Keto Loaded Broccoli Cauliflower Salad image

This loaded keto broccoli cauliflower salad recipe is a great dish to take to a summer picnic or party. Easy to make and only 1.9g net carbs per serving!

1 cup mayonnaise
1 tablespoon Swerve, or other sweetener
2 tablespoons apple cider vinegar
3 cups broccoli florets (raw)
3 cups cauliflower florets (raw)
1/2 red onion, chopped
1/2 cup cheddar cheese, shredded
8 oz bacon, cooked and crumbled
1/2 cup raw pecan pieces

Steps:

  • Make the bacon any way you wish, let it cool and chop or crumble. Set aside.
  • In a small bowl add the mayonnaise, Swerve and apple cider vinegar. Whisk to combine.
  • Chop the raw broccoli florets, cauliflower and onion into bite sized pieces and add to a large salad bowl along with the cheese and nuts.
  • Pour the salad dressing int the salad bowl and mix well. Fold in the bacon or if make a day ahead of time, save the bacon for just before serving to keep it crispy.
  • Refrigerate until ready to use.

1 cup Red bell pepper ((cut into coarse pieces; ~1 large pepper))
1/3 cup Bacon bits ((cooked))
1/2 cup Mayonnaise
2 tbsp Olive oil
1 tbsp Lemon juice
1 tbsp Fresh thyme
1/2 tsp Garlic powder
1/4 tsp Sea salt ((plus more to taste))
1/4 tsp Black pepper

Steps:

  • You can serve immediately, but for even better flavor, chill for a few hours.

2 tablespoons sugar substitute ((full-fat, I use an olive oil based one))
1/2 teaspoon sea salt
1/2 teaspoon cracked black pepper
4 cups broccoli florets ((full-fat, I use an olive oil based one))
4 cups cauliflower florets ((full-fat, I use an olive oil based one))
9 slices cooked bacon ((full-fat, I use an olive oil based one))
1/2 cup red onion ((full-fat, I use an olive oil based one))
1/4 cup walnuts ((full-fat, I use an olive oil based one))

Steps:

  • Dressing: In a medium bowl mix all the dressing ingredients making sure it is well combined.
  • Set aside.
  • Salad: In a large mixing bowl combine the chopped cauliflower and broccoli.
  • Pour the dressing over the vegetables and stir to fully coat.
  • Next fold in the onions, bacon, walnuts.
  • Store in the refrigerator.
  • This salad keeps well for up to two days when properly stored.
