LEBANESE GREEN BEAN STEW (LOUBIA B'ZEIT)

300 g green beans fresh or frozen
3 good size tomatoes or 1 tinned can of tomatoes
2 onions
3 garlic cloves
1/2 a birds eye chilli
1 tsp salt
3 tbsp olive oil
1/2 cup of water

Steps:

  • Peel and chop the onion into strips and the garlic finely, keeping them separate.
  • Heat 2 tbsp of olive oil in a wide sauté pan and sauté the onions until caramalised on a low heat. This may take twenty minutes plus but is worth the effort.
  • Follow by adding the chopped garlic to the onions. Saute for 1-2 minutes and take care not to burn the garlic.
  • Wash and trim the ends of the green beans and sauté with the garlic and onion mix for ten minutes.
  • Add the chopped tomatoes, salt, chilli and water.
  • Bring to a boil and cover with a lid.
  • Reduce the heat to a simmer, cooking for 30-40 mins until the beans are well done, taking care the sauce doesn't run dry.
  • Serve with warm pitta bread.

1/2 cup finely chopped onion
3 heads garlic, peeled
1 kg green beans, string and snip off the ends, snip each bean into two
1 kg peeled chopped tomato
1/2 cup olive oil or 1/2 cup vegetable oil
1/2 teaspoon salt (as desired )
1 dash ground allspice
1 dash sugar
1 fresh chili pepper (optional, green or red)
1/2 cup water

Steps:

  • Fry onion and garlic cloves in oil over high heat, stir for 5 minutes.
  • Add beans, cook for 10 minutes, stir occasionally.
  • Add tomato, salt, sugar, chile, allspice, and water. Cover. Bring to a boil, then reduce heat to low and cook for 35 minutes or till tender.
  • Remove chile before serving.

  • Prepare the green beans by trimming the ends. Cut each string of green bean into 2-4 bite-sized pieces depending on its size. Wash and set aside.
  • Set a pot over medium heat. Add the olive oil, chopped onion and crushed garlic. Sauté for 5 minutes until translucent.
  • Add the green beans and sauté for an additional 10 minutes until the green beans begin to wilt. Season with salt and pepper.
