2 tablespoons olive oil
1 cup onion, chopped
1 garlic clove, peeled and chopped
3 cups carrots, chopped (no need to peel-just scrub)
4 cups fat-free low-sodium chicken broth
1 tablespoon tomato paste
1/4 cup uncooked white rice or 1/4 cup uncooked brown rice
1 1/2 cups evaporated skim milk
salt and pepper (to taste)
1/8 teaspoon ground nutmeg

Steps:

  • Heat oil in large saucepan, add onions and garlic, and cook until tender, adding water if necessary, to prevent drying.
  • Add carrots, broth, tomato paste and rice. Reduce heat to low, cover and cook until rice and carrots are tender, 30-40 minutes.
  • Puree soup, in batches, in blender or food processor until smooth.
  • Return to pan. Stir in milk, salt and pepper, and nutmeg. Reheat over medium heat, stirring until heated through.
  • Ladle into bowls.
  • Garnish with dollop of plain nonfat yogurt.

¼ cup butter, cubed
2 ½ cups sliced carrots
1 large potato, peeled and cubed
1 cup chopped onion
1 stalk celery, chopped
3 cups chicken broth
1 teaspoon ground ginger
½ cup heavy whipping cream
1 teaspoon curry powder
½ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Heat butter in a Dutch oven over medium heat; add carrots, potato, onion, celery, chicken broth, and ginger. Cover and cook, stirring occasionally, until vegetables are tender, about 30 minutes. Uncover and cool for 15 minutes.
  • Transfer soup in batches to a food processor; blend until smooth. Return soup to the Dutch oven; stir in cream. Add curry powder, salt, and black pepper; cook over low heat until heated through, about 10 minutes.

Rich and creamy, with a great flavor and a bright color: very pretty *and* very tasty. For a still-tasty, more-healthy version, skip the butter and the initial sauté of onion and potato entirely, replace the heavy cream with nonfat milk or soy/rice milk, and omit the soy sauce.

3 tablespoons butter
1 onion, chopped
3 potatoes, cubed
6 carrots, sliced
3 stalks celery, chopped
4 garlic cloves
1/4 cup soy sauce
1/2 teaspoon ground cumin
1/4 teaspoon ground cayenne pepper
1/2 teaspoon chili powder
1/4 teaspoon turmeric
1/4 teaspoon white pepper
1/4 cup fresh dill
2 1/2 cups heavy cream (or milk, or half-and-half)
1 cup plain yogurt
2 tablespoons lemon juice

Steps:

  • Melt butter in the bottom of a large pot.
  • Add onion and sauté until onion is somewhat translucent.
  • Add potato cubes and cook, stirring frequently, until cubes are slightly browned.
  • Add water.
  • Bring to a boil.
  • Add carrots, garlic, and celery.
  • Reduce heat, cover, and simmer for twenty minutes, or until vegetables are tender.
  • Remove from heat and cool for 5 minutes.
  • Puree soup in food processor until smooth.
  • Add soy sauce, cream, dried spices, half-and-half and the fresh dill.
  • In a small bowl, blend together yogurt, lemon juice, and the rest of the dill.
  • To serve, ladle carrot soup into bowl and garnish with yogurt sauce.
