Creamed Hot Lobster Sandwich or Lobster Poutine image

Creamed lobster over buttered toast is comfort food at its best. This is a very popular recipe in southwestern Nova Scotia. You can also pour the creamed lobster over fries and mozzarella for a lobster poutine.

½ cup butter
2 cups cooked lobster meat
1 teaspoon salt
¼ teaspoon ground black pepper
1 tablespoon cornstarch
2 cups light cream, divided
8 slices bread
2 tablespoons butter, or as needed

Steps:

  • Melt 1/2 cup butter in a large frying pan over medium-low heat; cook and stir lobster into melted butter until heated through, about 5 minutes. Season with salt and pepper.
  • Whisk cornstarch and about 1 tablespoon cream together in a small bowl until smooth. Pour remaining cream into lobster, stir in cornstarch mixture; cook and stir until cream sauce comes to a simmer and thickens slightly, about 5 minutes.
  • Toast bread and spread with about 2 tablespoons butter. For each serving, pour some creamed lobster over one buttered piece of toast, top with another piece of toast, and pour more creamed lobster over the top.

2 1 1/2-pound lobsters
3 tablespoons unsalted butter
2 tablespoons minced shallots
1 1/2 teaspoons paprika
1 tablespoon tomato paste
4 tablespoons Cognac
1 cup dry white wine
1 1/2 teaspoons minced fresh tarragon or 1 tablespoon dried
Tomato-cream reduction (see recipe)
White pepper to taste

Steps:

  • Kill the lobsters by inserting a large knife where the tail meets the body, severing the spinal cord. Turn the lobsters on their backs, and split lengthwise. Separate the claws so they will be easier to fit into a skillet.
  • Melt butter over medium-high heat in a 12- to 14-inch, highsided skillet. Briefly saute shallots, and then add paprika and tomato paste. Mix well with a wooden spoon.
  • In a small saucepan, warm the Cognac over low heat.
  • Add lobster bodies, flesh side down, and claws to skillet. Cook for 1 minute; add Cognac and flambe. When flames die down, add white wine and tarragon. Flip lobsters, baste them with pan juices, and cover. Reduce heat to medium-low, and cook for 20 minutes. Check occasionally, and if cooking liquid evaporates, add more white wine.
  • Remove lobsters from the skillet, and keep them warm. Add tomato-cream reduction (see recipe) to the skillet, bring to a boil, and reduce liquid by half. Add white pepper to taste; the dish should not need salt because of the salty lobster juices. Pour sauce into a blender, including any particles that cling to the skillet's bottom. Puree well at high speed. Arrange half a lobster and one claw on each serving plate. Pour sauce over lobster (but not lobster claw).

3/4 lb. fresh lobster meat (cut into bite size pieces)
3 tbsp flour
3 tbsp butter or margarine (or margarine)
1 tsp salt
1/2 tsp white pepper
1 cup milk
1/2 cup cream
1 tbsp dry sherry (not cooking sherry)
1 pinch nutmeg
1 pinch paprika

Steps:

  • Melt the butter or margarine in a sauce pan
  • Add the flour, salt and pepper, mix till well blended.
  • Add the cream and milk and cook over medium heat, stirring constantly until it begins to thicken
  • Add the sherry and cook for one more minute.
  • Add the lobster meat, a dash of nutmeg and a dash of paprika, mix well and remove from heat.
  • When fish comes out of the oven, (see baked haddock with lobster sauce) pour the lobster sauce over the top of the fish and continue to cook, for an additional 5 minutes.

1 cup dry white wine
1/2 small onion, sliced
1 green onion, chopped
3 large fresh thyme sprigs
2 tablespoons fresh lime juice
2/3 cup whipping cream
1/4 cup chilled butter (cut into 1/2 inch cubes)
salt and black pepper (to taste)
2 tablespoons fresh lime juice
2 tablespoons olive oil
1/8 teaspoon scotch bonnet pepper, minced
2 large frozen uncooked caribbean lobster tails, thawed, cut in half length wise
1/2 teaspoon paprika
1/4 cup butter, melted

Steps:

  • Sauce
  • Saute onion, green onion, thyme, wine and lime juice in a small saucepan. Bring to a boil about 5 minutes until mixture is reduced to 1/2 cup. Strain and discard solids. Return wine mixture to sauce pan. Add cream and boil until reduced to 1/2 cup. Remove from heat and add butter a few cubes at a time, stirring between additions until melted and smooth. Season with salt and black pepper.
  • Lobster.
  • Prepare barbecue - medium high heat. Mix lime juice oil and scotch bonnet pepper in a small bowl for marinade. Place lobster tails flesh side up in a baking pan. Drizzle with marinade and let stand for 15 minutes. Sprinkle tails with paprika and salt. Grill tails until cokked through (about 8 minutes), brushing frequently with butter and turning occasionally.
  • Serve lobster with sauce.
