LIME SALSA CHICKEN
This flavourful, Mexican-inspired marinade is so easy to prepare, and results in juicy, lightly spiced chicken.

Steps:
- In a medium size bowl, mix together salsa, mustard and lime juice. Add skinless chicken thighs and turn to coat. Cover and marinate in the refrigerator for 30 minutes or overnight.
- Cook the brown rice in unsalted water according to package directions.
- Heat oil in a large non-stick skillet over medium heat. Remove chicken from marinade and add to skillet. Sauté until browned on both sides and juices run clear - about 9 minutes per side (end temperature of 165°F / 74°C).
- Remove chicken from skillet leaving sauce behind. Add rest of marinade and bring to boil. Whisk in yogurt and sugar until heated through.
- To serve place a piece of chicken alongside a scoop of brown rice. Top with sauce and garnish with a lime wedge.

Steps:
- Coat chicken breasts with egg, and dip in bread crumbs. Place on a wire rack, and allow to dry for about 10 minutes.
- Heat olive oil in a large skillet over medium heat. Place chicken into the skillet, and fry for 3 to 5 minutes on each side. Remove to a platter, and keep warm.
- Drain grease from the skillet, and squeeze in lime juice. Cook over low heat until it boils. Add butter, and stir until melted. Season with chives and dill. Spoon sauce over chicken, and serve immediately.

LIME CHICKEN WITH BLACKBERRY SALSA
I invented this recipe in a hurry one night and was over-the-top thrilled with how it came out! I've since served it to company; it always gets rave reviews. I love that it's so easy, and so healthy for my family, too. You can use grilled chicken instead of baked, if you like, and the spice level is up to you! - Finely grate zest from limes. Cut limes crosswise in half; squeeze juice from limes. Place peels, lime juice, oil, pepper flakes and salt in a large dish or bowl. Add chicken and turn to coat. Refrigerate 4 hours or overnight. , In a bowl, combine blackberries, tomatoes, green onions, cilantro and salt., Drain chicken, discarding marinade. Grill, covered, over medium heat or broil 4 in. from heat 4-5 minutes on each side or until a thermometer reads 165°. Serve with salsa.

- Combine cilantro, club soda, olive oil, honey, lime zest, lime juice, salt, and pepper in a blender. Process marinade until smooth, about 30 seconds.
- Place each chicken breast between plastic wrap and gently pound using a meat mallet to about 1/2-inch thickness. Place in a large bowl and pour marinade over chicken. Let sit for about 20 minutes.
- Meanwhile, preheat an outdoor grill for medium heat and lightly oil the grate.
- Toss tomatoes, strawberries, cilantro, green onions, jalapeno pepper, lime juice, salt, and pepper together in a bowl. Cover and refrigerate until chicken is ready to serve.
- Grill chicken on the preheated grill until no longer pink inside and juices run clear, 3 to 5 minutes per side. Spoon salsa over grilled chicken.

- Preheat broiler. Mix seasonings; sprinkle over chicken. Place chicken on a broiler pan. - Heat grill.
- In small bowl, combine the salsa,lime juice and chili powder.
- Mix well.
- Place chicken on grill, skin side down over low heat.
- Cook 45 to 60 minutes or until chicken is fork tender.
- Turn once and brush frequently with glaze during last 15 minutes of cooking.
- Bring any remaining glaze to boil.
- Serve as sauce with chicken.
