This low carb taco casserole is such an easy dinner and my whole family enjoys it. It whips up in minutes and makes 6 servings with 4 net carbs each. You're going to love this one!

1 pound ground beef
1/4 cup chopped onion
1 jalapeno, (minced)
1 packet taco seasoning ((or homemade))
1/4 cup water
2 ounces cream cheese
1/4 cup salsa
4 eggs
1 tablespoon hot sauce
1/4 cup heavy whipping cream
1/2 cup grated cheddar
1/2 cup grated pepperjack cheese

Steps:

  • Preheat oven to 350 degrees. Spray an 8x8 baking dish with non-stick spray.
  • Brown the ground beef in a large skillet over medium heat.
  • Add the onion and jalapeno to the beef and cook until onion is translucent. Drain any grease.
  • Stir in the taco seasoning and water and cook for 5 minutes.
  • Add the cream cheese and salsa and stir to combine.
  • Crack the eggs in a medium mixing bowl and whisk together with the hot sauce and heavy cream.
  • Pour the meat mixture into the prepared baking dish and top with the egg mixture.
  • Sprinkle with cheese and bake for 30 minutes or until eggs are set.
  • Cool 5 minutes before cutting and serving.

1.5 lb ground beef
2.5 tablespoons of my Low-Carb Taco Seasoning
1/2 cup water
4 cups (12 oz) cooked cauliflower rice (I use frozen and microwave as directed)
2 cups shredded cheddar-jack or Mexican blend cheese
1 6oz can black olives, sliced (optional)
Sour cream
Guacamole
Hot sauce

Steps:

  • Preheat oven to 375 degrees.
  • Brown ground beef and drain.
  • Add 2.5 Tablespoons taco seasoning and 1/2 cup of water to browned beef.
  • Simmer for about 5 minutes, or until the water is absorbed.
  • In a greased 9×9 casserole dish, stir together beef, cauliflower rice, 1 cup cheese, and optional black olives.
  • Top with remaining 1 cup cheese.
  • Bake for 15-20 minutes, or until cheese has fully melted.
  • Serve topped with sour cream, guacamole, hot sauce, etc.

1 can rotel
1 tablespoon Taco Seasoning (We use Homemade Taco Seasoning Mix)
2 tablespoons butter
12 oz frozen cauliflower rice (You can make Cauliflower Rice if you prefer.)
1 teaspoon garlic salt
8 oz cream cheese
2 cups cheddar cheese (grated)

Steps:

  • Preheat oven to 350 degrees and spray a 9x13 casserole dish with non stick spray.
  • Meanwhile, in a large skillet, saute the cauliflower in 2 tablespoons of butter. (Or olive oil.) Season with garlic salt.
  • Cook the cauliflower until it becomes soft.
  • Slowly mix in the cream cheese until melted and combined (Note- It will be thick.)
  • Spread your cream cheese cauliflower in the bottom of the casserole dish.
  • In your skillet brown your ground beef until there is no more pink.
  • Season with taco seasoning, and stir in the can of Rotel.
  • Spoon mixture over the cauliflower.
  • Top with the shredded cheese.
  • Bake for 20 minutes-30 minutes until heated through and the cheese begins to brown.

1 lb ground beef
½ onion (minced)
2 Tablespoons homemade taco seasoning
¼ cup water
¼ cup low sugar salsa
1 Tablespoon olive oil
2 cups cauliflower rice
1 green bell pepper (chopped)
1 red bell pepper (chopped)
1 jalapeno (seeded and finely chopped)
¼ teaspoon cumin
6 eggs
¼ cup heavy cream
4 dashes hot pepper sauce (like Tobasco)
2 cups cheddar cheese (divided)
salt and pepper (to taste)

Steps:

  • Preheat oven to 350°F.
  • Brown beef and onion until no pink remains. Drain fat. Stir in taco seasoning, water, and salsa. Bring to a boil, reduce to a simmer and cook until liquid has evaporated.
  • In a separate saucepan, cook cauliflower rice, bell peppers, cumin and jalapeno in a little bit of oil until softened.
  • Spread rice into a 9x13 dish. Top with beef mixture.
  • Whisk eggs, cream, hot sauce, 1½ cups cheese and salt & pepper to taste. Pour over beef mixture and top with remaining ½ cup cheese.
  • Bake 30-35 minutes or until set and browned on top. Add toppings as desired.

3 eggs
1/3 cup heavy cream
1/2 teaspoon taco seasoning

8 ounces cheddar cheese, shredded

Steps:

  • For the crust, beat the cream cheese and eggs until smooth.
  • Add the cream and seasoning.

Steps:
