The most popular item on the Maid-Rite menu, these Loose Meat Sandwiches taste as good as the Iowa-famous diner classic. This easy ground beef recipe cooks in just 10 minutes!

1 pound ground beef ((85/15 recommended, see note 1))
1/4 cup water
1 tablespoon yellow mustard
1 teaspoon granulated sugar
1/2 cup onion (finely chopped, plus more for topping (see note 2))
Salt and freshly ground black pepper
4 hamburger buns (split, for serving)
Toppings (such as ketchup, mustard, mayonnaise, pickles, for serving)

Steps:

  • In a large skillet, combine beef, water, mustard, and sugar. Simmer over medium heat until the beef is cooked through, about 5 minutes, breaking up clumps of meat with a spoon.
  • Drain the fat if desired (I don't, and it is closer to the original recipe if you don't, but you can if you want). Stir in onion and season to taste with salt and pepper (I like 1 teaspoon salt and 1/2 teaspoon pepper).
  • Serve meat on buns with toppings on the side such as ketchup, mustard, mayonnaise, and pickles.

1 tsp. olive oil
1/2 yellow onion
kosher salt
ground black pepper
1 lb. ground beef
1 clove garlic, minced
2 tbsp. Worcestershire sauce
1/4 c. yellow mustard
Kosher dill pickles
4 plain hamburger rolls

Steps:

  • In a large skillet over medium heat, heat olive oil. Once the oil is shimmering, add onion, stirring occasionally until translucent and tender, 6 minutes.
  • Add ground beef, using a wooden spoon to break up the meat into small crumbles. Season with salt and pepper.
  • Once half the meat has browned, add garlic, Worcestershire and mustard. Stir until combined, and cook the meat until it is no longer pink at all.
  • Pile meat onto one hamburger bun, top with pickles, and cover with the other half of the bun. Repeat until you have four sandwiches.

1/2 teaspoon black pepper
1 1/2 cups beef broth
1 teaspoon garlic powder
1 -2 onion, chopped
24 dill pickle slices

Steps:

  • In a large skillet over medium heat, cook onions until brown and carmelized. Add ground beef and cook until brown.
  • Add salt, pepper, garlic powder and beef broth to cover. Reduce heat to low and simmer, uncovered, until broth is gone, 15 to 30 minutes.
  • Serve meat on buns topped with dill pickle slices and mustard.

2 pounds ground beef (at least 90/10 ratio)
1 1/4 teaspoons beef bouillon granules**
1/2 teaspoon black pepper
1/4 teaspoon garlic powder, or to taste
2 teaspoons dried onion flakes
1 1/2 teaspoons salt, or to taste
2 cups water**
1 - 2 teaspoons Kitchen Bouquet browning sauce (for color), optional
8 Hamburger buns
Yellow mustard, Finely diced onion, Hamburger dill slices (or whatever condiments you like)
(**You can substitute 2 cups beef broth instead of the bouillon and water, and a little fresh onion for the dried.)

Steps:

  • In a large deep skillet with a cover, add the meat and chop up as fine as possible with the side of a spoon, or a potato masher. Sprinkle the meat with the bouillon, pepper, garlic powder, dried onions, and salt. Pour the water over the meat. Bring to a boil over medium-high heat, stirring to combine and chopping up any lumps of meat. (The texture needs to be small crumbles) Reduce heat to low, cover the skillet and simmer for 2 hours or more, stirring occasionally and checking the water level. (It should maintain a little in order to steam the meat tender, so add a dab more before it dries out.) Add the Kitchen Bouquet about halfway through the cooking time. The meat should be very tender and moist but not wet. If there is still liquid in the pan, uncover, increase the heat to medium and cook until all of it has cooked out. A few minutes before serving time, lay the cut side of buns across the top of the meat, cover the skillet, and steam the buns 4-5 minutes. Assemble the sandwiches with a scoop of the meat on the bun and dress with mustard, diced onions, and dill slices (or whatever you like).

1 1/4 pounds ground sirloin
1 cup chicken stock, eyeball it, 1/2 a 14-ounce can or box
1 teaspoon sweet paprika
1 teaspoon Worcestershire sauce
Salt and pepper
4 burger buns, spilt, or kaiser rolls, split
1/2 yellow skinned onion, finely chopped

Steps:

  • Heat a medium skillet over medium high heat. Add oil and meat to the pan and brown the meat, breaking it up with the back of a wooden spoon as it cooks. Add chicken stock to the meat. Season the meat with paprika, Worcestershire, salt and pepper. When the liquid comes to a bubble, reduce heat to simmer. Cook meat 15 minutes, stirring occasionally.
  • Pile meat into buns or rolls and top with raw finely chopped onions.
