With this delicious and easy Mexican Pizza recipe with only 5 ingredients, you can have a cheesy homemade pizza on the table in no time!

1 lb pizza dough (or premade large pizza crust) 1 cup refried beans 4 ounces cooked chicken meat, chopped with no bones or skin 6-8 ounces Colby-Jack cheese blend, shredded (or more, if you wish!)1 Roma tomato, sliced (and each slice cut in half, if desired) Optional garnish: Cilantro leaves, with stems removed

Steps:

  • If using pizza dough, press pizza dough out on a greased 14″ round pizza pan (or another suitable baking sheet). If using premade pizza crust, place crust on baking sheet.
  • Spread refried beans on pizza dough/crust, almost to edge but leaving a 1/2-1″ edge uncovered, all the way around. Top evenly with shredded cheese. Top cheese with cooked chicken and tomato slices.
  • Bake in a 425 degree F oven for 12-15 minutes or until cheese is melted and beginning to brown and crust is golden. Remove from oven and sprinkle with cilantro leaves. Cut into slices and serve.

1 (16 ounce) can refried beans
1 pound ground beef
1 (1.25 ounce) package taco seasoning mix
1 tablespoon vegetable oil
4 (6 inch) corn tortillas
8 ounces shredded Cheddar cheese
8 tablespoons sour cream
2 roma (plum) tomatoes, chopped
2 green onion, chopped
1 (4 ounce) can diced green chiles, drained
½ avocado, diced
1 tablespoon black olives, sliced

Steps:

  • Heat the refried beans.
  • In a large skillet, brown the ground beef. Stir in the seasoning packet.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Place a small amount of vegetable oil in a large skillet. Let the oil heat, then place one corn tortilla in the skillet. After 15 seconds, flip the tortilla over and let it fry another 15 seconds. Repeat this process with the remaining tortillas, letting them drain on paper towels once they have been heated. When the tortillas have drained, arrange them on a cookie sheet.
  • Spread a thin layer of beans on the tortillas, followed by a layer of beef, and cheese.
  • Bake the tortillas in the preheated oven for 20 to 30 minutes. Slice the tortillas into wedges and arrange them on plates or a serving platter and garnish them with the sour cream, tomatoes, green onions, chiles, avocado, and olives.

I love making this pizza, which started out as an experiment, and quickly became a favorite in my house... If you like Mexican, you will LOVE this tasty pizza! This pizza is a little on the hot side, so adjust the jalapenos and juice accordingly. If you don't like real hot, use the Pepperocini peppers and juice instead of the Jalapenos. It gives it a nice zip, but no where near as hot as the jalapenos.

1 (12 inch) homemade prepared pizza crust or 1 (12 inch) store bought prepared pizza crust
1/4 cup pizza sauce, your favorite
1/4 cup chunky salsa, I use Pace
2 tablespoons jalapeno juice, from pickled jalapeno pepper jar or 2 tablespoons pepperocini juice, from pickled pepperocini pepper jar
1 -2 jalapenos (pickled, chopped or sliced) or 20 -25 pepperoncini peppers, slices (pickled)
1 (4 ounce) can sliced black olives, drained well
1 large slice onion, chopped fine
2 cups cheddar cheese or 2 cups mexican cheese

Steps:

  • Mix pizza sauce, and salsa together. Add Jalapeno juice, and mix well.
  • Pour on pizza shell, and spread out to edge of pizza shell.
  • Spread jalapenos all around, on top of sauce.
  • Spread black olives on top of pizza.
  • Spread onion on top of pizza.
  • Sprinkle cheese all over top of pizza, spreading to cover all.
  • Cook at 425 for 15-20 minutes.

I found this recipe online at www.mexicanfoodrecipes.org and posting for ZWT. The recipe says to use seasoned ground beef but doesn't give directions/ingredients for the seasoning. I suggest using Recipe #369923 or using a package of taco seasoning. Please feel free to serve this pizza with salsa, guacamole, lettuce or any topping of your choice. This is a recipe for two servings so feel free to double, triple etc. the amounts. This is also a great recipe to use up left-over taco meat.

4 corn tortillas (flour tortillas can be subbed)
1/2 cup refried beans
1 cup oil
1/2 cup cheddar cheese
1/4 cup tomatoes
1/2 cup ground beef, seasoned
2 tablespoons taco sauce
2 tablespoons green onions, chopped
sour cream, to serve

Steps:

  • Heat the oil in a skillet and fry the tortillas til crisp, one at a time. Drain them on paper towels then spread the refried beans over each tortilla. Top two tortillas with meat and put the other two on top, bean side down. Spread the taco sauce on top of the filled tortillas and sprinkle the cheese over the top.
  • Broil on high,the stuffed tortillas until the cheese melts, but watch carefully not to burn them. Seed and dice the tomatoes. Sprinkle these and the chopped green onions on top of the tortillas and serve with sour cream.

Steps:

  • Cook ground beef, crumbling it into small pieces with a wooden spoon as it cooks. Remove any grease.

1 cup refried beans, prepared
1 pound ground beef, chuck, raw
salt to taste

4 tablespoons pizza sauce, prepared
1 cup Mexican Cheese Blend, grated, prepared
½ cup Roma tomato, fresh, small chop
4 teaspoons cilantro, fresh, rough chopped

Steps:

  • To make the Mission® Crispy Tortillas: Place all 8 tortillas directly on the oven rack of a 350 degrees F oven and bake for 8 minutes. Remove from the oven and reserve on your work surface.
  • Heat the 1 cup of refried beans for 1 minute in the microwave to get hot and reserve for the recipe build.
  • Season the ground beef with salt and pepper and saute for 8 minutes in a non-stick pan, drain and reserve hot for the recipe build.
  • To build 1 Mexican Pizza: Place 1 crisp Mission® tortilla on work surface.
  • Evenly spread tortilla with 1/4 cup hot refried beans.
  • Evenly top refried beans with 1/4 (approximately 4 ounces) of the cooked ground beef.
  • Top ground beef with second crisp tortilla and evenly spread 1 heaping tablespoon of pizza sauce over the tortilla.
  • Evenly top the pizza sauce with 1/4 cup grated Mexican cheese blend and 2 tablespoons chopped tomatoes.
  • Repeat steps 1 through 5 for remaining 3 servings.
  • Place all 4 pizzas, at one time, in 350 degrees F oven on a cookie pan/flat pan, and bake for 2 minutes to melt the cheese. Sprinkle 1 teaspoon chopped cilantro evenly over the top of each pizza. Serve each pizza whole.

This fabulous and easy Mexican pizza recipe uses a pork, onion, and taco sauce mixture for great taste, and is topped with shredded cheeses.

1 pound ground pork (or chorizo sausage , raw)
1 onion (chopped)
2 garlic cloves (minced)
1 tablespoon olive oil
1 (16-ounce) bottle taco sauce
1 (8-ounce) can tomato sauce
1 tablespoon chili powder
1/8 teaspoon cayenne pepper
1/4 teaspoon pepper
1 (4-ounce) can green chilies (drained)
2 (13.8-ounce) cans pizza dough (or enough pizza dough for 2 pizzas)
Cooking spray
4 cups Colby-Jack cheese (or Monterey Jack cheese, shredded)

Steps:

  • Gather the ingredients.
  • Preheat the oven to 400 F. Arrange the racks in the oven so they evenly divide the oven into thirds. You'll use both racks, rotating and moving the pizzas around as they cook.
  • In a large skillet, cook the pork with onion and garlic in olive oil over medium heat until the meat is browned, stirring to break up with a fork. Drain if necessary. If you are using chorizo, cook the onions until they are tender and then add the chorizo, cooking for a few minutes until the fat is rendered and the meat is well browned.
  • Add the taco sauce, tomato sauce, chili powder, cayenne pepper, and pepper to the onion mixture. Stir well, and simmer on low heat for 5 minutes to blend flavors.
  • Stir in drained green chiles.
  • Spray 2 cookie sheets with nonstick cooking spray and then spread the pizza crust dough onto the sheets.
  • Bake them for 5 to 8 minutes or until they are just set.
  • Spread the sauce evenly over both of the pizza crusts and top evenly with the shredded cheese.
  • Bake at 400 F for 20 to 25 minutes until cheese is melted, bubbly, and begins to brown. Halfway through the cooking time, swap the cookie sheets so they each have time on the upper and lower baking racks. This will help ensure an even bake on both pizzas. Make sure that the crusts are browned on the bottom and the pizzas have cooked evenly.
  • Slice, serve, and enjoy.
