LOW-CARB MEATLOAF
This is a low-carb meatloaf the whole family will love. It's one of the only ways I can get my kids to eat vegetables!

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Place turkey and beef in a large bowl. Add onion, carrot, spinach, egg, taco seasoning, garlic, pepper, and ketchup. Mix with your hands until blended. Shape into 3 equal-sized loaves and place into a 9x13-inch baking dish.
- Bake in the preheated oven until no longer pink in the center, about 1 1/2 hours. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

- Transfer the coconut filling to the prepared pan and refrigerate until it sets, at least 2 hours. Then, using a knife, cut the filling into about 20 rectangles (I cut mine 1-inch by 3-inches). Arrange the cut bars into a baking sheet lined with parchment paper, cover with plastic and bring it to the freezer to harden for 1 hour.
- To dip them in chocolate, start by tempering/melting the chocolate via your prefer method (read the post to learn mine). When tempered, dip each bar into the chocolate and let them dry on parchment paper. You can sprinkle shredded coconut on them to decorate.
