HEALTHY BANANA BRAN MUFFINS
This recipe REALLY made 12 muffins and they're only 125 calories a piece, not to mention, they taste great.

Steps:
- Preheat oven to 400 degrees. Grease or paper line muffin cups (i sprayed).
- Combine cereal, bananas, milk, egg and oil in bowl; mix well. Let stand 5 minutes; stir to break up cereal.
- Combine flour, sugar (sweetner), baking powder, baking soda, spices and nuts (if using) in separate bowl.
- Add flour mixture all at once to cereal mixture, stirring just until moistened.
- Divide evenly among prepared muffin cups, which comes to about a heaping tablespoon per muffin.
- Bake 20-25 minutes or until tester inserted in center comes out clean.
- Serve warm (room temp is OK too).

INA'S CHUNKY LOW FAT BANANA BRAN MUFFINS (SMALL BATCH)
Steps:
- Position an oven rack in the center of the oven and preheat the oven to 350F degrees.
- Line 6 cup muffin tin with paper liners.
- In a large bowl, combine the bran and buttermilk and let sit for 5 minutes. Stir in the butter, brown sugar, egg, molasses, orange zest, vanilla and salt until well blended.
- In a separate bowl, whisk together the flour, baking powder, and baking soda until well combined.
- Add the flour mixture to the buttermilk mixture and stir just until combined. Don't over mix it or your muffins will be tough! Gently fold in the bananas, raisins and walnuts with a rubber spatula.
- With an ice cream scoop or large spoon, evenly divide the batter amongst the six muffin cups, filling them till full.
- Bake for 25 to 30 minutes, until a cake tester or toothpick inserted in the center comes out clean.
- Remove from the oven and place the muffin tin on a rack to cool. Let the muffins cool in the pans. When cool, gently remove them to a plate.

- Preheat oven to 375 degrees F (190 degrees C). Grease a muffin pan or line with paper muffin liners.
- In a large mixing bowl, cream butter and brown sugar together until fluffy. Add bananas, milk, vanilla and eggs; mix well. Stir in flour, bran, baking powder, soda and salt; blend just until moistened. Stir in walnuts. Pour batter into prepared muffin cups.
- Bake at 375 degrees F (190 degrees C) for 20 to 25 minutes or until a toothpick inserted into the center of a muffin comes out clean. Cool in the cups for 5 minutes, then remove muffins and place on a wire rack to cool completely.

CHUNKY BANANA BRAN MUFFINS

- Preheat the oven to 350 degrees F. Place paper liners into 1 (10 or 12-cup) muffin tin.
- Combine the bran and buttermilk and set aside. Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment for about 5 minutes, until light and fluffy. With the mixer on low, add the eggs, 1 at a time. Scrape the bowl and then add the molasses, orange zest, and vanilla. (The mixture will look curdled.) Add the bran/buttermilk mixture and combine.
- In a separate bowl, sift together the flour, baking powder, baking soda, and salt. With the mixer on low speed, slowly add the flour mixture to the batter just until combined. Don't overmix it! Fold in the raisins, bananas and walnuts with a rubber spatula.
- With an ice cream scoop or large spoon, fill the muffin cups to the top and bake for 25 to 30 minutes, until a cake tester comes out clean.

- In a medium size bowl mix all dry ingredients together. In a separate medium size bowl mix together the wet ingredients (including bananas). Mix thoroughly and make sure bananas are well incorporated. Preheat oven to 350 degrees and heavily spray muffin pan even if you use papers cups. Mix both bowls together just until dry mix is wet. SUPER YUMMY LOW FAT BRAN MUFFINS
These are delicious little gems, even my boyfriend who detests low fat foods loves them! I'm extremely health conscious so these are perfect with almost no fat, and are super healthy because of the bran. They turn out super moist and delicious and reheat well in the microwave. You can substitute whole wheat flour for white if you wish and they will still be delicious. Adding raisins make them tasty too. Got this one off of the Kraft website.

- Heat the oven to 400°F. Place a paper baking cup in each of 12 regular-size muffin cups, or spray just the bottoms of the cups with cooking spray.
- Place cereal in a resealable food-storage plastic bag; seal the bag. Roll over cereal with a rolling pin or bottle, or press with bottom of small saucepan, to crush cereal into fine crumbs.
- In a medium bowl, stir the crushed cereal, milk, raisins and vanilla until well mixed. Let stand about 5 minutes or until cereal has softened. Beat in the oil and egg with a fork.
- In another medium bowl, stir the flour, brown sugar, baking powder, salt and cinnamon until well mixed. Stir flour mixture into cereal mixture just until flour is moistened (batter will be lumpy). Spoon the batter into the cups, dividing batter evenly.
- Bake 20 to 25 minutes or until a toothpick inserted in the center comes out clean. If muffins were baked in paper baking cups, immediately remove from pan to a cooling rack. - Preheat oven to 350 degrees.
- Spray 12 cup muffin tin with cooking spray.
- In a large bowl, mix together flour, bran flakes, baking soda, baking powder and salt.
- In a medium bowl, combine applesauce, banana and shredded apple.
- Add sugar and egg to wet ingredients.
- Add wet ingredients to flour mixture, stirring just until combined.

LOW FAT CARROT BRAN MUFFINS
Wonderful carrot bran muffins that are low in fat, yet, I find, taste almost buttery. They have a wonderful moist yet fluffy texture, and not too sweet delicious cinnamon flavour and aroma. The batter is quite thin, which creates smooth domed muffin tops. I have always made these with the soured milk instead of buttermilk. And yes, there really is 1 tbsp cinnamon in this recipe, it is not a typo! NOTE: Do not use muffin liners with this recipe - they are too moist and delicate for them so the muffins will stick to the liner.
