SPEEDY MINI MEAT LOAVES
My passion has always been cooking and baking. Skip to the present.. now disabiled with a degenerative lung/heart disease and rhuematoid arthritis, cooking is not as easy as it once was and has to involve numerous rest periods during each stage of the cooking process. Since there is only my husband and I, I only cook a large family meal once a week when we all get together. This recipie is one of those "during the week meals". It is a combination of some that I've seen and some of my own additions. I must say that to be so easy, they are incrediabily good.

Steps:
- Heat oven to 359 degrees. Lightly greese 12-cup muffin pan.
- Combine beef, bread crumbs, eggs, milk, onion, garlic, salt, herbs de provance and pepper in large bowl. Divide mixture amoung muffin cups, pressing meat firmly into pan. Place pan in preheated oven and bake until loaves are firm when pressed lightly in center but not set, 20 to 25 minutes.
- While loaves bake, whisk together ketchup, worchestershire sauce and mustard in small bowl. Remove pan from oven. Brush tops of loaves with ketchup glaze and return pan to oven.
- Bake loaves until glaze has thickened and meat is completely cooked through, approximately 10 minutes longer. Run spatula around edges of muffin cups and pop out meat loaves
MINI SKILLET MEATLOAVES

- Mix the breadcrumbs, milk, parsley, egg, Worcestershire sauce, onion, chili powder and garlic in a large bowl. Add the meat, season with salt and pepper and mix with your hands until combined. Shape into six 3-to-4-inch oval loaves.
- Heat the vegetable oil in a large nonstick skillet over high heat. Add the loaves and brown about 3 minutes per side.
- Whisk the ketchup, sugar and vinegar in a bowl and brush a few tablespoonfuls over the meat. Add 1/2 cup water to the skillet, cover and simmer over low heat until cooked through, about 15 minutes.
- Transfer the loaves to a plate. Add the remaining ketchup mixture to the skillet and cook over high heat, stirring, until thick, 3 to 5 minutes. Serve 4 meatloaves with the hot glaze, reserving 2 for quesadillas.

MINI MEATLOAF MUFFINS
Easy Mini Meatloaf Muffins made with ground beef or ground turkey and topped with homemade bbq sauce. Easier and healthier than traditional meatloaf.

- Preheat oven to 350 degrees F.
- In a large mixing bowl (using your hands or a large spoon), combine ground beef, breadcrumbs, onion, 1 Tbsp barbecue sauce, mustard, chili powder, garlic powder, salt, pepper and egg.
- Divide the mixture among the 12 cups in a standard muffin tin, pressing them down to fill the cup. Bake for 15 minutes.
- In the meantime, in a small bowl mix together all of the ingredients for the sauce.
- Remove the meatloaf from oven and use a paper towel to soak up any grease on the meatloaf.
- Generously spoon sauce over each mini meat loaf. Return to oven for an additional 10-15 minutes or until the meat is cooked through.
- Serve with mashed potatoes and any extra sauce.

- In a bowl, combine bread, carrot, onion, celery, green pepper, salt, pepper and 1 tablespoon of chili sauce. Add beef and mix well. Shape into a 3-in. x 2-1/2-in. loaf; place in an ungreased shallow baking dish. Top with remaining chili sauce. Bake, uncovered, at 350° for 35-40 minutes.

- Heat oven to 200C/fan 180C/gas 6 and heat 1 tsp oil in a large frying pan. Add the onion and carrot and soften for 10 mins. Scrape into a large bowl, then add the breadcrumbs, 5 tbsp of the passata, the Worcestershire sauce, egg, mince, half the thyme and some seasoning. Mix well.
- Brush 4 large ramekins or 6 muffin tins with the remaining oil. Press the mince mixture into them, then pour the remaining passata over the top. Top each with a tomato half, sprinkled with a pinch of sugar, salt and pepper and the remaining thyme. Bake for 50 mins until cooked through, then serve with Chive mash (recipe below).

30-MINUTE MINI MEATLOAVES

- Heat oven to 450°F. In small bowl, stir ketchup and brown sugar until mixed; reserve 1/4 cup for topping. In large bowl, stir remaining ingredients and remaining ketchup mixture until well mixed.
- Spray 13x9-inch pan with cooking spray. Place meat mixture in pan; pat into 12x4-inch rectangle. Cut lengthwise down center and then crosswise into sixths to form 12 loaves. Separate loaves, using spatula, so no edges are touching. Brush loaves with reserved 1/4 cup ketchup mixture.
- Bake 18 to 20 minutes or until loaves are no longer pink in center and meat thermometer inserted in center of loaves reads 160°F.
