CHEF CAPON'S CHEDDAR BACON WAFFLES
These Savory Waffles have cheddar, bacon, and scallions as the star ingredients. They are a total treat for brunch!

Steps:
- Preheat your waffle iron. Mine only has one setting anyway, but you want the iron to be pretty hot.
- Preheat the oven to 200 degrees F.
- In a large bowl, whisk to combine the flour, sugar, salt and baking powder. Set aside.
- In another bowl, whisk to combine the egg yolks, milk, and butter. Set aside.
- In a large (and very clean) bowl, use a hand mixer to whip the egg whites to soft peaks.
- Add the wet ingredients to the dry, and mix until they are almost combined. Add the egg whites, bacon, cheese, and scallions to the bowl, and gently fold them in until combined.
- Portion the batter into your waffle iron (the amount will vary by waffle iron, but I use about one cup per waffle), and cook for approximately 5 minutes, until golden brown.
- When the waffle has finished cooking, place directly on the wire rack in the oven, to let the steam escape. Finish cooking the remaining waffles, and enjoy!

- In 12-inch skillet, heat Tomato Jam ingredients to boiling over medium-high heat. Reduce heat. Simmer uncovered about 30 minutes, stirring occasionally, until thickened. Keep warm.
- Heat waffle maker. In large bowl, stir Bisquick mix, milk, egg and olive oil until well blended; fold in bacon, cheese and chopped basil.
- Pour 1/2 cup batter onto center of hot waffle maker; close lid. Cook 3 to 4 minutes or until crisp and golden brown. Repeat with remaining batter. Top each waffle with tomato jam. Top with fried egg; garnish with additional fresh basil.

BACON AND CHEDDAR WAFFLES

- Preheat a waffle iron.
- In a small bowl, whisk the eggs until fluffy; reserve.
- Next, in a large bowl, mix together the flour, baking powder, sugar and salt. In a third bowl, whisk together the milk, oil and vanilla extract. Add the wet ingredients into the dry ingredients and mix just until combined. Add the bacon, Cheddar and reserved whisked eggs and mix until combined.
- Spray the waffle iron with nonstick spray. Pour in 1/4 cup of the batter and cook the waffles until golden brown. (The waffles can be kept in a low oven to keep warm while the others cook.) Repeat with the remaining batter. Serve the waffles with butter, syrup and/or fried eggs.
BACON WAFFLES

- Spray a waffle iron with nonstick cooking spray and preheat it.
- Sift together the flour, baking powder and 1/2 teaspoon salt in a medium bowl. Beat the egg whites in a second medium bowl until stiff.
- Beat the egg yolks with the milk and butter in a large bowl. Add the flour mixture, stirring until just blended. Fold in the beaten egg whites.
- Place 2 halves of a bacon slice in each waffle grid and close the cover. Cook for 1 minute and then add a scant 1/2 cup batter to each waffle grid. Bake until golden brown, about 5 minutes. Serve with maple syrup.

This was given to my mom by her best friend who is a southern girl at heart. It is a sweet and savory flavor that you never forget. Try it with a grilled cheese or on scrambled eggs...you can put it on anything!

- Cook the bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels. Crumble bacon when cool.
- Stir tomatoes, sweet onion, sugar, apple cider vinegar, salt, black pepper, and hot sauce together in a saucepan and bring to a boil, stirring constantly to dissolve sugar. Stir in crumbled bacon and cook over medium heat, stirring often, until the spread is very thick, about 1 hour. Adjust salt and black pepper.
- Cool and spoon into a 1-pint glass jar with a lid; keeps refrigerated for 1 week or frozen for 2 months. If freezing, put spread into small jars and let jars thaw in refrigerator overnight before using.

BACON TOMATO CASSEROLE

- Cook noodles according to package directions; drain. In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain, reserving 2 tablespoons drippings. , In the drippings, saute the green pepper, onion, salt, marjoram, thyme and pepper for 5 minutes. Stir in tomatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Stir in the noodles. Add half of the bacon., Transfer to a greased 2-qt. baking dish. Top with cheese and remaining bacon. Bake, uncovered, at 350° for 10-15 minutes or until cheese is melted.

TOMATO-BASIL JAM
From a BH&G canning cookbook. Serve this on warm crusty bread as appetizer or as a go-along with salad or soup.

Steps:
- Wash tomatoes; remove peel, stem ends, cores and seeds.
- Finely chop tomatoes. Measure 3 1/2 cups.
- Place tomatoes in 6-quart kettle and heat to boiling; reduce heat, cover and simmer 10 minutes.
- Measure again--3 1/2 cups and return to pan.
- Add lemon juice and basil.
- Combine 1/4 cup of the sugar with the pectin; stir into tomatoes.
- Heat to a full rolling boil, stirring constantly.
- Stir in the remaining 2 3/4 cups sugar; return to a full rolling boil.
- Boil hard for 1 minute, stirring constantly.
- Remove from heat and skim foam with a metal spoon.
- ladle into hot, sterile jars, leave 1/4 in head space; wipe rim, adjust lids and process in boiling water bath 5 minutes.
- Cool on wire racks.
BACON AND TOMATO JAM
This was recently published in my local newspaper. They recommended it on grilled cheese, hamburgers and tuna salad. I am sure it would be very good with many other things as well.

Steps:
- In a large skillet over medium-high, cook the bacon until crispy, about 5 minutes.
- Transfer the bacon to paper towels to drain excess fat, blotting it dry with additional towels as needed.
- In a large saucepan, combine the tomatoes, onion, sugar, cider vinegar, salt and pepper.
- Bring to a boil, stirring often, then reduce heat to medium.
- Crumble the bacon into the tomato mixture.
- Simmer until very thick, about 1 hour.
- Season with additional salt and pepper as needed.
- Let the jam cool, then ladle into jars.
- Can be refrigerated for 3 to 4 days, or frozen up to 2 months.
- If freezing, divide the jam among several small jars.
- When ready to use, let the jar thaw overnight in the refrigerator.
