25-Minute Cod with Lentils image

Using canned lentils instead of raw saves you at least 30 minutes of cooking time. Here, we simmer them quickly with bacon and red wine to play up their earthy flavor; sliced celery stirred in at the end adds a fresh, crisp note. The lentils make a terrific bed for the mild, meaty cod fillets.

Number Of Ingredients 12

3 stalks celery, trimmed, peeled and thinly sliced on the bias, plus 1/2 cup loosely packed leaves
Kosher salt and freshly ground black pepper
Four 6-ounce skinless cod fillets
2 tablespoons olive oil
1 tablespoon unsalted butter
4 slices bacon, cut into matchsticks
1/2 medium red onion, thinly sliced
1 clove garlic, finely chopped
1/2 cup red wine
Two 15-ounce cans brown lentils, strained and rinsed
1/2 cup low-sodium chicken broth
1/4 teaspoon red pepper flakes

Steps:

  • Cook the bacon in a medium saucepan over high heat, stirring frequently, until just brown, 2 to 3 minutes. Add the onion and garlic, and stir constantly until fragrant, about 1 minute. Add the wine, bring to a boil and cook, stirring, to scrape up any bacon and browned bits, for about 1 minute. Stir in the lentils, chicken broth and pepper flakes, and return to a boil. Cover and cook, stirring occasionally and reducing the heat if necessary to maintain a medium boil, until saucy but not watery, about 3 minutes. Remove from the heat, and stir in the celery, celery leaves, 1/2 teaspoon salt and a few grinds of pepper.
  • Season the fillets all over with 1/2 teaspoon each salt and pepper. Heat the oil in a large nonstick skillet over medium-high heat. Once the oil shimmers, add the fillets skinned-side down and cook, undisturbed, until crisped and browned, 3 to 4 minutes (the fish should be opaque between the large natural flakes). Flip the fillets, and cook until just beginning to flake, 1 to 2 minutes. Remove the fillets from the skillet, and turn off the heat. Add the butter to the skillet, and allow it to melt and brown.
  • Divide the lentils among 4 bowls or soup plates, top each with a fillet and drizzle with browned butter.

1 cup butter
1 cup packed brown sugar
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 teaspoon coffee flavored liqueur
2 ½ cups rolled oats
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
1 ½ cups candy-coated milk chocolate pieces

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • In a large bowl, cream the butter and the sugars using an electric mixer. Mix in the eggs, vanilla and coffee flavored liqueur.
  • Measure the oatmeal and blend in a blender to a fine powder. In a separate bowl, mix together the flour, oatmeal, baking powder, baking soda and salt. Stir the dry ingredients into the butter mixture until blended, then stir in the candy pieces. Roll into balls and place two inches apart on cookie sheets.
  • Bake for 10 to 12 minutes in the preheated oven, until the edges start to turn golden.

olive oil
1/3 lb feta cheese
1 pinch oregano
3 -4 garlic cloves
3 ripe tomatoes
1 teaspoon lemon juice
2 cod fish fillets
salt
pepper
lemon wedge

Steps:

  • Preheat oven to 350*F.
  • Grease a baking pan with some olive oil and place the fish fillets in it.
  • In a bowl chop and crush the tomatoes, lemon juice and add a pinch of oregano, 4 tablespoons olive oil, and 3-4 crushed cloves of garlic. Mix everything together well.
  • Pour some of the tomato mixture over each fillet and add some salt and pepper to taste.
  • Crumble some feta cheese over each fillet and bake in oven for 30 to 45 minutes.
  • Check the fish occasionaly to make sure it does not get overcooked and dry up.
  • Serve with lemon wedges. Squeeze them over the fish and enjoy!

1 can (8 ounces) tomato sauce
1/4 cup crumbled feta cheese

Steps:

1 bay leaf
white wine, as needed
1/2 bunch collard greens (shredded)
8 potatoes (peeled, sliced thin)
1/2 cup olive oil
4 large onions (sliced thin)
3 tomatoes (chopped)

1/2 cup olive oil

Steps:

  • Heat oven 350.
  • Place cod in a deep skillet.
  • Ad bay leaf. Cover with wine. Poach cod until just cooked. Drain. Flake. Set aside.
  • Boil potatoes and greens until tender. Drain.
  • Heat oil in a skillet.
  • Add onions. Saute 10 minutes or until golden.
  • Add tomatoes. Saute 5 minutes. Season.
  • In a sprayed 9x13 baking dish, layer the potato mix, cod, and onion mix in 2 layers.
  • Pour oil over top.
  • Bake 1 hour.

Steps:

  • Heat broiler.
  • Heat oil in a skillet.
  • Add onions. Saute 10 minutes.
  • Add the tomatoes, spinach, vinegar, sugar, oregano, basil, salt and pepper. Simmer 10 minutes.
  • Season fish. Brush with oil.
  • Broil 8 minutes, turning once.
  • Place mesclun on plates. Top with fish and sauce. Serve immediately.
