LOW FAT, LOW CALORIE, LOW CARB WEDDING SOUP
I love wedding soup, but not the calories or carbs that go along with it. So I came up with my own version that loses all the calories and carbs but none of the flavor!

Steps:
- Preheat oven to 400.
- Combine ground turkey, egg, crushed pork rinds, oregano, minced garlic and celery well.
- Form into small meatballs. Place meatballs onto cookie sheet and bake for 25 minutes.
- In large stock pot, saute onion in olive oil until transparent.
- Add squash, chicken, spinach, meatballs, and chicken broth (you can adjust broth to suit your preference).
- Bring to a boil, then reduce heat and simmer, covered, for about 1 hour.
- Serve and enjoy!
- I know it takes time to make the meatballs, but trust me, you'll be glad you did. They are wonderul!

LOW FAT ITALIAN WEDDING SOUP
Delicious! and Low Fat by using lean ground turkey and beans. From Oxygen magazine. I searched and searched on zaar and I believe this low fat version is different than any other on here. This one was so flavorful.

Steps:
- Mix ground turkey, basil, oregano, garlic and cayenne pepper in a bowl using your hands.
- Lightly roll meat into 1/2 inch diameter meatballs and set aside on a plate.
- Over medium-high heat, cook meatballs in a fry pan until browned on all sides.
- Place cooked meatballs on a plate, covered with a paper town to absorb excess fat.
- In a 3 quart saucepan, bring chicken stock to a boil.
- Reduce heat and add kale.
- Simmer for 15-20 minutes until kale is tender.
- Stir in meatballs, beans and tomato and let simmer until heated through for 5 minutes.

- In a stock pot, add oil, carrots and celery. Saute for a few minutes then add your broth and water. Bring to slow boil and cook for 5 minutes. If you are using bouillon or chicken base, add it here.
- Add the frozen meatballs, spinach, garlic, ginger and parsley and continue to simmer for about another 5 minutes.
- Add pasta and cook for another 10 minutes. Lastly add the cooked chicken and cook for 5 more minutes. Make sure the pasta and the vegetables are cooked. I'm just estimating the time but you can add everything but the chicken and pasta at the beginning if you are pressed for time.
- Use 2 eggs instead of the pasta. Just beat the eggs and slowly pour into the. simmer soup at the end of the recipe. I also used 6 large Trader Joe's frozen meatballs. For nutritional information see above. You can make this lower carb by making your own meatballs and eliminating the carrots.

- Bring the broth to boil in a large soup pot.While that warms up, mix your meatballs in a medium mixing bowl.
- Add the chopped vegetables (not the spinach) and spices. Simmer until everything is cooked through (about 20-30 minutes. The meatballs should be at least 165 F. and the carrots should be soft.)
- When everything is done cooking, quickly stir in the spinach and allow the soup to boil for approximately 1-2 more minutes to cook the spinach down.

- Put the onion, garlic, 1/2 teaspoon salt and a few grinds of pepper in a food processor and pulse until very finely ground. Add the parsley and pulse until the parsley is finely chopped. Add the egg and pulse until combined. Add the turkey and Parmesan and pulse until very well mixed.
