This loaded beef nacho rice dip shot right up to the top of the ultimate appetizer list! Taco seasoned beef with rice, jalapeños, tomatoes and melted Cheddar.

Provided by Carolina® Rice

Yield makes 5 cups

Number Of Ingredients 10

1 cup Carolina® Jasmine Rice, uncooked
1 pkg (1.25 oz.) dry taco seasoning mix
1 ¾ cups water
8 oz lean ground beef
½ cup sour cream
1 cup tomatoes, chopped
½ cup shredded Cheddar cheese
½ cup jalapeño peppers, pickled, canned, sliced
1 bowl tortilla chips
1 cup prepared guacamole, optional

Steps:

  • This recipe has taken the very best of loaded beef nachos and made it into the ultimate rice dip! Get your tortilla chips ready for this combo of Carolina® Jasmine Rice, taco seasoning, lean ground beef, sour cream, pickled jalapeño peppers, tomatoes and melted cheese! Don't forget to pair with your favorite guacamole.
  • Step 1 In a medium saucepan combine rice, 1/2 packet taco seasoning and water. Bring to a boil. Reduce heat to low. Cover and cook for about 15 minutes.
  • Step 2 Meanwhile in a large skillet brown beef. Add onions and remaining taco seasoning. Reduce heat to low and cook 10 minutes, stirring occasionally.
  • Step 3 In a large bowl combine rice and sour cream. Stir in beef mixture, tomatoes and cheese. Top with jalapeños.
  • Step 4 Serve warm with tortilla chips and guacamole, if desired.

This cheese dip is literally loaded with all kinds of texture and flavor. It's a super easy crock pot recipe and if you use the liner like recommended. The dip is full of ground meat and yummy bacon. The onions are cooked with the meat mixture so they are nice and soft. This dip makes a lot, so it would be perfect for a crowd.

2 lb ground beef or ground venison
1 lb bacon, chopped
1 large onion, finely chopped
1 pkg taco seasoning mix
2 clove garlic, minced
1 qt salsa (mild, moderate or hot--your choice)
1 c milk
1 box Velveeta cheese, cubed (2 pound box)
1 can(s) black olives, chopped
1 bottle green olives, chopped
1 can(s) diced green chilies

Steps:

  • 1. Brown ground beef, chopped bacon, onion and garlic together until done. Drain well. Sprinkle meat mixture with taco seasoning and stir. Put a liner in a 5 quart crock pot. I always use a crock pot liner as I hate cleaning cooked-on cheese out of my crock pot. If you don't use a liner, spray the crock pot well with non-stick spray before adding beef mixture. Dump beef mixture into crock pot. Set temperature at low.
  • 2. Add in the quart of chunky salsa and stir. I generally use mild or moderate but if you like it fiery, use hot. Stir in the black and green olives, diced green chilies, milk and cubed Velveeta. Let cook on low for at least an hour, stirring occasionally. Turn crock pot down to keep warm setting and serve.

1 (8 ounce) package cream cheese
1 cup sour cream
2 tablespoons taco seasoning mix
¾ cup salsa
¾ cup shredded lettuce
¾ cup shredded Cheddar cheese

Steps:

  • Combine the softened cream cheese, sour cream and taco seasoning on a large plate or in a pie plate. Spread the salsa on top of the cream cheese-sour cream mixture. Top with lettuce and cheddar cheese.

2 tablespoons butter
2 cups water
1 can (14-1/2 ounces) diced tomatoes, undrained
1 pound ground beef
1 pound (16 ounces) process cheese (Velveeta), cubed
1 can (14-1/2 ounces) stewed tomatoes
1 jar (8 ounces) process cheese sauce
Tortilla chips

Steps:

  • In a large saucepan, cook rice mix in butter until golden brown. Stir in water and diced tomatoes; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until rice is tender. , Meanwhile, in a large skillet, cook beef until no longer pink. Drain and add to the rice. Stir in the cheese, stewed tomatoes and cheese sauce; cook and stir until cheese is melted. , Transfer to a slow cooker set on low. Serve with tortilla chips.
