HEALTHY OVERNIGHT FRENCH TOAST BAKE

Nonstick cooking spray, for coating baking dish
One 8-ounce whole wheat baguette, cut into twenty-four 1/4-inch slices
One 12-ounce can evaporated fat-free milk
1 cup reduced-fat (2-percent) milk
1 teaspoon pure vanilla extract
1/4 teaspoon almond extract
1/4 teaspoon ground cinnamon
Pinch kosher salt
4 large eggs
1/3 cup chopped pecans
1/4 cup plus 2 tablespoons pure maple syrup
1/8 teaspoon ground cinnamon

Steps:

  • For the French toast: Coat a 9- by 13-inch baking dish with cooking spray. Arrange the bread slices on the diagonal in 3 rows in the dish, slightly overlapping the slices. Whisk together the evaporated milk, milk, vanilla and almond extracts, cinnamon, salt and eggs until well combined. Pour the egg mixture over the bread slices, taking care to evenly coat the bread. Cover with aluminum foil and refrigerate for at least 8 hours, or overnight. Preheat the oven to 350 degrees F. Remove the foil from the baking dish and spoon any remaining egg mixture over the top of the bread pieces to assure they are evenly moistened.
  • For the topping: Sprinkle the pecans evenly over the bread. Sprinkle with 2 tablespoons of the maple syrup and the cinnamon. Bake until golden, about 40 minutes. Drizzle with the remaining 1/4 cup maple syrup and serve.

This is a very old WW recipe that I have tweaked a bit. When you have a craving for French toast and want to keep the calories down, this is a good option.

1 slice bread (any day-old)
1 egg, well beaten
cinnamon
artificial sweetener
Pam cooking spray

Steps:

  • Cut a piece of tin foil large enough to accommodate the bread and spray with Pam.
  • In a bowl, soak bread in the well beaten egg, turning the bread at least once.
  • Place bread on tin foil and broil.
  • You can flip it over, careful not to burn yourself, but it is not necessary. Watch closely, so it doesn't burn. It is done when it is moderately browned, 2-4 minutes.
  • Sprinkle top with cinnamon and/or mixture of cinnamon and artificial sweetener (one envelope is more than enough).
  • Suggestion: You can place multiple slices on a larger piece of foil that you have placed on a cookie sheet or broiler pan, for ease of removing. But each slice is one serving.

Steps:

  • Plop fresh berries in a pan and add 2 packets sugar substitute. Heat until it turns to liquid and cook for a 3-5 min minutes, you can rupture the berries with a fork easily to make it more saucy.
  • Beat 2 egg whites with 1/4 cup milk and 1/4 tsp cinnamon, until well blended
  • Brush a griddle with rapeseed oil and heat to medium
  • Soak bread in mixture, trying to get all liquid. Place bread on griddle and pour excess mixture onto each slice.
  • Grill on both sides until set
  • Cut slices in half and arrange on plate, spread compote on top and serve.
