Heavenly Meatloaf with Blue Cheese, Mushrooms, and Spinach image

A slightly different recipe using a combination of ingredients, this meatloaf tastes absolutely divine! Instead of the usual ketchup, tomato paste, and brown sugar, this meatloaf is more of an 'upscale' version of the traditional. Best served with mashed potatoes and asparagus. This is my own personal creation! I substitute ground deer meat occasionally instead of beef, only because I have a freezer full, and it's organic!

2 eggs
1 cup finely chopped fresh spinach
½ cup sliced fresh mushrooms
½ cup plain bread crumbs
½ small yellow onion, finely chopped
⅓ cup 2% milk
⅓ cup crumbled blue cheese
2 tablespoons reduced-sodium Worcestershire sauce
1 tablespoon minced garlic
¼ teaspoon cayenne pepper
1 pinch dried oregano
1 pinch dried basil
salt and ground black pepper to taste
1 ½ pounds extra-lean ground beef

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
  • Mix eggs, spinach, mushrooms, bread crumbs, onion, milk, blue cheese, Worcestershire sauce, garlic, cayenne pepper, oregano, basil, salt, and black pepper together in a large bowl. Add ground beef and mix thoroughly with your hands; pack into prepared loaf pan.
  • Bake in the preheated oven until no longer pink in the center, 45 to 60 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

1 pound potatoes
1 large egg, beaten
1 tablespoon Worcestershire sauce
2 teaspoons soy sauce
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1 pound lean ground beef

Steps:

  • Peel and grate potatoes; rinse and drain. in a large bowl, combine potatoes, egg, Worcestershire sauce, soy sauce, pepper and garlic powder. Add ground beef and mix well. Pat meat mixture into an 8x4-in. loaf pan. Bake at 350°for 1 hour or until no pink remains. Drain.

1 cup breadcrumbs
1/4 cup crumbled blue cheese
1 lb ground beef
1 egg (slightly beaten)
2 tablespoons chopped onions
1/2 teaspoon salt
1 dash pepper
blue cheese dressing

Steps:

  • Combine 1 cup bread crumbs and 1/4 cup crumbled blue cheese.
  • Add ground beef, egg, onion, salt and pepper.
  • Blend thoroughly.
  • Shape into a round loaf.
  • With a spoon, make a crater-like depression in top of loaf.
  • Fill depression with Blue Cheese Dressing.
  • If desired, sprinkle more crumbled blue cheese on top.
  • Bake at 350 for 1 hour.

4 slices bread, or more as needed
2 cups baked beans
2 pounds ground beef
1 cup barbecue sauce, or as needed
¼ cup mustard, or as needed
¼ cup ketchup, or as needed
2 large eggs
2 cups leftover mashed potatoes
1 cup cubed Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Crumble 4 slices of bread.
  • Mash up baked beans in a large bowl. Add ground beef, crumbled bread, 1 cup barbecue sauce, 1/4 cup mustard, 1/4 cup ketchup, and eggs; mix until well combined, adding more liquid or bread as needed to reach desired consistency.
  • Reserve about 1 1/2 cups meat mixture. Press remaining mixture into the bottom and around the sides of two 9x5-inch loaf pans, leaving a large trough in the center. Fill troughs with mashed potatoes then cover with Cheddar cheese. Spread reserved meat mixture over top.
  • Bake in the preheated oven until cooked through, about 1 hour.

2 tablespoons olive oil
1 pound onions (3 medium), halved lengthwise, then thinly sliced crosswise
2 pounds russet (baking) potatoes (about 4)
2 cups heavy cream
1/4 pound Maytag Blue cheese, crumbled (1 cup)
1/4 pound whole-milk mozzarella, coarsely grated (1 cup)
1/2 teaspoon salt
1/2 teaspoon black pepper
Special Equipment
a Japanese Benriner or other adjustable-blade slicer

Steps:

  • Preheat oven to 375°F.
  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté onions, stirring occasionally, until they begin to brown, about 4 minutes. Reduce heat to moderate and cook onions, stirring occasionally, until golden brown, about 12 minutes.
  • Peel potatoes and slice paper-thin crosswise (slightly less than 1/16 inch thick) with slicer. Combine potatoes and cream in a 2-quart heavy saucepan (potatoes on top may not be completely immersed) and bring to a boil. Remove from heat and cool to warm, about 30 minutes.
  • Transfer one third of potatoes with a slotted spoon to a lightly oiled 3-quart shallow baking dish (reserve any cream in pan), spreading them in an even layer, then sprinkle evenly with half of onions and one third of each cheese and season with 1/4 teaspoon salt and 1/4 teaspoon pepper. Make 1 more layer each of potatoes, onions, cheeses, and seasoning in same manner, then top with remaining potatoes and remaining cheeses. (Do not season top layer.)
