My husband was looking for an easy high protein breakfast, so I came up with these.......I make a batch and freeze them and he puts a couple in the microwave on his way out the door in the morning.

- Brown and drain meat. Beat eggs in bowl. Add meat, cheese, salt, pepper, and optional ingredients. Mix. Pour into greased full size muffin pan 2/3 full. Bake 350 degrees for 30 minutes. Use toothpick to check for doneness.

- Press sausage into 8 muffin tins, pressing up sides and pressing into bottom edges.
- Bake at 400 degrees for 20 minutes.
- Break an egg into sausage cups and return to oven for 15 minutes.
- Place 1/2 slice American cheese over each cup and return to oven for 1 more minute.

Steps:
- Spray muffin tin with cooking spray (I use olive oil),.
- Crack eggs into tin, salt & pepper.
- Bake on 350 for 15min.
- In the morning just assemble your sandwich. Toast the deli flat heat the egg/ cheese/ sausage in microwave for 50 seconds, add to bread.
- I use whole wheat deli flats, pre-cooked turkey sausage, 2% cheese. You can also use turkey bacon, lean ham -- get creative.

- Preheat oven to 350 degrees. In a sauté pan, heat olive oil. Add onion and cook for about 2 minutes. Add spinach and cook until wilted, about 2-3 more minutes. Add the minced garlic and cook for 30 seconds. Sprinkle with a little salt and pepper. Remove from the heat.
- In a bowl, whisk together the eggs, milk, and the cheese. Season with the salt and pepper. Add the spinach mixture and the bacon and stir until well-combined.
- Either use a silicone muffin pan or spray a muffin tin with non-stick spray. Evenly distribute the egg mixture amongst each muffin tin (I filled mine about ¾ of the way). If using a 12-cavity tin, fill the empty cavities about a 1/4 of the way with water. Bake for about 20 minutes or until the muffins have turned a light golden brown around the edges.
- Store leftover muffins in the fridge in an airtight container. To reheat, stick in the microwave for about 20-30 seconds.

- Make the sausage. Preheat oven to 400 F and line a baking sheet with parchment paper. Combine the sausage ingredients in a large bowl. Form them into 6 patties that are 1/2" thick. Place them on the prepared baking sheet. Bake in the preheated oven for 10 minutes, flip the patties, then bake on the other side for 5-7 minutes -- you'll know they're done once their internal temp reaches 165 F. Place a slice of cheese on top of each sausage and return to the oven for another 2 minutes, just until the cheese melts.
- Eggs. Meanwhile, whisk (Note 4) the eggs (12) in a large bowl, along with 1/2 teaspoon of both salt and pepper. If you'd like to add any veggies (I like to add 1/2 cup of chopped spinach), stir them in. Stovetop method (MUCH preferred!): Place 2 egg forms (Note 5) or 3.5" mason jar lids in a pan and generously spray the sides of the form and bottom of the pan with cooking spray (Note 6). Heat pan to medium and add whisked eggs to the center of each form. Pour water into the pan so it reaches halfway up each form, and place a lid on top of the pan. Cook the eggs for 3-5 minutes, until they're completely set in the center.Oven method: Preheat oven to 400 F and spray a rimmed baking sheet generously with cooking spray. Pour the whisked eggs into the baking sheet, and carefully place in the oven. Bake for 10-12 minutes, or until the eggs in the center are completely set.
