture into the bottom and around the sides of two 9x5-inch loaf pans, leaving a large trough in the center. Fill troughs with mashed potatoes then cover with Cheddar cheese. Spread reserved meat mixture over top.

- Preheat the oven to 350 degrees F (175 degrees C). Coat a 9-inch square baking pan with cooking spray.
- Mix ground beef, onion, bread pieces, ketchup, egg, Worcestershire, salt, and pepper together in a large bowl until well combined. Spread in the prepared pan.

- Preheat oven to 450 degrees. Chop carrots, celery, onion and panko and egg white in a food processor until fully combined. Transfer to a bowl. Add beef, salt and pepper.
- Form mixture into a loaf on a baking sheet. Brush with barbecue sauce. Bake 25 to 30 minutes or until loaf is 160 degrees in the middle. Brush with sauce again halfway through.
- In a saucepan, boil potatoes until done, 15 to 20 minutes. Drain and return to pan. Mash with buttermilk until creamy. Season with salt and pepper to taste.
- Steam green beans until tender in a steamer on the stove or in a glass bowl in the microwave with a little water, covered loosely with parchment paper. About 4 to 6 minute Transfer to a bowl. Toss with 1 tbs olive oil and season with salt and pepper to taste.
- Serve meatloaf with mashed potatoes and green beans.
