3 (.25 ounce) envelopes active dry yeast
½ cup warm water
½ cup shortening
1 cup boiling water
1 cup canned evaporated milk
2 eggs, beaten
½ teaspoon ground nutmeg
½ cup white sugar
2 teaspoons salt
8 ½ cups all-purpose flour
1 quart oil for frying, or as needed
¾ cup confectioners' sugar
1 tablespoon water, or as needed

Steps:

  • In a small bowl, dissolve the yeast in 1/2 cup lukewarm water. Set aside until bubbly, about 10 minutes. In a large bowl, dissolve shortening in 1 cup of boiling water. Cool to lukewarm.
  • Mix the evaporated milk, eggs, nutmeg, sugar and salt into the shortening and water. Stir in the yeast mixture and one cup of the flour until well blended. Gradually mix in remaining flour 1 cup at a time until dough is firm enough to remove from the bowl. Knead for about 5 minutes on a lightly floured surface, or until smooth. Let rest for 10 minutes.
  • Roll the dough out on a floured surface to 1/4 inch thick. Cut into strips 1 inch wide and 6 inches long. Place onto waxed paper, and let rise until doubled in size, about 1 hour.
  • Heat oil in a deep-fryer or large heavy skillet to 350 degrees F (175 degrees C). Carefully remove the Long Boys from the waxed paper and place a few at a time in the hot oil. Fry for about 3 minutes per side, or until light brown. Set over wire racks to drain. Drizzle with glaze.
  • To make the glaze, mix the confectioners' sugar with enough water to make it able to drizzle in a long strand. Adjust amounts if necessary.

2 tablespoons unflavored gelatin
½ cup cold water
4 egg yolks
½ cup white sugar
1 pinch salt
2 cups milk
1 teaspoon vanilla extract
2 cups heavy cream

Steps:

  • In a small bowl, stir together the gelatin and cold water. Set aside to soften. In a medium bowl, whisk together the egg yolks, sugar, and salt until smooth.
  • In a medium saucepan, bring the milk to a boil. Pour the hot milk in a steady stream into the yolk mixture, whisking constantly. Return the mixture to the saucepan and cook and stir over medium heat until the mixture coats the back of a spoon. Remove from heat and pour the custard through a strainer.
  • Stir in the softened gelatin and vanilla and stir to melt the gelatin. Allow to cool.
  • When the mixture has cooled almost to room temperature, whip the heavy cream to medium stiffness and fold it into the custard. Immediately transfer the Bavarian cream to parfait glasses, molds, or on prepared cake layers, as it will firm up quickly as the gelatin sets. Refrigerate at least one hour before serving.

1/4 cup warm water (110° to 115°)
1 cup warm milk (110° to 115°)
1/4 cup butter, softened
1/4 cup sugar

3-1/4 to 3-3/4 cups all-purpose flour
Oil for deep-fat frying
GLAZE:
1-1/4 cups confectioners' sugar
1 tablespoon brown sugar
1 tablespoon water
1/2 teaspoon vanilla extract

Steps:

  • In a large bowl, dissolve yeast in warm water. Add milk, butter, sugar, salt and egg and 2 cups flour. Beat until smooth. Stir in enough flour to form a soft dough. , Do not knead. 1 vanilla bean
1 1/4 cups heavy cream
1 tablespoon powdered gelatin
3 tablespoons milk
1/4 cup sugar
5 egg yolks
1 1/4 cups whipped cream
6 sliced strawberries

Steps:

  • Put the split vanilla bean in cream and slowly bring to a boil. Turn off heat and let sit for 1 hour.
  • Remove bean and scrape out seeds, add them to the cream and discard the pod. Sprinkle the gelatin into the milk and set aside.
  • Whisk the sugar and egg yolks together. Warm the cream mixture back up and slowly whisk into eggs. Place mixture over simmering water and stir until it is thick enough to coat the back of a wooded spoon. Remove from heat and add milk and gelatin mixture.
  • Place bowl in ice bath and stir until at room temperature.
  • Fold in whipped cream and pour mixture into 6 (6-ounce) ramekins. Place in refrigerator for 4 to 5 hours or until mixture is set. Remove from molds and garnish with strawberries.

2 Tablespoons warm water (105-115°F)
3 1/4 Cups all-purpose flour plus some for working the dough
1 Cup milk, room temperature
1/2 stick (1/4 cup) unsalted butter, softened
3 large egg yolks
2 Tablespoons sugar
1 1/2 Teaspoons salt
1/2 Teaspoon cinnamon
Canola or other neutral oil for frying
Chocolate Glaze: (Enough for 12 long johns)
1/4 Cup unsalted butter
2 Tablespoons milk
1 Teaspoon light corn syrup
1 Teaspoon vanilla extract
3 ounces bittersweet chocolate
1-2 Cups confectioner's sugar (powdered sugar)
Maple Glaze: (Enough for 12 long johns)
1/4 Cup unsalted butter
2 Tablespoons milk
1/2 Cup real maple syrup
1-2 Cups confectioner's sugar (powdered sugar)
Vanilla Cream Filling: (Enough for 12 long johns)
4 large egg yolks
1/3 Cup sugar
3 Tablespoons flour
2 Tablespoons cornstarch
1 1/2 Cups milk
1/4 Cup cream
1 vanilla bean
1 Teaspoon vanilla extract

Steps:

  • 1) For filling, whisk eggs with sugar in a medium bowl until they are nice and light. Then whisk in flour and cornstarch. In a medium sauce pan, combine milk, cream, and vanilla bean (scraped). Heat over medium-low heat until it's just simmering.
  • 2) Carefully whisk hot milk mixture into egg mixture, working with a bit of liquid at a time to slowly bring up temperature of eggs. Once both mixtures are combined, stir in extract and return everything to sauce pan.
  • 3) Cook over low heat, stirring constantly, until mixture thickens, about 2-3 minutes. You can store this in the fridge for a few days. Place plastic wrap right on top of filling so a film doesn't form.
  • 4) To make donuts, combine milk and water in a mixing bowl. Add yeast and let sit for 5 minutes until yeast foams.
  • 5) Add all other ingredients, flour last, and mix with a dough hook until dough forms a soft, but not sticky ball. If it's sticking to the bowl, add more flour. If you don't have a mixer, you can just use a wooden spoon.
  • 6) Dust dough with flour and let rise for 2 hours or until it doubles in size.
  • 7) Roll out dough on lightly floured surface into a 12×18 rectangle. Slice into 12 even rectangle pieces. Let pieces rise for 15 minutes or so.
  • 8) Fry donuts at 350 degrees for 2-3 minutes per side. You'll have to flip them because they float. Remove donuts to drain on a paper towel or on a wire rack.
  • 9) For glazes, mix liquids in a saucepan over low heat until hot. If you're using chocolate, melt it in pan. Then whisk in powdered sugar until glaze is thick, but pourable.
  • 10) To fill donuts, use a long narrow knife to hollow out a cavity. Then pipe in filling using a pastry bag. It's helps to have a helper for this part.
  • 11) Dip donuts in glaze after they are filled (or you can skip the filling). Let glaze harden for a few minutes. Eat as soon as possible!

⅔ cup whole milk (at room temperature)
3½ cups all-purpose flour
⅓ cup granulated sugar
2 teaspoons kosher salt
3 eggs
7 tablespoons unsalted butter, at room temperature, cut into 8 pieces ((3½ ounces))
1½ cups whole milk
½ cup granulated sugar
¼ cup cake flour
½ teaspoon kosher salt
4 egg yolks
1 teaspoon vanilla extract
6 tablespoons heavy cream
1 gallon canola oil
1 cup granulated sugar

Steps:

  • Make the Dough: In the bowl of an electric mixer fitted with the dough hook attachment, stir together yeast and milk; let stand until yeast is dissolved, about 1 minute. Add the flour, sugar, salt and eggs; mix on low speed until the dough comes together, about 3 minutes. Add the butter, two pieces at a time, mixing after each addition and until butter is fully incorporated and dough is soft, a total of 5 to 6 minutes. Remove the dough from the bowl and wrap tightly with plastic wrap. Refrigerate at least 6 hours and up to 15 hours.
  • Make the Pastry Cream: While the dough is chilling, make the pastry cream. In a small bowl, whisk together the sugar, flour and salt. In a medium bowl, whisk together the egg yolks until well combined, about 30 seconds. Slowly whisk in the flour mixture until thick and pasty. In a medium saucepan over medium heat, warm the milk until bubbles just start to form around the edges (do not let the milk boil).
  • Remove the milk from the heat and slowly drizzle into the egg mixture, whisking constantly. Scrape the egg mixture back into the saucepan and place over medium heat, whisking constantly until the mixture thickens and comes to a boil, about 3 minutes. Boil, whisking, for 10 seconds (the cream will become thick and glossy and won't have any foam on top), then immediately remove from heat.
  • Pour the pastry cream through a fine mesh sieve set over a small bowl and whisk in the vanilla. Cover with plastic wrap, pressing the plastic wrap against the surface of the pastry cream to prevent a skin from forming. Refrigerate until chilled, at least 4 hours and up to 3 days.
  • Prepare the Doughnuts: Line a baking sheet with parchment paper and spray lightly with non-stick cooking spray; set aside. Place the refrigerated dough on a well-floured work surface and gently roll into a 12-inch square (it should be about ½-inch thick). Cut the dough into 9 doughnuts using a 3½-inch round cutter. Transfer the doughnuts to the prepared baking sheet, cover with a piece of plastic wrap that has been sprayed with non-stick cooking spray, and place in a warm spot until they've doubled in height and feel poufy and pillowy, 2 to 3 hours.
  • Fry the Doughnuts: Fill a large, heavy-bottomed pot with 3 inches of oil and place over medium-high heat until it reaches 350 degrees F on a deep-fry thermometer. While the oil heats, line a baking sheet with a double layer of paper towels for draining the doughnuts. Place the sugar in a small bowl and set aside.
  • Working with three doughnuts at a time, carefully lower the doughnuts into the hot oil and fry until golden brown on the underside, 2 to 3 minutes. Carefully turn the doughnuts over and fry for an additional 2 to 3 minutes, or until the other side is golden brown as well. Using a slotted spoon or a spider strainer, remove the doughnuts to the paper towel-lined baking sheet. Repeat with the remaining doughnuts.
  • As soon as the doughnuts are cool enough to handle, toss them in the sugar one at a time to evenly coat them. Return the doughnuts to the paper towel-lined pan and allow to cool completely, 30 to 40 minutes.
  • Fill the Doughnuts: While you're waiting for the doughnuts to cool, beat the 6 tablespoons of heavy cream on medium-high speed until still peaks form. Whisk the chilled pastry cream to loosen it up, then gently fold in one-third of the whipped cream. Fold in the remaining whipped cream until no white streaks remain.
  • Transfer the cream to a pastry bag fitting with a small round decorating tip (a Wilton #12 would work well for this). Poke a hole in the side of each doughnut and fill with pastry cream. The doughnuts should be served as soon as they are filled. They are best the same day they are made.
