KETO TUNA CASSEROLE



Keto Tuna Casserole image

This delicious and filling keto tuna casserole has no noodles, but it has lots of flavor! Plus it's so easy to make.

2 (5 oz) cans tuna in water, (drained)
1/3 cup avocado oil mayonnaise
1 tablespoon Dijon mustard
1/2 cup shredded gruyere cheese (divided)
1/4 cup minced red onion
1/4 teaspoon sea salt
1/4 teaspoon black pepper
¼ teaspoon cayenne pepper
¼ cup chopped parsley (for garnish)

Steps:

  • Preheat your oven to 400 degrees F.
  • Mix together the tuna, mayonnaise, mustard, 1/4 cup cheese, onion, salt, pepper, and cayenne.
  • Transfer the mixture to a small, 1-quart casserole dish. Sprinkle the remaining 1/4 cup shredded cheese on top.
  • Bake until hot, about 15 minutes.
  • Sprinkle with parsley and serve immediately, with cut-up veggies and/or pork rinds for scooping out.

I was having a strong craving and after searching through many recipes I came up with my variation of tuna noodle casserole. This is delicious poured over cooked and prepared spaghetti squash and then baked.

3 (6 ounce) cans tuna (drained and flaked)
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
2 tablespoons mayonnaise
1/4 cup sour cream
2 tablespoons celery (chopped, about 1 stalk)
1 tablespoon onion (diced)
1/2 cup green beans (I use the canned kind)
1 cup cheddar cheese
1/2 cup French's French fried onions
1 tablespoon butter

Steps:

  • Heat a sauté pan on medium high. Melt the butter and add the celery and onion. Sauté for 5-6 minutes until the onions are translucent.
  • Place onions and celery in a mixing bowl. Add in the tuna, mayonnaise, sour cream, salt, pepper, garlic powder and green beans. Mix to combine.
  • Pour the tuna into a greased casserole dish. Cover the casserole with cheese and then sprinkle the french fried onions on top.
  • Bake on 375°F for 20 minutes.

This is quite tasty with lots of flavor. Use Dreamfields pasta to cut carbohydrates (it tastes the same as other pasta). Use frozen mixed vegetables that can be steamed in the bag inside your microwave. Don't go overboard on the dry onion soup mix or it could be overpowering, but do use it because it adds a great deal of flavor!

12 ounces tuna in water
4 ounces linguine, Dreamfields
1 chicken bouillon cube
1/2 cup Miracle Whip
1/2 ounce Lipton Onion Soup Mix, 1/2 of one envelope
1/2 cup skim milk
12 ounces frozen mixed vegetables
4 slices colby-monterey jack cheese, cut in small pieces
1/4 cup parmesan cheese
1 dash seasoning salt
1/4 teaspoon ground pepper
1/2 teaspoon paprika

Steps:

  • Using about 1/3 of a box of Dreamfields linguine, add one bouillion cube to the cooking water, and cook according to directions on box and then drain. Do not overcook or it may come out of the oven later too soft.
  • Microwave the bag of mixed vegetables according to the directions on the bag and then drain.
  • Drain the water from the tuna.
  • In a large mixing bowl, mix well the Miracle Whip Salad Dressing, skim milk, drained tuna, 2 slices of colby/jack cheese (cut in small pieces), dry onion soup (only 1/2 of one envelope), drained linguine (I prefer to cut the linguine in small pieces), drained mixed vegetables, seasoning salt and ground pepper.
  • Put mixture in a 9 x 11 baking dish that has been sprayed with cooking oil to prevent sticking.
  • On top of the casserole put remaining pieces of colby/jack cheese, parmesan cheese and sprinkle with paprika.
  • Bake in 350 degree oven for 30 minutes.
