An extravagant meal of one of the finest cuts of beef stuffed with succulent lobster tails in a garlic butter sauce. For best flavor, try not to cook past medium doneness.

1 (3 pound) whole beef tenderloin
2 lobster tails
1 tablespoon butter, melted
6 slices bacon
1 cup sliced green onions
1 cup butter
1 cup dry white wine
⅛ teaspoon garlic salt
1 tablespoon lemon juice

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place bacon in a skillet over medium-high heat. Cook for just a few minutes, until just partly cooked. Set aside.
  • Meanwhile, bring a pot of lightly salted water to a rolling boil. Add lobster tails, and boil for 5 to 6 minutes, until colored. Drain, and cool slightly. Remove shells by snipping up the center with scissors, and peeling away to the side.
  • Slice a large pocket into the side of the tenderloin. (A butcher can do this for you also) Stuff the lobster tails into the pocket. Combine 1 tablespoon of butter and lemon juice; pour over the lobster tails. Close the pocket, and tie the roast closed with cotton string at 1 inch intervals. Place the roast in a shallow roasting pan.
  • Bake for about 35 minutes in the preheated oven for rare, or continue to roast to your desired degree of doneness. The internal temperature of the roast should be at least 145 degrees F (70 degrees C) for rare. Lay bacon over the top of the roast, and continue baking until crisp.
  • Melt remaining 1 cup of butter in a saucepan over medium heat. Add green onion, wine and garlic salt. Cook until onion is tender. Slice the roast, and arrange on a platter. Spoon sauce over the meat.

3 -4 lbs beef tenderloin
2 frozen lobster tails (4 oz each)
1 tablespoon butter, melted
6 slices bacon, partially cooked
1/2 cup sliced green onion
1/2 cup butter
1/2 cup dry white wine (I use white vermouth)
1/8 teaspoon garlic salt
1 tablespoon lemon juice

Steps:

  • Preheat the oven to 425 degrees.
  • Make a lengthwise slit in the middle of the tenderloin, cutting down within 1/2 inch of the bottom.
  • This should form a pocket big enough to accommodate the two lobster tails.
  • Place the lobster in boiling salted water (enough water to completely cover tails).
  • Return to a boil, reduce the heat and then simmer for 5-6 minutes .
  • Carefully remove the lobster from shell.
  • Cut in half, lengthwise.
  • Place the lobster tails end to end inside the beef pocket.
  • Combine 1 tbsp.
  • butter and lemon juice.
  • Pour over the lobster.
  • Close the meat around the lobster and tie securely with string at 1 inch intervals.
  • Place the meat on the oven rack in a shallow roasting pan.
  • Bake for 45-50 minutes for rare meat.
  • (Increase the time if you like your meat cooked more.) Lay the bacon slices on top of the roast.
  • Bake for 5 minutes more.
  • In a saucepan, cook green onion in 1/2 cup butter over very low heat until tender, stirring frequently.
  • Add the wine and garlic salt and heat through.
  • To serve: Slice the meat and then spoon the sauce over it.
  • Garnish with fresh mushrooms, cherry tomatoes and parsley, if desired.

STUFFED LOBSTER

2 (1 1/2-pound) lobsters
Fresh herbs: parsley, rosemary, thyme
4 tablespoons of butter
1/2 onion, diced
1 teaspoon lemon zest
2 tablespoons sliced scallions
2 handfuls crumbled buttery crackers
Extra-virgin olive oil, for brushing and drizzling

Steps:

  • Preheat oven to 450 degrees F.
  • Place lobsters in pan and chill in freezer for 15 to 20 minutes.
  • Meanwhile, place 1 layer of river rocks* in the bottom of a wide pot and fill with 1-inch of water. Bring to a boil over high heat. Spread herbs across rocks, then quickly place lobsters on top. Cover and cook for 2 to 3 minutes. Remove and place in ice bath to halt cooking.
  • Lay paper towels across a cutting board. Bring one lobster to the board and using your chef's knife, cut the lobster straight down the center, from head to tail. Remove tomalley and discard. Remove legs and claws. Using a rolling pin, roll over legs to extract the meat. Roughly chop the meat.
  • Move claws to pan and roast for 4 minutes.
  • Meanwhile, melt the butter in a large saute pan over medium heat. Add the onions and stir to coat. Follow with the lemon zest and scallions. Once onions are translucent add the leg meat. Then add the crackers and toss, off the heat, until all the liquid has been absorbed.
  • Spoon filling into the open body cavities. Brush tail meat with olive oil and place upright on the pan along with the claws. Roast 10 to 14 minutes or until the stuffing browns and tail meat becomes opaque.
  • Crack claws and remove the meat. Serve on top of stuffed lobster with extra-virgin olive oil on the side for dipping.
  • *Smooth river rocks are available from your local landscape company

Head roast of tenderloin, approximately 1 to 1 1/2 pounds
Kosher salt
Freshly ground black pepper
Olive oil
3 ounces blue cheese

Steps:

  • Preheat the oven to 450 degrees F.
  • Slice roast open lengthwise in middle to create a pocket, being careful to not slice all the way through.
  • Salt and pepper the meat on all sides.
  • Heat a grill pan over high heat and brush roast with olive oil. Sear the roast on all sides. Remove from the heat, tent with foil and allow to rest for 15 minutes.
  • After the meat has rested, stuff pocket with the blue cheese. Tie the whole thing together with kitchen string. Return the tied meat to the grill pan, place into the oven and cook until it reaches an internal temperature of 125 degrees F, approximately 20 to 25 minutes. Remove from the oven, wrap in aluminum foil and allow to rest 15 minutes before serving.

2 lobster tails (4-6 oz)
2 -3 lbs beef tenderloin
1 -2 teaspoon lemon pepper
1/2 cup melted butter
2 teaspoons minced garlic
1/2 cup minced shallot
2 cups sliced mushrooms, you can quarter them if you wish
3/4 cup dry red wine or 3/4 cup Chardonnay wine

Steps:

  • Preheat oven to 400 degrees.
  • In a small saucepan combine the buter and minced garlic-keep warm over low heat.
  • Cook the lobster tails in boiling salted water until done-about 5 minutes.
  • Drain and submerge in cold water to stop cooking process.
  • Cut a lengthwise slit in the tenderloin within 1/2 inch from bottom.
  • Open.
  • Sprinkle with the lemon pepper.
  • Remove lobster shells and discard.
  • Place tails"tail to end" down the center of your tenderloin.
  • Whisk butter-garlic mixture and drizzle 2 T.
  • down lobster tails.
  • Wrap beef around the tails and tie with cooking twine at 1 and 1/2 inch intervals.
  • Place roast on a rack in roasting pan and sprinkle with lemon pepper.
  • Roast uncovered for 45 minutes to 1 hour.
  • Meat thermometer will read 140 degrees for rare or 150 degrees for medium rare.
  • Saute the shallots and mushrooms in the butter garlic mixture until golden.
  • Add the wine and heat throughly, reducing just a bit.
  • Remove roast and loosely cover with foil.
  • Let stand for 5 minutes before carving.
  • Cut into thick slices and offer the wine-butter sauce at table.

3 lobster tails (8 to 10 ounces each)
1/2 cup heavy whipping cream
2 fresh thyme sprigs
1-1/4 teaspoons salt, divided
1-1/8 teaspoons pepper, divided
2/3 cup dry bread crumbs
1 beef tenderloin roast (4 to 5 pounds)
1 package (17.3 ounces) frozen puff pastry, thawed
1 large egg white
3 tablespoons butter, melted

Steps:

  • Using kitchen scissors, cut through lobster shells; carefully remove lobster and chop. In a small skillet, combine the lobster, cream, thyme, 1/4 teaspoon salt and 1/8 teaspoon pepper. Bring to a boil over medium heat; cook 3-5 minutes or until lobster is firm and opaque. Discard thyme sprigs. Stir in bread crumbs; set aside to cool. , Make a lengthwise slit down the center of tenderloin to within 1/2 in. of bottom. Open meat so it lies flat. Place lobster mixture down the center. Close tenderloin; tie several times with kitchen string. Sprinkle with remaining salt and pepper., Place the tenderloin in a greased 15x10x1-in. baking pan; fold ends under tenderloin. Bake, uncovered, at 475° for 20-25 minutes or until browned. Cool to room temperature; refrigerate until chilled., On a lightly floured surface, unfold one puff pastry sheet; cut lengthwise along one fold line, forming two rectangles. This is my grandmother's recipe for stuffed coldwater lobster. It is far and away my favorite meal, and if you feel like splurging you will not be disappointed. Also, this same stuffing is excellent for fish. Serve with more melted butter for dipping.

½ cup butter, or as needed
½ pound bay scallops
2 cups ground butter round crackers (such as Ritz®)
1 cup graham cracker crumbs
1 teaspoon poultry seasoning
2 medium (1 1/2 pound) live cold-water lobsters

Steps:

  • Melt butter in a skillet over medium heat. Add scallops; cook and stir until opaque, about 6 minutes.
  • Combine the cooked scallops and melted butter from the skillet, ground crackers, graham cracker crumbs, and poultry seasoning in a bowl. Mix well, adding additional melted butter if the stuffing is too dry.
  • Bring 2 inches water to a boil in a large pot. Place lobsters in pot; steam until bright red, about 20 minutes.
  • Lay cooked lobsters on the their backs on a work surface. Wear gloves and make an incision between the legs down to the tail using a heavy knife. Pry open the chest cavity and rinse out innards with warm water. Fill the chest cavity and tail with the stuffing until overflowing.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Place stuffed lobsters on their back on a baking sheet.
  • Bake under the broiler until stuffing has browned, about 5 minutes.
