- In a small bowl, combine flour and salt; cut in shortening until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Cover and refrigerate for at least 30 minutes., Divide dough in half. Roll each half into a 6-in. circle. Transfer to two 4-1/2-in. tart pans; fit pastry into pans, trimming if necessary. Arrange pecans in shells., In another small bowl, whisk egg, brown sugar, corn syrup and vanilla. Pour over pecans. Place shells on a baking sheet. Bake at 375° for 35-40 minutes or until a knife inserted in the center comes out clean. Cool on a wire rack. Top with whipped cream if desired.

Steps:
- Preheat the oven to 350 degrees F.
- Mix together the granulated sugar, corn syrup, maple syrup, butter, brown sugar, whiskey, vanilla, salt and eggs in a bowl.
- Divide the chopped pecans among the pie shells. Pour the syrup mixture over the top and put a whole pecan on top of each. Bake until just set, 20 to 25 minutes. Let cool.
LI'L PECAN PIES
From Taste of Home magazine, makes 2 small tarts. My DH loves pecan pie, but I can't eat it--so this is a nice way to make him enough (but not too much!) pecan pie to satisfy his occasional hankering! It's pretty easy to make. You'll need a couple of 4-inch tart pans with removable bottoms. Times are estimates, and cook time includes time to chill dough. Time does not include cooling time after baking.

Steps:
- In a bowl, combine flour and salt. Cut shortening into flour mixture until it resembles coarse crumbs. Gradually add ice water, tossing with a fork after each addition, until it forms a ball. Cover and refrigerate at least 1/2 hour.
- Preheat oven to 375* F.
- Divide dough in half. Roll each into a 6-inch circle. Transfer pastry to each of two 4-inch tart pans. Fit pastry into pans, trimming with a sharp knife along top edge if needed.
- Arrange pecan halves in pastry shells.
- In a bowl, combine egg, corn syrup, brown sugar, and vanilla. Mix together well and carefully pour over the pecans.
- Place tarts on a baking sheet and bake at 375* F for 35-40 minutes, or until a knife tip inserted near center comes out clean.
- Cool on a wire rack. Remove from tins. Top with whipped cream, if desired, and serve.

- Set pie crust out to thaw the night before, in the refrigerator, or set out at room temperature, until thawed.
- Place pie crust on a baking sheet and set aside.
- Preheat oven to 375 degrees F.
- In a large mixing bowl, whisk together brown sugar, melted butter, corn syrup, salt and eggs.
- Coarsely chop 1 1/2 cups of pecan halves and fold into the pie filling.
- Pour filling into pie crust.
- Top with remaining pecan halves.
- Place pie in the center of a baking sheet and bake for 35-40 minutes or until the center is set.
- Let cool and store in the refrigerator before serving.
- Top with whipped cream, if desired.
