Steps:
- Peel and Devein Shrimp.
- Put shrimp aside in bowl.
- Place skins in pot.
- chop and cut all veggies in broth ingredients. Crush bay leaves with hand then place in broth. Mince garlic cloves.
- Pour 6 cups water into pot and place lid on pot.
- Bring pot to a rapid boil.
- Shake broth seasonings in water.
- Place stove-top heat down to "low" setting.
- Let broth simmer, covered, for 1 hour.
- Strain broth and set aside.
- To Make Gumbo:.
- Cut sausage into 1/8 inch slices.
- Chop all veggies and set aside.
- Put teaspoon oil in large skillet or stock pot.
- Set skillet to medium-high heat.
- Add veggies and all gumbo dry seasonings.
- Saute veggies and crushed bay leaves until tender, about 10 minutes.
- Pour in the reserved shrimp broth and bring to a boil. Simmer, covered, about 15 minutes.
- Add the shrimp and sliced sausage and simmer 10 minutes more, or until sausage is cooked through.
- Add salt to taste.
- Evenly sprinkle some guar gum onto gumbo and stir inches Add gum until desired thickness is achieved.
- Serve.

LOW CARB GUMBO RECIPE
Steps:
- In a medium to large soup pot, use 1 tbsp of the oil (premeasure the 1/2 cup and just use a little from that) to saute the onion, celery and bell peppers until the onions are translucent.
- Add the sausage and shrimp and saute for about 2 more minutes.
- Stir in the arrowroot powder, then add the bay leaves, chicken broth remainder of oil and creole seasoning.
- Bring to a boil and reduce to a simmer.
- Cook for about 10-15 minutes, or until the broth has reduced enough to become slightly thickened from the arrowroot powder (it won't be very thick, but you'll see a slight difference in the broth).
- Cool and serve.

Gumbo has a history of being made with roux, but my Mom's recipe didn't have it. Now it is my most requested item at work, tailgating parties, and at home. The vegetables really shine in this gumbo!

Steps:
- Place chicken in a large pot; add enough water to cover. Cover pot and bring to a boil; reduce heat to medium-low and simmer until meat falls off the bone, about 90 minutes. Remove chicken, let cool, and shred meat; skim broth and reserve.
- Melt butter in a large skillet over medium heat; cook and stir onions, bell pepper, and celery until tender, about 5 minutes. Stir in garlic and cook until fragrant, about 1 minute. Add diced tomatoes, tomatoes with green chilies, andouille sausage, okra, corn, salt, pepper, cayenne pepper, and reserved broth; bring to a gentle boil over medium-high heat. Simmer until liquid is reduced by half, about 30 minutes.
- Mix shredded chicken and shrimp into skillet; simmer until shrimp turns bright pink and okra is tender, 5 to 7 minutes. Remove skillet from heat and stir in file powder. Serve with rice.

LOW CARB CROCK POT GUMBO
Steps:
- Place all ingredients in your crock pot except the shrimp and cauliflower rice and stir well
- Place the lid on your crock pot and cook on high for about 3.5 hours or until your chicken thighs shred easily.
- Remove chicken thighs and shred
- Place chicken back in the crock pot along with the raw shrimp
- Cook on high for another 20-25 minutes or until the shrimp is fully cooked
- Salt to taste
- Serve in a bowl on top of cauliflower rice and enjoy.

This was an experiment (anyone low-carbing understands all the exeriments you try). It turned out to be one of my favorite foods once it is all done. If you follow the directions exactly, it will be pretty spicy. To cut down on the spicyness, leave out the habanero sauce.

- -Combine all ingredients in crock pot except for Chicken, Shrimp and Cream/Milk.
- -Cook on HIGH for 3 hours.
- -Shred the white meat from the chicken by hand, and add to the crock pot.
- -Add Shrimp and Cream.
- -Cook on high for 1½ hours after adding the last ingredients.

- Heat the oil in a skillet over medium heat and cook the chopped okra until it is no longer slimy.
- Add the butter to a pot over medium heat and cook the onions, celery and peppers until softened.
- Mix the garlic into the pot with the vegetables and saute another 30 seconds.
- Place the sausage in the pot and saute a few more minutes.
- Stir in the chicken broth, cajun seasoning, diced tomatoes and cooked okra.
- Bring the mixture to a boil and then simmer covered for 20 minutes.
- Add in the shrimp and simmer for 5 minutes.
- Mix in the cauliflower rice and simmer for an additional 5-10 minutes until it is softened.
