TURKEY SAUSAGE PATTIES
Steps:
- In a large bowl, mix everything together. The best way is to use your hands and really mix it all together (I wear food prep gloves for this step) You can also use your stand mixer with the paddle attachment.
- There are a few different ways you can do this. I like to use a large cookie scoop / ice cream scoop. I lightly pack the meat into the scoop, release the scoop, then flatten it with my palm. Alternatively, you can just divide the meat into 12 rough balls, and shape each ball into a sausage patty. Lastly, you can also roll out the meat between parchment paper, then cut the sausages with a round cookie cutter / lip of a cup.
- Make 12 equal sized turkey sausages. I make them about 1/2-inch thick if I am going to cook them straight away, but you can make according to your preference.
- If you are going to freeze half the batch, make the ones you are going to freeze no thicker than 1/2-inch, if you plan on cooking from frozen. Otherwise, you will need to defrost the sausage patties before cooking.
- Heat some oil in a non-stick skillet over medium-high heat. Add the patties (you might need to do it in batches) and cook the first side for about 3-4 minutes, or until browned. Flip then cook the other side until browned and the sausage is cooked through.The most reliable way to to check if a turkey sausage patty is cooked through is to use an instant read thermometer. The internal temperature of each sausage patty should be 165°F / 74°C.
- If you are cooking from frozen, follow the same instructions, but you will need to slightly increase the cooking time. If the sausages are browned but not cooked through, turn the heat down and finish cooking.

TURKEY BREAKFAST SAUSAGE PATTIES
I combined different spices to achieve what tastes almost as good, if not better than regular sausage. Be sure to use regular ground turkey (not ground turkey breast, which is too lean so it doesn't have enough moisture). UPDATE: After all the positive reviews, I decided to submit this to Taste of Home's Light & Tasty and they published it in the Dec/Jan 2008 issue. It's also in the Light & Tasty Annual Recipes 2008 Cookbook.

- Combine all ingredients (use less pepper if you don't want a spicy taste) and blend well.
- If time permits, refrigerate overnight to let the meat absorb the flavor of the spices.

- Mix all the spices together in a small bowl The brown sugar sweetener is sticky and may clump so make sure to mix it well to break it down.
- Place the ground turkey in a large bowl and sprinkle half of the spices over evenly top. I like to use a large serving fork to mix up the ground meat and spices together since turkey can be very sticky. After it's mixed add the rest of the spices, evenly and mix once more trying not overwork the meat yet get it well combined.
- Get out 2 pieces of wax papper. Spray one with nonstick cooking spray and set aside. Divid the meat mixture into 16 equal sized balls. Place them on a piece of wax paper with space between them. Take the sprayed piece of wax paper and place on top and press down to make patties.
- Get out a large nonstick skillet and heat to medium high heat. Spray with nonstick cooking spray first. Gently lift the raw turkey patties off the wax paper and into the pan. Turn the heat down to medium and cook for 3 minutes. Then flip and brown the other side for about 3 minutes more. Just make sure the sausage is cooked through. Mine took about 6 minutes total but cooking time will vary depending on the thickness of your patties.

- In a mixing bowl, combine the egg yolk, oil, sage, paprika, salt and pepper with a fork.
- Crumble the turkey into the bowl with a fork or clean hands; combine thoroughly.
