MEXICAN FIESTA SALAD
"I was making a Mexican themed dinner one night last summer, and figured I'd make a salad with the fresh produce I had. I threw in anything that reminded me of Mexican food. Thankfully, it turned out, and the combination of salsa and ranch dressing is one we now use on sandwiches burgers and more, " writes Heather Byers from Pittsburgh, Pennsylvania.

- In a salad bowl, combine the first seven ingredients. In a small bowl, combine the salsa, sour cream and ranch dressing. Drizzle over salad and toss to coat.

KALE FIESTA SALAD
I'm always looking for a new salad to make in bulk for the work week. I've made other kale salads but this is my favorite. Lots of texture, loads of flavor, colorful, crunchy, and sweet.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Blend juice of half of 1 lemon, 1/2 of the basil, garlic, 1 tablespoon olive oil, Parmesan cheese, salt, and pepper together in a food processor until smooth. Place chicken thighs in a nonstick baking pan.
- Bake naked chicken thighs in the preheated oven for 30 minutes. Remove from oven and pour blended mixture over chicken.
- Continue baking until chicken is no longer pink in the center and juices run clear, about 15 minutes more. Let cool for 10 minutes. Shred chicken using 2 forks. Set aside.
- Heat remaining olive oil in a saucepan over medium-low heat. Stir in onion and cook until softened and golden brown, about 10 minutes. Add remaining lemon juice and basil, vinegar, and honey. Heat dressing thoroughly, about 5 minutes.
- Mix chicken, kale, cucumber, tomato, carrot, corn, black beans, and olives together in a bowl.
- Pour warm dressing onto salad; massage and toss until well coated.

- Whisk together the apple cider vinegar, honey, lime juice, buttermilk, cilantro, garlic and salt and pepper, to taste, together in a small bowl.
- Add the romaine, green onions, black beans, tomatoes, corn, radishes, and bell peppers to a large salad bowl. Add the dressing, toss and serve immediately.
MEXICAN FIESTA LAYERED SALAD
A tasty layered salad that will be sure to be a favourite, mild Mexican flavours with lots of crunch! The multiple layers are beautiful in a glass bowl, a crowd pleaser! Feel free to substitute whatever veggies you happen to have on hand!

- Layer and pack lettuce lightly into the bottom of a glass bowl.
- Continue layering with each ingredient finishing with the beans (they don't have to be Mexican flavoured!
- Mix sour cream and mayo with Taco seasoning and garlic, spread in an even layer over top your other layers right to the edge to seal everything.
- Top with cheese, then cooked crumbled bacon bits, green onions and optional olives and jalapeños.
- ENJOY!

FIESTA SIDE SALAD

LIZ'S GERMAN POTATO SALAD
My friend Liz is German, this is her late mothers recipe which we ate at her place the other night. Cook and prep time don't take cooling of potatoes into account. Photo includes about 1/4 red onion finely sliced.

- Cook the potatoes with their skins on until tender. Allow to cool, peel.
- Place in a large bowl with eggs, bacon pickles.
- Sprinkle the chicken stock powder over the potatoes, then mix gently.
- Whisk the oil, vinegar, salt and pepper together, pour over the salad and mix again gently.
- Garnish with parsley and serve at room temperature.

FIESTA PASTA SALAD WITH DILL PICKLES
This dill pickle pasta salad salad has so many different colors that it looks as though there is confetti in it. There is a thousand variations to this salad! My mother adds ham and asparagus to it. I usually use tri-colored pasta in this salad to add even more color. Also I serve green onions on the side. All my friends and family love this so much. I don't think I would be invited on our annual family camping trip if I didn't bring this salad.

- Bring a large pot of lightly salted water to a boil. Cook fusilli in the boiling water, stirring occasionally, for 6 minutes. Add frozen vegetables; continue cooking until fusilli is tender yet firm to the bite, about 6 minutes more. Drain.
- Soak the fusilli-vegetable mixture in cold water until cool to the touch.
